Step 2: Take two cups of boiled rice and add chopped beans, carrot and capsicum to it. Step 3: Then add 1 tbsp cumin (jeera), half spoon red chilli powder and some salt as per taste. Mix well. Step 4: Mash a boiled potato in the mixture and make flat circular cutlets out of them Heat a pan with 2 big spoons of oil in it. Step 5: Fry the cutlets in medium heat for 3-4 minutes, flip it and fry it again for 3-4 minutes. There you go! Yummy Vegetable Rice Cutlets are ready!

Step 2: Now finely chop a tomato, an onion, some garlic and a piece of ginger. Step 3: Now fry 1 tsp cumin seeds (jeera) in a pan filled with 1 tbsp of oil. When the cumin seeds become brown, add finely the chopped tomato, onion, garlic and ginger. Step 4: Then add some water to the mixture and keep stirring it for some time. Step 5: Now add turmeric, red chilli powder, cumin powder, coriander powder and fenugreek (kasuri methi). Mix well by adding some more water if you want. Step 6: Now add the other cut vegetables and keep stirring it slowly. Step 7: Add some more water, cover the vessel with a lid and cook for 7 to 10 minutes. Then finely chop onion for shallow fry along with ginger, coriander and garlic. Step 2: Now mix a cup of arhar dal, two cups of water, 1 tsp turmeric and half spoon of red chilli powder together and boil it for 20 to 25 minutes. Then add the chopped mangoes into the above mixture and cover the vessel with a lid for 5 to 7 minutes. Step 3: Now fry mustard, leaf cody (kadi patta), 3-4 red chillies, finely chopped ginger and garlic in a vessel filled with 1 tbsp of oil. Then add finely chopped onion, a pinch of asafoetida (hing), half a spoon red chilli powder and half a spoon of turmeric. Step 4: When the onion turns a little brown, add boiled gram (dal) and mix it with the fried ingredients. (tadka) Add some salt as per your taste and garnish with some coriander leaves. Delicious Mango Dal is ready to be served nice and hot.

Ingredients • Socked rice & Bengal gram (chana dal) – 2 cup • Split pigeon peas (arhar dal) - ½ cup • Split black gram (kaala chana) - 1 t-spoon • Grated dried coconut - 1t-spoon • Onion - 1/2 piece • Drumstick leaves - 1cup • Green chilies - 2 piece • Ginger - 1 piece • Red chilli power - 1t-spoon • Turmeric - ½ t-spoon • Oil • Asafoetida (Hing) - 1t-spoon • Salt to taste Procedure Step 1: Finely chop drumstick leaves, a half piece of onion, ginger and green chillies. Then grind a dry coconut until it becomes a powder. Step 2: Now grind soaked gram seeds(dal) and rice; add 1 tbsp of red chilli powder, half a spoon of turmeric, 1 tbsp of asafoetida (hing), some chopped ginger, green chillies and some water. Step 3: Grind the mixture again to make a thick paste like batter. Take the mixture out in a bowl and add some grated coconut, finely chopped drumstick leaves, a half piece of onion, ginger and green chillies. Finally add some salt as per taste. Step 4: Heat a dosa pan as you add 1 tbsp of oil to it by pouring the batter on the hot pan starting from the centre to make circular dosas. Heat the batter on medium heat for 3 minutes, flip the dosa and heat again for 3 to 4 minutes. Adai Dosa is ready to be served with green coconut chutney. Step 2:Start heating 1 tsp mustard seeds (rai), 1 tsp urad dal and 1 tsp chana dal in two tbsp of oil poured into a pan. Add 5 to 7 leaf cody (kadi patta) along with chopped garlic, red chillies and asafoetida (hing) into the hot pan and keep frying it. Step 3: Then add a cup of boiled rice to the fried ingredients. Sprinkle some salt as per your taste and heat the entire mixture on low heat slowly. Step 4: Now dip the rolls into the batter and deep fry it in a pan until they become golden brown. Step 2: Now fry Cumin seeds and Asafoetida (Hing) in a pan filled with 2-3 spoons of oil. Step 3: Now add chopped chilies and tomatoes and fry the entire mixture. Now add coriander powder, turmeric powder and red chili powder. Step 4: Fry this mixture for 5 to 6 minutes on medium heat. Step 5: Now add cut boiled potatoes, some salt as per taste, some garam masala and fry it for 5 minutes. Step 6: Pour half liter water and cook the entire mixture for 5 to 7 minutes until the water boils along with some dried mango powder. Garnish with some chopped green coriander leaves. Step 2: Now add two cups of wheat in a vessel and roast it well. Step 3: Then add 2 to 3 spoons of butter (ghee) and keep roasting until the wheat becomes brown. If required, you can add some more Ghee. Step 4: Now add 3 to 4 spoons of powdered sugar. Step 5: Then add the mixture of cardamom along with dry fruits and mix well. Step 6: Let the mixture cool down and make small spherical balls or ladoos out of it. Your favourite Wheat ladoo is ready to be served!
