Place almonds on a rimmed baking sheet and warm in the oven for 12-15 minutes. If you want a roasted flavor, leave the almonds in the oven a little longer until they are warm and golden brown. *note: you can skip this step but I find the warm almonds turn into almond butter faster then room temperature almonds, so I prefer to start with them warm. Place warmed almonds into your food processor and pulse a few times until the almonds have begun to break down. Then let the processor run, stopping whenever you need to scrape the almonds off the sides of the processor. Once the old release from the almonds it will become very smooth and creamy. This is what you are looking for. Be patient, it can take anywhere between 15-25 minutes. Makes 1.5 cups of almond butter. Spray a 12 cup muffin tin with cooking spray or coat with coconut oil or butter. In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt. In a separate bowl mix together mashed bananas, eggs, and milk until well combined. Pour milk mixture over oat mixture and stir well to combine. Evenly divide the oat mixture between all 12 muffin cup and then top each one with a sprinkle of chocolate chips. Bake for 20-25 minutes or until set and cooked though. Allow to cool and then store in an airtight container in the fridge for up to a week. Recipe Notes *I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them on the microwave for 30-45 seconds or pop them in the toaster oven until warm. *I rely on the bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients. I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins or raspberries. Stirring them into the batter is certainly an option if you want more flavor thought the muffin cup. Spring is in the air and outdoor meals are on my brain, so I’ve partnered with @PureLeafIcedTea to bring you this Quinoa Tabouli Salad w/ Garbanzo Beans + Feta Cheese. The simple, fresh flavors and whole ingredients in the salad pair perfectly with a real brewed unsweetened iced tea! #RealBrewedRecipes Quinoa Tabouli Salad with Feta & Garbanzo Beans Yield: 4-6 Servings Ingredients: 2 cups cooked quinoa ½ cup chopped scallions ¼ cup fresh chopped mint ½ cup fresh chopped parsley 1 cup Persian cucumbers, chopped 1 cup garbanzo beans 2 cloves of minced garlic ¼ cup fresh squeezed lemon juice 3 tablespoons extra virgin olive oil 1 large tomato, diced 2 oz crumbled feta cheese Salt and pepper to taste Process: Combine quinoa, scallions, mint, parsley, cucumbers, and garbanzo beans in a large bowl. In a separate bowl, (I like to use a spouted Pyrex cup) whisk together the garlic, lemon juice, and olive oil. Season with salt and pepper and then pour over the quinoa mixture, combine well. Gently toss in the tomato and feta cheese. Enjoy! Storage Tip: Keeping fresh herbs rolled in a damp paper towel and sealed in a plastic bag in the fridge will keep it fresh for almost 2 weeks.

INSTRUCTIONS Heat the oil in a large pot over a medium and add in the onions and a pinch of salt. Sauce for 4-5 minutes or until the onions are fragrant and beginning to turn translucent. Add in the garlic, celery, carrots, ginger, turmeric, cayenne and cinnamon. Season with some salt and pepper and cook for 5 minutes or until the veggies are tender. Add in cabbage, tomatoes, beans, and water (or broth). Turn the heat to high and bring it all to a boil. Reduce heat and simmer for 10-15 minutes or until vegetables are soft. Add in the chard, zucchini and lemon juice near the last 2-3 minutes of simmering. Season with some more salt and pepper and enjoy! Makes a huge pot of soup. Serves 6-8. Place each veggie into the food processor and pulse until you have chopped the veggies nice and fine. They should look like crumbs and you will definitely have to do this in batches. Fine chop the parsley as well. Transfer the veggies into a big bowl and add in the almonds, sunflower seeds, and dried cranberries. In a separate bowl combine the garlic, ginger, lemon juice, dijon mustard, honey, extra virgin olive oil, salt, and pepper. Drizzle the dressing over the salad and toss everything together. Serve and enjoy!
