T x || ELECTRIC LUNCH 1 || Spelt grain salad w/ ginger tahini dressing (serves 2-3) 2 cups cooked spelt (1 cup dried) 1 ½ cup kale (remove stem) 3 tbsp. olive oil 1 red pepper 100g cherry tomatoes ½ red onion 100g raisins Ginger tahini dressing 200g tahini 1 tsp. cayenne 1 tbsp. dried oregano 1 lime (juice) sea salt (to taste) 2 inch ginger piece (grated) || ELECTRIC LUNCH 2 || Brazil nut & kale pesto w/ roasted butternut squash (serves 2) ½ butternut squash (approx. 1 ½ cups when cubed) 1 tbsp. grapeseed oil 1 tbsp. dried sage or thyme sea salt (to taste) Pesto 2 cups kale (remove stem) 50g fresh parsley 2 limes (juice) 4 tbsp. olive oil 75g brazil nuts 2 tsp. onion powder 2 ½ cups cooked quinoa to serve || ELECTRIC LUNCH 3 || Crunchy hummus 1 cup warm chickpeas 2 tbsp. tahini 3 tbsp. olive oil sea salt (to taste) 1 lime (juice) 1 tbsp. dulse flakes ½ red pepper 100g cherry tomatoes 70g fresh coriander ½ red onion || ELECTRIC LUNCH 4 || Squash falafels (approx. 12 falafels) 1 cup butternut squash 3 cups cooked or 2 cans chickpeas 1 tbsp. tahini 30g fresh parsley 30g fresh coriander 2 tbsp. onion powder 2 tbsp. dried dill 2 tbsp. dried oregano 1 tbsp. cayenne 1 small white onion ½ cup chickpea flour sea salt (to taste) 1 tbsp. grapeseed oil Tahini dressing 2 tbsp. tahini ½ tsp cayenne sea salt (to taste) 1 tsp dried dill 1 tsp dried oregano 1 lime (juice) ¼ cup water (add more for thinner consistency) || ELECTRIC LUNCH 5 || Walnut pesto w/ pasta 200g spelt pasta 1 avocado 3 cups fresh basil sea salt (to taste) lime (juice) ½ cup walnuts

This recipe is so tasty and is a great way to put your juice pulp to good use! Enjoy. T ⭐️SOCIAL MEDIA: https://www.instagram.com/tishwonders/ https://www.facebook.com/tishwonders/ / / Recipe \ \ 4 cups juice pulp 1 large sweet onion 1/2 cup flax seed meal 2 tbsp maple syrup 2 tbsp tamari 1/4 cup olive oil 1/4 cup water Seasoning of choice (I used): 2 tbsp. oregano 1 tbsp. basil 2 tbsp. garlic powder 1 tsp. crushed fennel seeds 1/4 tsp. cayanne sea salt black pepper / / Directions \ \ STEP 1 Juice desired juice and save 4 cups of the pulp Grind the flax seeds in a blender or processor until fine Peel, chop and blend sweet onion until smooth STEP 2 Place the pulp, flax seed meal, sweet onion puree, olive oil and water into a food processor. Process for a few minutes scraping down the sides if necessary Add the maple syrup, tamari and seasoning of choice. Process until all is combined STEP 3 On a dehydrator sheet or parchment paper, spread the bread mixture out evenly with a spatula. Cut edges (optional) STEP 4 Place into a dehydrator for 8 hours (or overnight) at a temperature of 115F or 46C. Remove the bread after 8 hours and flip over. Place back into the dehydrator for another 2 hours. Remove bread, cut into slices and serve with desired topping. Store in an air tight container. *if you decide to divide the mixture and place on two trays reduce the cooking time. Cook for 5 hours and flip over. Place back into the dehydrator for a further 1-2 hours.

Crumble ingredients: 1 cup OATS 1 cup WALNUTS 1 cup COCONUT FLAKES 1/3 cup COCONUT PALM SUGAR 4 tbsp COCONUT OIL Filling ingredients: 5 APPLES (chopped) 2 tbsp COCONUT OIL 4 tbsp MAPLE SYRUP 3 tbsp RAISINS 2 tsp CINNAMON Method: 1. Place all 'crumble topping' ingredients into a food processor for 2 minutes. Set aside. 2. For crumble filling heat coconut oil in saucepan. Add maple syrup, apples, raisins and cinnamon. Cook for 2 minutes. 3. Transfer crumble filling into a dish and top with the crumble topping. 4. Place in a medium - hot oven for 25-30 minutes.

T ⭐️SOCIAL MEDIA: https://www.instagram.com/tishwonders/ https://www.facebook.com/tishWonders/ ⭐️MUSIC: Boubou - Road trip RECIPES: // COCONUT LENTIL CURRY \\ (4 servings) 1 tbsp. coconut oil 1 cup red lentils 1 tsp. fennel seeds 1tsp. cumin seeds 1 tsp. turmeric 1 tsp. ginger powder ½ tsp. onion powder 1 ½ tsp. garam masala ¼ tsp. crushed chilli 1 tbsp. coconut palm sugar 10-12 fresh curry leaves 400ml full fat coconut milk handful fresh coriander Directions: 1. Heat oil on a low heat. Add the fennel and cumin seeds for 1 minute and stir. 2. Add the onions and garlic followed on by the turmeric, ginger powder, onion powder, garam masala, crushed chilli and salt. Cook until soft and then add the coconut palm sugar and fresh curry leaves. 3. Add the chopped tomatoes the pot. Add washed and rinsed lentils, coconut milk, and water. Cover pot and cook on a low-medium heat for approximately 25 minutes, stirring occasionally. Once the lentils are soft, stir in the chopped coriander. Serve as desired. // BUTTERBEAN & OLIVE TAGINE W/ SWEET COUS-COUS \\ (4 servings) 2 cups cooked butterbeans (lima beans) 1 ½ cup passata 2 red onions 7-8 cloves garlic 4 cm piece ginger (grated) 2 medium carrots 1 pepper ½ c pitted black olives (I used kalamata but any will work/ rinse if necessary) handful fresh coriander 1 ½ tbsp. coconut oil 1 ½ cups water 1 tbsp. coriander seed powder 1 tbsp. cumin seeds or powder 1 tsp. paprika ½ tsp. cinnamon ½ tsp cayenne (add more if you wish to) 1 1 /2 tbsp. dried parsley 1 tbsp. coconut palm sugar black pepper pink or sea salt Directions 1. Heat oil on a low heat. Add onions, ginger and garlic cooking and stirring for a few minutes. Add all spices herbs and sweetener of choice: coriander seed powder, cumin seeds, paprika, cinnamon, cayenne, dried parsley, salt, black pepper and coconut palm sugar continue cooking for 2 minutes on a low heat (making sure spice do not burn!). 2. Add the passata and stir, wait a few minutes for passata to heat up and add the chopped carrots, butterbeans (washed and rinsed if you use canned), chopped peppers, black olives and water to cook everything. Mix everything in the pot and turn the heat up very slightly. 3. Cover the pot and cook for 15-20 minutes occasionally stirring to ensure you don’t scorch the bottom of the pot. Once the carrots are softened (ideally they will still have a crunch) add the fresh coriander and fresh lemon juice. //COUS COUS\\ (4 servings) 1 ½ cups cous cous 2 cups piping hot water 1 tbsp. dried parsley sea salt black pepper ¼ cup raisins olive oil Directions: 1. Add dried cous cous, dried parsley, sea salt, black pepper, raisins to a medium bowl. Pour over the boiling hot water and cover immediately. Leave for 15 minutes. 2. Remove the cover from the bowl and fluff the cous cous up with a folk. Pour over a little olive oil and serve with butterbean dish.

Place chia seeds and water in a small bowl and mix together. Leave for 5 minutes. 2. After setting aside chia seeds for 5 minutes, place all ingredients (except coconut oil) in a blender and blend until smooth. 3. Heat 1 tbsp. coconut oil in a pan. Wait for pan to get very hot and make each pancake with approximately 2 tbsp. mixture. 4. Cook for approximately 3 minutes before flipping. Make sure both sides are golden brown and transfer to a plate. 5. Repeat steps to cook the pancakes and add more oil to the pan when necessary. 6. Add favourite toppings and enjoy!
