Comment below! ^.^ MUSIC: Ukulele - Bensound Royalty Free Music from Bensound.com Funfetti Cupcake Recipe: - 1/2 cup softened unsalted butter - 1/2 cup + 2 tbsp sugar - 2 eggs - 1/2 tsp vanilla extract - 1 cup all-purpose flour - 1/2 tsp salt - 1 1/2 tsp baking powder - 1/4 tsp baking soda - 2 tbsp sprinkles (confetti) - 2 tbsp milk Directions: Beat the butter until creamy, then mix in the sugar until fluffy. Add eggs one at a time, mixing between each addition. Then add vanilla extract and continue to mix. Then add flour, baking powder, baking soda, and salt. Mix until combined. Then add the sprinkles and milk. Scoop the batter about 2/3 of the way full into some cupcake liners and bake at 340F or 170C for 18-20 minutes! Let them completely cool before frosting them. Swiss Meringue Buttercream Recipe: - 4 egg whites - 1 cup sugar - 2 sticks softened unsalted butter (I ended up using 1 1/2 sticks) - 1 tsp vanilla extract Directions: Mix egg whites and sugar in a heat proof bowl. Place the bowl over a bain marie (a saucepan with an inch of simmering water, make sure the bowl doesn't touch the water). Continuously stir until all the sugar is completely dissolved, or reaches 160 degrees F (this is to ensure that the egg whites are cooked and safe to consume). Then take the bowl off the heat and use your stand mixer (or hand mixer, but it'll take a lot of power) and beat it on high for about 10 minutes until the bowl cools down and the meringue has stiff, glossy peaks. Then add the softened butter a tbsp at a time. I ended up using 3/4 cup of butter because I found that it would be too buttery if I added all of it. Don't be afraid if it starts to curdle and continue beating and add food coloring and vanilla. Once it is a smooth, fluffy frosting it is ready to use! Open Me~ Ingredients: - 1/2 cup all purpose flour - 1 cup cake flour - 1 1/2 tsp baking powder - 1/4 tsp salt - 1/2 cup unsalted butter - 3/4 cup sugar - 2 eggs - 2 tsp orange zest - 1/4 cup orange juice - 1/3 cup milk Cream Cheese Whipped Cream Frosting: https://www.youtube.com/watch?v=c2H39Hq4J1A - 4 oz softened cream cheese - 1 cup powdered sugar - 3/4 cup heavy cream 1/4 of the reserved frosting: - 1/2 tsp vanilla extract Rest of frosting: - orange food coloring - 1/2 tsp orange extract ( or add 2 tbsp orange juice, add more to taste if needed) Directions: Sift together the flour, cake flour, and baking powder in a medium sized bowl. Add the salt then whisk everything together. Set the bowl aside. In a separate large bowl, beat the butter until pale and creamy. Then beat in the sugar. Add the eggs one at a time, stirring in between each addition. Zest a fresh orange and add that into the batter. Add half of the dry ingredients into the wet, and mix well. Mix in the orange juice. Add the rest of the dry ingredients and beat in the milk as well. Scoop batter into cupcake liners 3/4 of the way full. Bake at 350F or 180C for 18-20 minutes or until a toothpick inserted comes out clean. Let cool and prepare the frosting: Beat the softened cream cheese until nice and creamy. Add the powdered sugar and mix well. Add the cold heavy cream and beat on high speed for 3-5 minutes until the cream stiffens up. Once the frosting holds stiff peaks, reserve 1/4 of the frosting and add the vanilla extract. Place this frosting into a pastry bag with a round tip. To the rest of the frosting add some orange food coloring and the orange extract / orange juice. Transfer the frosting into a pastry bag with a desired tip. Once the cupcakes are cool, use a cupcake corer to make a hole in the center of each cupcake. Use the plain cream cheese whipped frosting to pipe a dollop inside. Place the top of the cupcake back on. Use the orange frosting to pipe some frosting on the top of the cupcake. Decorate with orange zest and orange slices if desired. Open Me~ Ingredients: 8 oz (227 grams) unsweetened coconut flakes 4 cups (940 ML) hot water Directions: Place coconut flakes and hot water in a blender. Let the coconut flakes absorb the water for around 5 minutes. Blend until it is nice and smooth as you can get it to be. Then place the mixture into a cheese cloth over a strainer and squeeze the coconut to drain out as much of the liquid as you can. Place the coconut leftover in the bag onto a baking sheet. Spread out evenly and let it dry for around 24-48 hours until it is dried out (or you can bake at 200F/95C for around 3 hours or until completely dried). Transfer the coconut milk that was strained into an airtight container/jar and place in the fridge for up to 2 weeks. Once the coconut has dried out, you want to process it in a food processor and sift it, and continue that process until you have sifted all your flour. Then you have a finished product of coconut flour and coconut milk! How To Make Lavender French Macarons + Lavender Buttercream Frosting

♥Please Watch in HD♥ Open Me~ Hope you guys like this video! The macarons are so delicious! What other recipes would you like to see? Comment below! :) Macaron Shells: - 1 cup of powdered sugar (aka confectioner's sugar, icing sugar) - 3/4 cup of almond flour (ground almonds) - 2 egg whites at room temp - 4 tbsp of granulated sugar OPTIONAL: purple food coloring and lavender buds for decoration Directions: 1. Whisk together the powdered sugar and almond meal until fully combined. Then sift through a fine sifter to ensure that the macarons will be smooth on top. There will be chunks of almond that cannot be sifted, so discard those. 2. Beat the egg whites until frothy, then add half of the granulated sugar. Beat for 1-2 more minutes and add the rest of the sugar. Beat at high speed for an additional 5 minutes until you get soft peaks. OPTIONAL: add some purple food coloring (a little more than you want because the color fades as the macarons bake) Then beat until you get stiff peaks. 3. Add half of the dry ingredients into the meringue and fold carefully. Once fully combined, add the rest of the dry ingredients and continue to fold everything together. Continue folding until you get the consistency of "molten lava" and it should be thick, loose, and flow in one long stream, but should NOT be thin. Do not undermix or overmix, or else the macarons will not turn out right. 4. Place the batter into a piping bag with a round tip (if you don't have an icing tip, just cut the corner off). Then pipe round circles onto a baking sheet lined with parchment paper. You can make them any size you want, but I made mine 1 1/2 inches in diameter. 5. Let them sit for 30 minutes or even up to 1 hour. Just make sure they sit until you can touch them and they are dry.OPTIONAL: sprinkle some culinary lavender on half of the macarons you are making once they are slightly dry (just for decoration :D) 6. Then bake them at 300 degrees Fahrenheit, or 150 degrees Celsius for 8 minutes. Then take the baking sheet and turn it around and bake it for another 8 minutes. The macarons should be hard and smooth and top and have feet. 7. Let them completely cool before filling them with the lavender buttercream filling. Lavender buttercream: - 1/2 cup (1 stick) of unsalted butter at room temp - 2 cups of powdered sugar (aka confectioner's sugar, icing sugar) - 1/2 cup of heavy cream - 1 teaspoon of culinary lavender buds Directions: 1. Beat softened butter until creamy. 2. Add the powdered sugar half at a time and mix slowly so that the sugar doesn't go flying everywhere. 3. Add the cream (I used about half of what we measured out) until the consistency of the buttercream is nice and spreadable. 4. Add a splash of lavender extract if you have any. This will make the lavender flavor more noticeable. OPTIONAL: add purple food coloring for a nice purple color! 5. Transfer the buttercream into a piping bag. CHOCOLATE BATTER: - 1/3 cup unsweetened cocoa powder - 1/2 tsp baking soda - 1/2 cup boiling water - 1/4 cup melted unsalted butter - 2 tbsp vegetable oil - 3/4 cup granulated sugar - 1/2 tsp vanilla extract - 1 egg + 1 egg yolk - 1/4 cup heavy cream - 1 cup all purpose flour (plain flour) Directions: 1. Mix cocoa powder, baking soda, and boiling water together until fully combines. Set aside. 2. Mix together melted butter, vegetable oil, and sugar. Add the egg and egg yolk and vanilla extract. Mix well. 3. Add cocoa mixture into the butter mixture and mix well. Add the heavy cream in as well. 4. Add flour and mix until you have a smooth chocolate batter! 5. Spoon about 1.5 - 2 tbsp of this chocolate batter into a cupcake tray lined with cupcake liners. VANILLA BATTER: - 1 1/2 cup cake flour - 1 1/2 tsp baking powder - 1/4 tsp salt - 7 tbsp softened unsalted butter (room temp) - 3/4 cup granulated sugar - Seeds of 1/2 vanilla bean *IF YOU DON'T HAVE A VANILLA BEAN, SIMPLY ADD 1 MORE TSP OF VANILLA EXTRACT TO THE RECIPE* - 3 egg whites - 1/2 tsp vanilla extract (or 1 1/2 tsp of vanilla if not using vanilla bean) - 1/2 cup milk 1. Sift together the cake flour, baking powder, and salt. Set aside. 2. Beat butter with sugar. Add the vanilla seeds to the mixture. 3. In a separate bowl (or pyrex pitcher), whisk together your wet ingredients: egg whites, vanilla extract, and milk. 4. Alternate between adding 1/3 of the dry mixture and 1/2 of the wet mixture into the butter mixture. You should start by adding the dry and end with adding the dry. 5. Scoop vanilla batter on top of chocolate batter until 3/4 of the way full without disturbing the chocolate layer underneath. 6. Use a toothpick to spread out the vanilla layer so that it covers the chocolate batter. 7. Bake cupcakes at 350° F or 177° C for 18-20 mins, or until a toothpick inserted comes out clean. 8. Cool cupcakes completely before frosting. STRAWBERRY BUTTERCREAM FROSTING: - 7 oz strawberries - 1 cup of softened unsalted butter (room temp) - 3 cups icing sugar (sifted) - 1 to 2 tbsp milk if needed 1. Blend your strawberries until pureed nicely. Transfer strawberry mixture onto a saucepan and cook on medium heat until boiling while stirring occasionally. Once boiling, let simmer for 20-30 mins until reduced in volume, still stirring occasionally. 2. Strain mixture through a sieve to remove seeds. 3. Beat butter on high until light and fluffy. Add the icing sugar in thirds, and add the strawberry puree. 4. Add milk if needed to smooth out the consistency of the frosting. 5. Transfer frosting to a piping bag and pipe the frosting onto your cooled cupcakes. ♥Please Watch in HD♥ Open Me~ This is a "better" version of how to make macarons, and also a chocolate recipe! I hope this is more helpful than the first macaron video I uploaded :) Chocolate Macaron Shells: 1 cup of powdered sugar 3/4 cup of almond meal 2 tablespoons of usweetened cocoa powder 2 room temperature egg whites 4 tablespoons of granulated sugar Chocolate Ganache: 8 oz of semi sweet chocolate 1 cup of heavy whipping cream - you can adjust to 1/2 cup to make it thicker 1 tablespoon of vanilla extract Method: Sift the powdered sugar and almond meal into a bowl. Mix to combine In a separate bowl, or in your KitchenAid Mixer, whisk up your egg whites gradually from low to high speed. When they start to get frothy, add your granulated sugar, but one tablespoon at a time. Keep on beating the egg whites and you should get glossy, white meringue. You can bring it to stiff peaks, but I find that soft peaks have the best consistency. Then you are going to fold your almond and powdered sugar mixture into the meringue about 1/3 or 1/2 at a time. Then line a baking sheet with parchment paper. Transfer the batter into a piping bag and pipe out circles being any size you'd like. Bang them on the counter to release any air bubbles. Let them set for 15mins -1 hour depending on the humidity of your area. Sometimes it takes 10 mins, 30 mins, or up to an hour. You'll know they're ready when you can touch them and no batter comes on your finger. Bake them at 300 degrees Fahrenheit for 9 minutes, with the oven racks being on the top and bottom. When they are done baking, switch the pans around and put them on opposite racks so they cook evenly. Bake for another 9 minutes. Chocolate GANACHE METHOD: Put 1 inch of water in a pot and bring it to a simmer. Place a bowl over it and put in your chocolate, cream, and vanilla. Let it melt and stir to combine. Then, take the bowl off the heat and let it cool. Place the ganache into the fridge for 1-2 hours to let it thicken. Then place some ganache onto a macaron shell and sandwich it together with another macaron shell and they're done! It has a gorgeous pastel pink color perfect for Valentine's Day or any occasion :) Pink Velvet Cupcakes: - 1 1/4 cup all-purpose flour - 3/4 tsp baking powder - 1/8 tsp baking soda - 1/8 tsp salt - 1/2 cup granulated white sugar - 1/2 cup (1 stick) unsalted butter at room temp. - 2 eggs - 1 tsp vanilla extract - red food coloring - 1/2 cup of buttermilk Directions: 1. Whisk flour, baking powder, baking soda, and salt together in a bowl. 2. In a separate large bowl, beat butter for 1 minute until light and fluffy. Mix in sugar. Then add eggs one at a time, mixing between each addition. Stir in vanilla extract. 3. Add in desired amount of red food coloring to get the perfect shade of pink of your choice. 4. Alternate mixing the dry ingredients and the buttermilk until you have a smooth cupcake batter. 5. Scoop batter 3/4 of the way full into a cupcake pan lined with cupcake liners. 6. Bake for 15-18 minutes at 350 degrees Fahrenheit, or until a toothpick inserted comes out clean. Rose Cream Cheese Frosting: - 6 oz. cream cheese at room temp. - 4 tbsp unsalted butter at room temp. - 2 1/2 cups icing sugar, sifted - 1/2 tsp rose extract - red food coloring. Directions 1. Beat cream cheese and butter until light and fluffy. 2. Mix in icing sugar 1/3 at a time. 3. Mix in rose extract and food coloring and beat on high to produce a light, creamy frosting. 4. Transfer into a pastry bad with a Wilton 2D star tip. 5. Pipe onto the cooled cupcakes. Enjoy!
