Beat the butter for 5 minutes until it has become light and airy, doubled in size and lost most of it's colour. Start adding the icing sugar half a cup at a time, beating for about a minute in between each addition. Use the milk to thin out the consistency of the icing, add it a teaspoon at a time. This is also the time to add any flavourings or colourings that you would like. This icing can last in the fridge for a few weeks or the freezer for 3 months. Pour the water into the powdered gelatin and mix with a spoon. Leave to swell for a few minutes. When the sugar, sweetened condensed milk, and water begins to simmer remove from the heat and add the swelled gelatin. Stir until the gelatin has dissolved. Pour the hot liquid on top of the chocolate chips and leave to sit for 5 minutes to melt. Use a whisk to stir the glaze until the chocolate has completely melted. Add the gel food coloring and stir until well mixed. Leave the glaze to cool. Once the glaze has cooled to 37C | 90F pour it over the frozen cake which is on top of a cup sitting on a tray to catch the drips. Leave the glaze to set for 15 minutes before using a spatula to remove the drips. Transfer the cake to the fridge to set for a few hours before serving. Sprinkle over the flour and mix with a wooden spoon to create a roux. Cook out the roux for about 2 minutes, stirring. Add the milk gradually, mixing well in between each addition to remove any lumps. Continue cooking the sauce for 10 minutes, stirring occasionally. Remove from heat and leave to cool for a few minutes. Season boiling water with salt and add the macaroni, cook according to package instructions. Start to add the cheese gradually to the sauce, reserving some for sprinkling over the top. Drain the macaroni and add to the sauce. Mix well and pour into a baking dish. Top with leftover cheese and place into a 200C or 400F oven for 20-25 minutes until the top is golden. No-bake cheesecakes are my favorite and this one is no exception. This cheesecake recipe is filled with Oreos so how could it be anything other than delicious? No-bake desserts are quick and easy, the only hard part is waiting for it to set. If you don't have Oreos or you want to use something else, this cheesecake is essentially a cookies and cream cheesecake so you can use brand of cookies. Alternatively add the cookies to a plastic bag and hit with a rolling pin until they turn into fine crumbs. Add they cookie crumbs to a mixing bowl and pour over the melted butter. Mix together until the texture resembles wet sand. Press the Oreo crumbs into a 8" or 20cm cake tin with the back of a spoon. Place into the fridge to set. In a clean bowl add the cream and use a whisk or hand beater to whip the cream to soft peaks. Set to the side. In a medium sized mixing bowl add the cream cheese and sugar. Beat together until softened and smooth. In a small bowl add the gelatin and pour over the boiling water, stir to dissolve. Add the gelatin to the cream cheese and sugar and mix together. Switch to a whisk and mix in the cream until everything is well combined. Reserve 1 cup of the cheesecake filling to decorate with later. Pour in the remaining crushed Oreos and use the whisk to combine. Pour the cheesecake filling into the cake tin, smooth out and place into the fridge to set for at least 2 hours. Remove the cheesecake from the fridge and cake tin. Place onto a cake stand or plate to serve. Pipe swirls of the remaining cheesecake filling on the top of the cheesecake and decorate with Oreo cookies and crumbs. Cut the potatoes up into small cubes and place into a saucepan. Fill with cold water and place over medium-high heat to bring to the boil. Boil the potatoes for 20-30 minutes or until very tender and nearly falling apart. Drain the water using a colander and place the potatoes back into the saucepan. Keep on the heat until there is no longer large amounts of steam. Remove from the heat and start to mash the potatoes using a potato masher. Season with salt and pepper and gradually start adding the butter in small amounts. Make sure the butter is at room temperature so it doesn't bring down the temperature of the potatoes. Once all of the butter has been incorporated start to add the warm milk in small amounts until you are happy with the consistency. You may not need to use all of the milk. Check for seasoning and serve. Measure out the caster sugar and add to the butter along with the vanilla essence. Cream together until light and fluffy. Add the eggs one at a time, beating in between to make sure they are well incorporated. Sieve the flour, baking powder, and salt together and add to the creamed butter and sugar. Pour in the milk and add the sour cream. Mix well until there are no longer any clumps of flour. Spoon into 12 cupcake liners and place into a 180C of 350F oven for 20 minutes or until the cupcakes spring back when pressed. Cool on a wire rack before icing. Buttercream Recipe 250g / 1 Cup Butter 375g 3 Cups Icing Sugar 30ml / 2 Tablespoons Milk Add room temperature butter to a bowl. Beat the butter for 5 minutes until it has become light and airy, doubled in size and lost most of it's colour. Start adding the icing sugar half a cup at a time, beating for about a minute in between each addition. Use the milk to thin out the consistency of the icing, add it a teaspoon at a time. This is also the time to add any flavourings or colourings that you would like. This icing can last in the fridge for a few weeks or the freezer for 3 months. Set to the side. In a smaller bowl crack in the egg and pour in the milk. Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined. Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps. To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter. Cook the pancake for 2-3 minutes each side. Repeat with remaining batter. Serve the pancakes stacked high with butter and maple syrup. Enjoy. Notes You can add other flavourings to the pancakes such as blueberries or chocolate chips. I've roasted the pumpkin because I think it gives the soup a lot more flavour than if you were to boil the pumpkin that is in a lot of other pumpkin soup recipes. Remove the seeds from the pumpkin and slice into wedges. Place the pumpkin into a roasting dish and pour over 1 Tablespoon of oil and season with salt and pepper. Place into the oven to roast for 1-2 hours or until the pumpkin is soft and caramelised at the edges. Leave the pumpkin to cool while you prepare the remaining ingredients. Heat 1 Tablespoon of oil in a pan over medium heat. Slice the onion and add to the pan. Crush 3 cloves of garlic and slice thinly, add to the pan and cook for 10 minutes. You don't want to colour the onion just cook it until it is soft and clear. While the onion and garlic are cooking remove the pumpkin flesh from the skin. Use a spoon and scoop it out placing into a bowl. Add the ground coriander seeds to the onion and garlic, stirring until fragrant. Pour in 2 cups of the stock, reserving the last cup, and stir. Pour the stock mixture into a blender and top with the pumpkin. Blend until there are no lumps. If you would like the soup to be a thinner consistency add more of the stock. Pour into a bowl, garnish with cream and parsley and serve with crusty bread. Melt the butter in the microwave for about 30 seconds or in a saucepan. Pour the cookie crumbs and melted butter into a medium sized mixing bowl and mix together with a wooden spoon until well combined. Pour the mixture into an 8inch or 20cm lined cake tin and press down with the back of a spoon until firmly packed and even. Place the cheesecake base into the fridge to set. Cut the chocolate into small pieces with a serrated knife and place into a heat proof bowl. Melt the chocolate over a saucepan of simmering water, stirring occasionally until completely smooth and leave to cool. Pour the heavy cream into a medium sized mixing bowl and beat with a whisk until softly whipped, set to the side. In a large mixing bowl combine the cream cheese and sugar and beat with a whisk until well combined. Pour the softly whipped cream and cooled melted chocolate into the bowl with the cream cheese and sugar. Mix the ingredients together with a whisk for a few minutes until well incorporated. Pour the cheesecake filling into the cake tin and use an offset spatula to smooth out the top. Bang the cake tin on the counter a few times to remove any air bubbles and place into the fridge to firm. To make the topping for the chocolate cheesecake cut the second lot of chocolate into small pieces and place in a heat proof bowl. Pour the cream into a small saucepan and heat over medium heat until it just starts to boil. Remove the cream from the heat and pour over the chocolate and leave to stand for about 5 minutes. Mix the chocolate and cream together until completely smooth and pour over the cheesecake. Add the eggs one at a time mixing after each addition. Add the food coloring and vanilla essence and beat together until everything is well combined. In a clean bowl whisk together the flour, cocoa powder and baking soda. In a separate bowl or glass mix together the milk and vinegar, leave for about 5 minutes. Add half of the milk mixture and half of the dry ingredients to the butter mixture. Mix until combined before adding the second half of the ingredients. Pour into a greased cake tin and bake in a 350f or 180c degree oven for about 35 minutes or until a skewer comes out clean. Leave to cool on a wire rack. Red Velvet Truffles Recipe Red Velvet Cake 250g | 9oz Cream Cheese 1/2 Cup Icing Sugar 300g White Chocolate Break the red velvet cake up into a bowl. Use your finger tips to crumble the cake until it is all crumbs. Reserve a handful of the crumbs to use to decorate the truffles later on. In a separate clean bowl add the cream cheese making sure it is at room temperature. Use a whisk or a hand beater to mix the cream cheese together until it has softened and whipped up a little. This makes it much easier to mix with the cake crumbs. Add half of a cup of icing sugar to the cream cheese and beat together until well combined. Use a wooden spoon to mix the cream cheese and cake crumbs together until there are no lumps, it's a velvety texture, and the crumbs are sticking together. Roll out 1 tablespoon amounts of the truffle mixture and place onto wax paper so it doesn't stick. Continue until you have used all of the truffle mixture. Place the truffles into the fridge for at least a few hours for them to set. Use a sharp knife to cut a block of white chocolate into small pieces and place into a heat proof bowl. Melt the white chocolate over a double boiler until completely smooth. Remove the truffles from the fridge and dip them into the white chocolate, draining the excess chocolate before placing onto wax paper to set. Sprinkle with a small amount of the cake crumbs we reserved earlier. With the last third of the sugar add in the cocoa powder. The buttercream will be very thick at this point, turn the mixer to low speed and stream in half a cup of milk. Scrape down the sides of the bowl and add more milk if you would like a thinner consistency. Add in the vanilla essence and beat for a further 2 minutes. Transfer to a small bowl. Melt the butter and cool before pouring into the biscuit crumbs and mix until well combined. Pour the crumbs into a lined cake tin and use the back of a spoon to compact down. Place the cake tin into the fridge to set. Whip the cream until soft peaks form by hand or with a hand mixer. Set to the side. In a medium sized bowl add the room temperature cream cheese and icing sugar. Beat together with a whisk until smooth and lump free. Zest and juice the lemon and place into the bowl with the cream cheese. Mix to combine. Dissolve the powdered gelatine in the boiling water and add to the mixing bowl, stirring to combine. Add the cream to the cream cheese mixture and fold together until well combined. Pour the cheesecake filling on top of the cheesecake base and smooth. Place into the fridge for a few hours to set. Blend the can of berries and strain through a sieve into a medium sized bowl. Dissolve the gelatine in the boiling water and pour into the berries. Mix until combined. Pour the berry mixture on top of the cheesecake and place into the fridge to set for at least 4 hours or overnight. Serve topped with berries and fresh whipped cream. Set to the side. In a larger mixing bowl mix together the room temperature butter and white sugar until combined. Crack in the eggs one at a time beating well in between each addition. Pour in the vanilla and give another mix. Add the instant coffee to the hot water pour in the bowl along with the buttermilk. Top with the dry ingredients and fold together to form a smooth batter. Pour the batter into a greased cake tin and bake in a 160C or 320F preheated oven for about an hour or until a skewer comes out clean. Leave to cool in the tin for 10 minutes before removing. Chocolate Buttercream 250g | 1 Cup Butter 375g | 3 Cups Icing Sugar / Powdered Sugar 1/2 Cup Coco Powder 30ml | 2 Tablespoons Milk Beat the butter with a stand mixer or a hand mixer for about 3-5 minutes until pale. Gradually add the icing sugar and coco powder beating well in between. For a thinner buttercream incorporate the milk. Chocolate Ganache 250ml | 1 Cup Cream 250g Dark Chocolate Break the chocolate up into small pieces and pour over hot cream. Leave to sit for about 5 minutes before stirring. The chocolate should be completely melted. Leave to thicken for 15 minutes before pouring on top of the cake. Buttermilk Recipe 1 Cup Milk 1 teaspoon vinegar Mix the milk and vinegar together and leave to sit for 5 minutes. Place into a heat proof bowl and melt over a double boiler. Once the chocolate has completely melted mix in two teaspoons of oil. Mix until the oil and chocolate is well combined. Pour two thirds of the white chocolate into a tin covered with foil. Shake and turn the tin the white chocolate is evenly spread. Place into the fridge to set. While the white chocolate is setting cut the dark chocolate into small pieces. Melt over a double boiler and pour on top of the set white chocolate. Place into the fridge to set. Crush the candy canes by placing them into a plastic bag and use either a rolling pin or something with a flat surface to crush them. Pour the remaining white chocolate over the set dark chocolate and top with the crushed candy canes. Place into the fridge for at least 15 minutes to completely set. Remove the peppermint bark from the tin by pulling up the foil. Cut into small squares. This will last in the fridge for at least 2 weeks. It's a healthier alternative to traditional chocolate mousse as it's cream and egg free but still has the amazing taste and texture of chocolate mousse. Remove from heat and leave to cool while preparing the remaining ingredients. Cut avocados in half and remove pip and skin. Place into a food processor with the milk, honey, cocoa powder, and melted chocolate. Blend until the mousse comes together. At first it will look crumbly and separated. If you would like a thinner mousse consistency just add more milk. Serve in ramekins with mint leaves, strawberries and grated chocolate. This mousse should last in the fridge for a few days. Place the saucepan over medium heat and stir until the sugar has dissolved. Cook the sugar for 8-10 minutes until it has become a deep amber shade. Remove from the heat and pour in the cream. The sauce will bubble up but continue to stir until the cream is evenly combined. Add in the butter and mix until combined. Add the salt slowly, tasting before adding more. Leave the caramel to cool slightly before serving. Sprinkle over the sugar and use a spoon to toss the strawberries until they are evenly coated. Leave the strawberries to sit for about 30 minutes. Add the cream cheese to a bowl and stir to soften. Measure out the sugar and add to the cream cheese. Fold together until well combined and smooth. Switch to using a whisk and pour in the heavy cream. Beat with the whisk until the mixture thickens to whipped cream consistency. Cut the brownies up into bite sized pieces and place into the bottom of two glasses. Follow with the macerated strawberries and cheesecake filling. Garnish with strawberries, brownies, and mint leaves before serving. Notes If you don't have brownies you can use store bought or any other type of cake baked goods. You can use frozen strawberries in place of fresh. Today I'm going to share with you how to make perfect poached eggs. I have two different methods which both produce perfectly poached eggs, it just depends on which one you prefer. They are simple and easy to follow, you just need to make sure you follow a few tips. Use fresh eggs, add a small amount of white vinegar to the water, and don't have the water boiling. Poached egg are a perfect healthy meal, great if you are trying to loss weight or stick to a more healthier diet. By poaching the egg you are not adding any unnecessary fats or oils to the egg like you would if you were frying or scrambling. They taste amazing and are perfect for a weekend brunch or quick breakfast during the week. When the water has come to the boil add in about 2-3 tablespoons of vinegar. Turn the heat down so the water is just about simmering. Either crack the egg into the water or crack it into a ramekin first. For a runny yolk the egg should take about 3 minutes. When it is cooked remove it from the water and place it on paper towels to absorb up any water. METHOD 2 Bring water to a boil in a large pot. When the water has come to a boil add in 2-3 tablespoons of vinegar. Use a spoon to stir the water in the pot to create a whirlpool. Crack the egg into the middle of the whirlpool. The water will turn the egg over itself to create more of a rounded shape. For a funny yolk the egg should take about 3 minutes. Cut the butter into small cubes and add to the mixing bowl. Use clean dry hands to rub the butter into the flour until it resembled sand. Spoon in a few tablespoons of ice water and mix the pastry with a knife. Form the dough into a ball and knead for 30 seconds on a floured surface until smooth. Wrap the pastry in plastic wrap and place in the fridge for at least 30 minutes to rest. Peel, core and thinly slice the apples and place into a large bowl. Add the sugar, flour, cinnamon, salt, and lemon into the bowl. Mix until well combined. Divide the pastry into two and roll each into a large disc. Place one disc of pastry into a pie dish and cut off any excess leaving about an inch of over hang. Pour all of the apples and any juice into the pie dish and top with the second pastry disc. Cut off any excess pastry and use your fingers and thumb to create a decorated edge. Place the pie into the fridge for at least 30 minutes before baking. Bake the pie in a 200C | 400F oven for 45-50 minutes or until the pastry is golden brown. Leave to cool for an hour before slicing and serving with a scoop of vanilla ice cream. Notes The pie can be made ahead of time and kept in the fridge until you are ready to bake it. Make sure to let the pie cool for around an hour. The pie is best served warm so the filling doesn't fall out when cut. Add the egg yolks, vinegar and lemon juice into a blender and blend for about a minute until the mixture is light and frothy. Once the butter is hot and bubbling, remove it from the heat and slowly pour it into the egg yolk mixture with the blender running. Pour the butter in as slowly as you possibly can because if it is added too fast the sauce can curdle. Once the butter has been added pour the sauce into a bowl and season with salt and pepper. This sauce will keep for a few hours at room temperature, it cannot be put in the fridge as it will curdle. Eggs Benedict Recipe 4 English Muffins 8 Eggs Ham Hollandaise Sauce Cut the english muffins in half and place into the toaster to toast. Poach the eggs in a pan or pot with vinegar. Place the eggs on top and cover with a generous amount of hollandaise sauce. Sieve the flour into a large sized mixing bowl to remove any lumps. Add the baking powder and bakings soda a use a whisk to combine the ingredients. Set to the side. Melt the butter and leave to cool before adding to a medium sized mixing bowl. To the butter add the sugar, eggs, vanilla extract, and buttermilk. Whisk together until combined. Pour the wet ingredients into the dry ingredients and fold together using a wooden spoon until there is no more clumps of flour. Do not over mix. Add the blueberries to the batter and fold through gently until they are well distributed through. Divide the muffin batter between 12 lined or greased muffin tins. The batter should come up nearly to the top. Place the muffins into a 220C | 425F oven and immediate turn the heat down to 180C | 350F and cooke the muffins for 15-20 minutes or until the tops spring back when pressed. Cool the muffins on a wire rack before serving. Notes If you are using frozen blueberries add these to the dry ingredients and toss to coat. The flour will coat the blueberries soaking up any liquid to stop the batter turning purple. Add the egg, vanilla and cinnamon if using and beat until well combined. Sieve the flour, baking soda, and salt into the bowl and pour in the oats. Mix together the dough until just combined before adding the chocolate chips / raisins / nuts. Roll the cookie dough out into balls, about 1-2 tablespoons worth and place on a cookie sheet. Bake in a 180C | 375 F oven for about 10 minutes or until the edges start to brown. Cool for a few minutes before transferring to a wire rack. In a larger mixing bowl sieve together the flour, cocoa powder, baking soda, baking powder, and salt. Add half of the wet ingredients as well as half of the buttermilk to the dry ingredients and fold together until combined. Add the remaining wet ingredients and buttermilk to the batter and fold together until you no longer see any dry flour. Line a cupcake tin with 12 liners and fill each ⅔ of the way full with the cupcake batter. Bake in a 180 C | 350 F oven for 15-20 minutes or until the cupcakes spring back when lightly pressed in the center. Leave to cool completely on a wire rack before decorating. In the bowl of a stand mixer or in a large bowl if you are using a hand mixer add the room temperature butter. Beat on high speed for about 5 minutes until the butter is soft and almost doubled in volume. Add the sugar in thirds, beating in between until completely incorporated. With the last third of the sugar add in the cocoa powder. The buttercream will be very thick at this point, turn the mixer to low speed and stream in half a cup of milk. Scrape down the sides of the bowl and add more milk if you would like a thinner consistency. Add in the vanilla essence and beat for a further 2 minutes. Pipe onto your cooled cupcakes and sprinkle with chocolate hail to decorate. BUTTERMILK SUBSTITUTE Ingredients 1 Cup Milk 1 tsp Lemon Juice or Vinegar Instructions Mix the lemon juice or vinegar with the milk and set aside for 5 minutes. Crack in the 4 eggs, add in the vanilla, sugar and oil and mix well until everything is combined. In a clean bowl sieve together the flour, baking soda, cinnamon, and salt. Pour the wet ingredients into the dry and fold together with a wooden spoon until you can no longer see any dry flour. Pour the cake batter into one 8 inch or two 7 inch lined and greased cake tins. Bake in a 170C | 340F oven for 30-40 minutes or until a skewer comes out clean. Leave to cool completely before decorating. Beat room temperature butter in a stand mixer or with a hand mixer for 5 minutes until pale and light and doubled in volume. Add the cream cheese to the butter and beat for a minute until well combined. Sieve the icing sugar or powdered sugar to remove any lumps and add it to the butter and cream cheese in thirds, beating well in between each addition. Use a spatula to scrape down the sides of the bowl and beat for a further minute until the frosting is fluffy. If you have made two cakes spread a cup of cream cheese frosting over one cake before topping with the next cake. Cover the cake with the cream cheese frosting using an offset spatula. Cut into strips and place into a bowl. Pour in the oil and add the spices along with a pinch of salt and pepper and the juice of a lime. Toss the chicken in the marinade until it is evenly coated and set to the side to marinade. Cut the avocado in half and remove the pip, place into a food processor or blender along with the cilantro, yoghurt or sour cream, juice of a lime and salt and pepper. Process until everything is evenly combined and pour into a serving bowl. Heat a griddle pan or BBQ over medium high heat and add the chicken. Cook for about 4-5 minutes each side or until cooked through. Shred the green and purple cabbage and prepare the tortillas according to packet directions. To assemble the tacos fill with the cabbage and a few pieces of chicken, drizzle over the avocado cilantro dressing and garnish with a few pieces of coriander. Add a squeeze of lime and serve. Notes If you have time leave the chicken to marinade in the spices. Pour the lemon juice to a pitcher with 1 cup of the simple syrup Add a few handfuls of ice and fill with 4 cups of water. Taste the lemonade and adjust with water or simple syrup to taste. Place a heavy bottomed pan like a cast iron skillet onto medium heat with a splash of olive oil. Cook the bacon over medium heat until browned and crispy. Using a fork mix together the egg, egg yolk, parmesan cheese and black pepper until well combined. Cook the pasta in boiling water until al dente. Before draining the pasta reserve a cup of the cooking water. Turn the heat off the bacon and add the pasta along with half of the cooking water. Toss together and pour in the sauce. Toss well until the sauce has thickened and coats the pasta. Lastly pour in a small amount of cream and add the chopped parsley. Dice the chili, garlic, and coriander or cilantro finely and place into the bowl. Add the oil, honey, and salt and stir until everything is evenly combined. Rinse and pat dry the chicken thighs and add to the bowl with the marinade ingredients. Toss the chicken in the marinade until well coated and cover with plastic wrap. Leave the chicken to marinade in the fridge for at least 2 hours but preferably over night. When you are ready to cook the chicken remove it from the fridge and allow it to come up to room temperature. Heat a griddle pan over medium high heat and add the chicken thighs, cooking for about 4 minutes on each side until golden brown and cooked through. Alternatively you can cook these on the bbq outside or in the oven under the grill. To wrap the dumplings wet the outside of the wrapper. Add 1 tablespoon of filling to the wrapper and fold over and pinch the top centre together. Fold one side of the dumpling over and press into the other side and repeat until the whole dumpling has been folded. To cook the dumplings heat a medium sized fry pan over medium heat and add the oil. Add the dumplings, leaving a space in between so they don't stick together. Chocolate Salted Caramel Tart Recipe

Today I'm sharing with you how to make a chocolate salted caramel tart. This is an incredibly decadent dessert. A biscuit base filled with smooth buttery caramel, topped with chocolate ganache and a sprinkle of flaky sea salt. Salted caramel is one of my favourite flavours. With this dessert you can customize how salty you would like the caramel with putting more or less sea salt on top. Mix together until everything is well combined. Separate two eggs, placing both egg yolks into the mixing bowl. Mix together again. Sieve in the dry ingredients, the flour and cocoa and mix everything together. It should be crumbly in texture but when pressed should clump together. Pour into a tart pan press with a spoon until the base and sides are evenly coated. Prick all over with a fork and place into a 180C or 350F oven for 15 minutes. Cool on a wire rack. Place the sugar, glucose syrup, and water into a medium sized pot. Heat over medium hight heat for 10-20 minutes until the sugar has turned a light amber colour. Don't stir the sugar as this creates sugar crystals up the sides of the pot. Place in the butter, heavy cream, and vanilla extract. The caramel will bubble up but just wait for it to calm down and stir. Continue cooking for 10-15 minutes until the caramel has darkened in colour and become thicker. Cool for a few minutes until the bubbles dissipate and pour into the cooled tart base. Transfer to the fridge and leave to set for at least 2 hours. When the caramel is set heat the cream over medium heat until it starts to simmer, do not let it boil. Pour over the chopped chocolate and leave to melt for a few minutes. Stir together until the ganache is completely smooth and pour over the caramel. Leave to set for an hour and sprinkle over the flaky sea salt. Cut into slices and enjoy! Place the bowl over a pot of simmering water. Leave for about 5 minutes to melt, stirring occasionally. Measure out the flour, salt and cocoa powder in a small bowl and set to the side. Once the chocolate and butter has melted pour in the sugar. Stir to combine and leave to cool. In a large mixing bowl crack in the 5 eggs and beat with a whisk for a few minutes until frothy. Pour the chocolate mixture into the eggs and stir to combine. Switch to a spatula and sprinkle the dry ingredients over the chocolate and egg mixture. Fold together until smooth and glossy. Pour the brownie batter into a square tin a bake in a 180C | 350F oven for 30-40 minutes. The brownies are finished baking when a toothpick comes out with moist crumbs. Leave to cool completely in the tin before slicing into squares. Notes The brownies will stay fresh in an airtight container for up to 3 days. These brownies freeze well. Cut the onion and bacon into small pieces. Heat a frypan over medium heat and add the oil. Cook the onion and bacon for 8-10 minutes until the bacon is crispy and the onion has caramelised. Squeeze the excess water out of the spinach and set to the side. In a medium sized bowl crack in the eggs and pour in the milk or cream. Season with salt and pepper and use a fork to combine the ingredients together. Add the onion and bacon to the quiche crust along with the spinach and cheese. Pour over the custard and place into a 180C | 350F oven for about 50 minutes or until the centre only slightly jiggles when moved. Cool the quiche for 10-15 minutes before serving. Add the eggs one at a time, beating in between each addition as well as the vanilla essence. Mash the bananas until smooth in a small bowl and add to the sugar mixture. Mix together until well combined. Stir together the milk and lemon juice and set to the side. Sieve in the dry ingredients. Pour in the milk mixture and fold together the cake batter. Pour into a greased cake tin and bake in a 180C | 350F oven for 50-60 minutes or until cooked through. Cool the cake in the tin for 5-10 minutes before transferring to a wire rack. To make the buttercream place the butter into the bowl of a stand mixer or a mixing bowl if you are using a hand mixer. Beat the butter for 4-5 minutes until light and fluffy. Add the brown sugar, cinnamon, and vanilla essence to the butter and beat to combine. Slowly add the icing sugar, scraping down the bowl a few times, until well combined. Spread the buttercream onto the cooled cake. Notes Make sure to use old bananas that are spotty. These are overripe, which means they are sweeter and stronger in flavour. To make a layer cake double the cake recipe and bake in two cake tins. Use a whisk or wooden spoon to mix the ingredients together until evenly combined. Measure out the butter and melt in the microwave or on the stove top. Leave to cool for 5 minutes. Add the milk and eggs to the bowl with the melted butter and whisk with a fork until evenly combined. Pour the wet ingredients into the dry and fold together until just combined. Divide the cupcake batter between 12 cupcake liners and place into a 180C | 350F oven for 20 minutes or until the tops spring back when pressed. Cool on a wire rack. To make the buttercream beat the butter in a stand mixer or with a hand mixer for 5 minutes until it is pale in colour and doubled in volume. Add the icing sugar in thirds, scraping down the bowl each time so everything is evenly combined. Add ⅓ of a cup of salted caramel sauce to the buttercream and beat until for another minute or so until combined. If the buttercream is too thick add a few tablespoons of milk. Cut a small hole in each cupcake and fill with the remaining caramel sauce. Pipe a generous amount of salted caramel buttercream. Pour the crushed candy canes into a bowl that will fit the rim of your mug. In another bowl mix together the syrup with a small amount of water to thin it out. Place a mug into the syrup, making sure it's well coated, lift and place into the bowl with the crushed candy canes. They should stick easily just make sure the rim is evenly coated. Set aside to dry while you repeat with the remaining mugs. Pour the milk and peppermint essence into a small saucepan and heat over medium heat until simmering, do not let it boil. While waiting for the milk to heat up cut up the white chocolate into smaller pieces so it will melt easier. Place the white chocolate into the saucepan with the hot milk and stir for a few minutes until all of the white chocolate has melted. Remove from the heat and leave to cool for a few minutes so it isn't extremely hot. Pour the peppermint white hot chocolate into the mugs and garnish with whipped cream. Serve immediately.
