Learn how to make Dal Panchmel an authentic dal recipe with The Bombay Chef Varun Inamdar. A combination of five gems – tur dal, chana dal, moong dal, masoor dal and urad dal makes an delicious and tradional Dal Panchmel. So with Chef Varun Inamdar learn to make Dal Panchmel at home only on Rajshri Food. Ingredients 50 gms tur dal 25 gms chana dal 50 gms moong dal 50 gms masoor dal 25 gms urad dal peeled 2 tbsp Ghee 1 tsp Oil 1 tbsp jeera 1 tbsp chilli pwd 1/2 tbsp haldi 1 tbsp coriander pwd 1 tbsp garam masala pwd 1 medium tomato 2-3 green chillies chopped 1/4 tsp hing Water Salt as required Finely chopped coriander for garnish Method: - In bowl add together urad dal , tur dal, moong dal, masoor dal and chana dal and add water and wash it properly. Wash it 3 times and strain the water and then soak it for 1 hour in hot water - Add the dals into pressure cooker, some water and salt, cook It for 4-5 whistles. - Churn the dal add more water and mix properly - In a pan add ghee and little bit of oil. Add hing, cumin seeds, garam masala and the dal - Add turmeric powder, chilli powder, coriander powder and salt to taste, add water to adjust the consistency - Add chopped green chillies, tomatoes and coriander leaves. - Dal Panchmel is ready to be served! Ingredients:- Vegetable diced and ready: 1/2 cup red carrots 1/2 cup potatoes diced 1/4 cup green peas 1/4 cup baby corns 1/2 cup cauliflower 1/2 cup button mushrooms 1/2 onion diced Masala 2 tbsp vegetable oil 2 tbsp butter 1 tsp cumin seeds 2 nos bay leaves 1/2 onion thinly sliced 1 cup tomato  1 tbsp ginger-garlic-green chilly crushed 1 cup tomato puree 1 tbsp chilly powder 1 tsp turmeric powder 1/2 tbsp garam masala 1 tbsp Kasuri Methi 1 cup water Salt as required Final topping 1 tbsp cooking cream 1 tbsp thick yoghurt 2 tbsp coriander leaves 2 tbsp mint leaves Garnish Coriander leaves and lemon wedge Method:- In a pan heat oil and add bay leaves, cumin seeds, sliced onions, salt and cook till the onions are golden brown. Add crushed ginger, garlic and green chillies and cook until the raw flavour goes away. Once done, add tomato puree, mix well and cook till it dries off completely. Now add turmeric powder, red chilli powder, mixed garam masala, coriander powder and mix it well. Then add butter and some oil. Now add the onions, baby corns, mushrooms, potatoes, carrots, cauliflower, green peas and give it a toss followed by water and salt. Cover with a lid and let it cook on low flame for 10-15 minutes. Mix some fresh yoghurt, salt, cooking cream and mix it well. Add this mixture to the gravy and stir well. Cook on low flame and sprinkle dry fenugreek leaves and coriander leaves on top. It is nothing but minced vegetables cooked with onions, tomatoes and ginger garlic paste. Check out Chef Ruchi Bharani's take on this popular kheema recipe. Ingredients: 3 medium onions, finely chopped 1/2 capsicum finely chopped 1 carrot steamed and finely chopped 100g French beans steamed and finely chopped 1/2 cup frozen peas 1 green chilli finely chopped 1 tomato finely chopped 1 1/2 cup tomato puree 3 tbsp cheese 100g grated paneer 1 tsp garam masala 1/2 tsp red chilli powder 1 tbsp ghee 1 tbsp ginger and garlic paste coriander leaves salt to taste 1/2 tsp coriander and cumin seed powder Method: - In a pan, heat ghee. Add the onions and saute them well until they are brown in colour. - Add the ginger and garlic paste. - Add the finely chopped capsicum, frozen green peas and chopped green chillies, - Add the tomato puree and let it cook for at least 2 minutes. - Add the finely chopped tomatoes and let them cook until they are absolutely mushy. - Add the red chilli powder, coriander and cumin seed powder, garam masala and salt to taste. - Add little water and saute the ingredients well. - Add the chopped, steamed vegetables - French beans and carrots. - Add the grated paneer (cottage cheese) and then grate some cheese over it. Mix all the ingredients well. - Sprinkle some coriander leaves over the kheema masala and add little water. Mix well. - The kheema masala is ready to be served. Garnish it with some grated cheese and coriander leaves. Also squeeze some lime over it. Ingredients:- 2 bunches of Spinach (washed and blanched) 300 gms Paneer ¼ cup tomato chopped 1 tsp. Turmeric 3 red chillies dried whole Salt as required 3 tbsp. Garlic chopped 1 tsp. Cumin seeds 5 tbsp. Ghee ½ cup red onions chopped Method:- - Drain and grind Spinach leaves to a fine puree. - Heat ghee in a pan and add cumin seeds, dried red chillies, garlic and saute until golden brown. - Add the onions, salt and saute until light golden brown in colour. - Then add turmeric powder, tomatoes, garam masala and stir fry on high flame for 2-3 minutes. - Now add the Spinach puree and water. - Boil on high flame for 3-4 minutes. - Add paneer to the gravy and stir well. Try Veg Patiala, a creamy gravy with mixed veggies layered with fried papad, a unique taste and a delicious accompaniment with your parathas and rotis! Ingredients: For Papad Rolls 50 grams Grated Paneer 1 tbsp Oil 1 cup Grated Vegetables ( Cauliflower, Carrot, Cabbage) 1/3 cup Chopped French Beans 2 tbsp Chopped Coriander Leaves 1 tsp Jeera 1/2 tsp Turmeric Powder 1 tsp Red Chilly Powder 2 tbsp Chopped Mix Dry Fruits 1 tsp Garam Masala Salt as Required 3 nos Papads Water for Soaking Papad Oil to Shallow Fry For The Gravy 2 tbsp Ghee 1 tsp Jeera 1 tsp Fennel Seeds 1 tbsp Ginger-Garlic Paste 1/2 cup Onion Paste 1 tsp Garam Masala 1/2 tsp Turmeric 1 tsp Red Chilly Powder 1 cup Fresh Tomatoes Puree Salt to Taste 2 tbsp Fresh Cream 1 tbsp Butter Garnish 50 gms Grated Paneer Fresh coriander Leaves Method: Veg Papad Rolls - Heat oil in a pan, add cumin seeds, raisins, and dry fruits. Also add the grated vegetables. Give it a toss. - Add french beans to the mixture and mix them well. - Add red chilli powder, turmeric powder, garam masala powder and salt. Mix it well. - On a low flame, cover the lid and cook it for 3 to 4 minutes. - Add coriander leaves and give it a mix. - Cut papad in to half and apply water to make it moist. - Place the stuffing in the center and seal the papad with the help of water. - You can also make the traditional cylinder style of papad rolls. - Heat oil in a pan on moderate flame and place the papad rolls. - Fry papad on all sides. - Stuffed papad rolls are ready. For the Gravy - Heat ghee in a pan. Add cumin seeds and fennel seeds. - Add ginger garlic paste, onion paste and cook well. - Once cooked, add red chilli powder, turmeric powder, garam masala powder and mix well. - Add tomato puree and mix evenly. Allow them to cook. - Cover it and cook it for 10 to 15 minutes. - Once cooked, add water along with salt and allow it to cook for 4 to 5 minutes. - Place the papad rolls in the gravy and coat them well. - Add butter and cream to the gravy and mix properly. - Garnish it with coriander leaves and panner and serve hot! This mildly spicy yet tangy Paneer Recipe is pretty close to Kadhai Paneer, yet different. If you are a fan of Paneer Recipes, you need to try this one out, the freshly roasted spice blend of Coriander-Cumin-Chili-Fenugreek-Tamarind along with the ghee brings out an amazing flavor to this one which separated this out from the crowd.. Skip the Butter Paneer for a day, and try out this Masala Paneer :) Detailed Recipe : Ingredients : Ghee – 2 1/2 tbsp Coriander Seeds – 3 tbsp Cumin Seeds – 1 1/2 tbsp Fenugreek Seeds – ½ tsp Red Chili Powder / Whole – 2 tbsp / 6-7 Tamarind – 1 lemon sized ball Garlic – 5-6 cloves Dahi – ¼ cup Paneer – 200g GG Paste – ½ tsp Salt – ½ tsp Turmeric – ¼ tsp Coconut Milk Powder – 2 tbsp. Method : • In a pan, add ½ tbsp. ghee, next goes in the coriander seeds, cumin seeds, fenugreek seeds. Roast for a minute, and then add in the red chili powder, tamarind, garlic and roast well for 2-3 minutes in low flame. • After the spices have cooled down, add water and make a smooth paste. • Make ridges/cuts in paneer cubes, and keep aside. In a mixing bowl, add in ginger-garlic paste, salt, turmeric and yogurt. Mix well, add in the paneer and keep aside. • In a pan, pour in rest of the ghee, once hot, place in the just the paneer one by one and cook for 2 minutes in each side and take them out. • In the remaining ghee, add the spice paste, and cook until it starts leaving the sides. • Add in the coconut milk powder, remaining yogurt and mix well. • Roasted paneer goes in next, along with water to adjust the consistency. Ingredients:- Cooked Rice (as per requirement) 1 tbsp ghee or clarified butter 1 tsp cumin seeds 2 pieces of cardamom 2 pieces of cloves Few pieces of cinnamon sticks 1 small piece of star anise 1 large onion, chopped finely 1 capsicum, chopped finely Half a cup of french beans 1 carrot, chopped into half inch pieces 1/2 a cup of green peas Coriander paste (1 cup coriander leaves, half a cup mint leaves, half an onion, 2 cloves of garlic, 3 green chillies & one inch piece of ginger ground to paste with juice of half a lime added) 1/2 tsp coriander powder 1/2 tsp cumin seed powder Coriander leaves to garnish Salt to taste Water Oil Method:- Heat oil and ghee in a pan and add cumin seeds, cardamom cloves, cinnamon sticks and star anise. Cook till cumin seeds turn slightly brown and onions and saute them for a minute. Then add capsicum, french beans, carrot and green peas to the it and let it cook. Add 2-3 tbsp. water and salt and cover the pan with a lid and let the vegetables cook for 2-3 minutes. Once done, add the coriander paste to the cooked vegetables and cook it for 2 minutes. Then add coriander powder, cumin powder and the rice. Mix it nicely and add salt to taste, coriander leaves, 1 tbsp water and toss it lightly with 2 spoons. Cover with a lid and let it simmer for a minute. Delicious Coriander Rice is ready to be served! Requirements Knife Carrots Capsicum/Bell Pepper Beetroot Ginger Method Carrots - Peel the washed carrot. - Take off the top and bottom of the carrot. - Cut carrot into approximately 5 cms long and slice the base of carrot. - Hold the carrot very firmly and slice off the carrot. - Stack the carrot slices, run the knife and cut it into thin slices. Ginger - Peel off the ginger. - Slice the base, rest the ginger on the board and start slicing. - Stack the ginger slices, change the angle and continue cutting into thin slices. Capsicum/Bell Pepper - Rest it on a back with firm grip and slice through the center. - Cut the capsicum into 4 quarters. - Take of the membrane of capsicum. - Turn the side of capsicum and continue slicing from the sides. Beetroot - Start peeling the beetroot. - Slice off the top and the bottom of the beetroot. - Slice little on the side and rest it on the cutting board. - Slice beetroot very thinly. - Stack up the sliced beetroot and start slicing again. Ingredients 200g paneer, cubed 2 green chillies,roughly chopped Onion paste (1 onion, 5 garlic cloves, 1 inch piece of ginger ground to paste) 1 tsp coriander-cumin seed powder 1/4 tsp turmeric powder 1/2 tsp Kashmiri red chilli powder 1 tsp kasuri methi 3 raw tomatoes, pureed 1 tbsp fresh cream 2 tbsp oil Water Method In a pan heat 2 tbsp oil, add 2 green chillies, onion paste and cook until the paste turns brown. Add 1 tsp coriander and cumin seed powder, 1/4 tsp turmeric powder, 1 tsp garam masala, 1/2 tsp red chilli powder, 1 tsp kasoori methi, coriander leaves, tomato puree and cook it on slow flame until it is dried nicely. Add 1 tbsp of cream and mix it well. Add 1 cup paneer, some water, salt as required, give it a mix and allow it to cook for 2 mins. Garnish it with some coriander leaves and 1 cube of butter Spicy and delicious Dhaba Style Paneer is ready to be served! Lemon juice For Tempering:- 2 tbsp. Oil 1 tsp. Mustard seeds 10 curry leaves 2 Red chillies ¼ tsp. Asafoetida 1 tsp. Split Black Lentils (Urad Dal) Method:- Medu Vada:- - Drain the water from Urad Dal and grind to a fine paste with a tablespoon of water and transfer to a bowl. - To this paste, add fresh coconut, asafoetida, ginger, black peppercorns, curry leaves and salt to taste and mix well. Add a tablespoon of hot oil to this paste. - In a kadhai heat oil, and fry the Vadas until golden brown. Coconut Chutney:- - In a grinder add coconut, cumin seeds, green chillies, sugar, lemon juice, curry leaves, salt and water and grind to a coarse paste. Tempering:- - In a tempering vessel heat oil and add urad dal, mustard seeds, dry red chillies,asafoetida and curry leaves. - Pour this tempering on the chutney and mix well. Ghee 2 tbsp. Lemon juice 1 thumb sized ginger, julienned 2 tbsp. Mint leaves ½ cup Browned onions 1 tbsp. Ginger-garlic paste Salt, as required For Nihari Spice Mix:- 4 dried red chillies 1 tbsp. Coriander seeds ¼ tsp. Turmeric powder 1 tbsp. Whole wheat flour ¼ cup Split Bengal gram (Chana Dal) 1 tbsp. Fennel seeds 1 tsp. Cumin seeds 1 tsp. Poppy seeds 1 tsp. Cumin seeds 6 Cloves 10 Peppercorns 2 blades of Mace 1 Star Anise 2 Black Cardamom 4 Green Cardamom 1 tsp. Kalonji (Onion seeds) 1 tsp. Shahi jeera 1-inch Cinnamon 2 Bay leaves 1 tbsp. Ginger powder ½ tsp. Nutmeg Method:- - Roast split Bengal gram in a pan by adding some salt. - Add red chillies and bay leaves. Roast again. - Lower the flame and add whole wheat flour, onion seeds, black cardamoms, green cardamoms, coriander seeds, poppy seeds, cumin seeds, dry ginger powder, fennel seeds, cinnamon, star anise and roast well for 2-3 minutes. - Turn the flame off and add shahi jeera, black pepper, cloves, mace and nutmeg. Toss for 60-90 seconds. - Cool this down to room temperature and then grind to a fine powder. - In a kadhai add ghee, onion, salt and cook until the onion turns golden brown. - Now add ginger and garlic. Mix well and then add turmeric powder, Nihari Spice Mix and roast for 30-40 seconds. - Add water and cook on high flame for 3-4 minutes. - Then add soya chunks and cook on low flame for 15-20 minutes. - Add salt, lemon juice, mint leaves and turn the flame off. Ingredients:- 400 grams Bhindi (ends trimmed cut into 1-inch pieces) 3 no medium onions sliced 1 tsp cumin seeds 1 tbsp ginger garlic and green chilly crushed 2 no chopped tomatoes 1 tbsp red chilly powder 1 tsp turmeric powder 1 tsp garam masala 1 tsp amchur powder 1 tsp roasted gram flour 1 tbsp tamarind pulp 4 tbsp curd Fresh coriander 1 bay leaf ½ onion diced ½ tomato diced 3 tbsp oil divided Salt as required Water as required 1 tbsp cream 1 tbsp Kasuri methi 1 tbsp coriander freshly crushed Method:- In a pan heat some oil and shallow fry Okra in it. Heat oil in another pan and add onions and cumin seeds. Once the onions turn golden brown, add crushed ginger-garlic-green chilli, tomatoes and cook well. Lower the flame and add red chilli powder, turmeric powder, garam masla powder, amchur powder, salt and mix it well. Add some water and let it all cook for 7-8 minutes. Turn the flame off and let the masala cool down to room temperature. Once the masala has cooled down grind it to a fine paste in a mixer/grinder by adding gram flour, coriander leaves, tamarind pulp and yoghurt. Heat oil in the same pan again and add bay leaves, onions, tomatoes, salt, the gravy paste, water and mix it well. Simmer on low flame for 5-6 minutes. Now add cooked Okra, fresh cream, Kasur Methi and give it a final mix. Let it simmer for 30-40 seconds and Bhindi Masala is ready to serve. Garnish with coriander seeds and fresh cream and serve hot! Watch and learn how to make delicious Red Velvet Cake with Cream Cheese Frosting at home with Chef Upasana only on Rajshri Food! Happy Valentine's Day! Red velvet cake is the perfect dessert recipe for your loved ones. This red velvet cake with cream cheese frosting has a thick layer of cheesecake sandwiched between two moist layers of red velvet cake. The whole cake is then frosted with rich cream cheese frosting. Add some love to your Valentine's Day menu with this recipe. Ingredients 195 gms maida 30 gms cornflour 2 teaspoons cocoa 80ml curd 170ml water 60 ml of oil 60 gms butter 220 gms sugar 1 teaspoon soda 1 teaspoon vinegar 1 tbsp red colour 1 teaspoon vanilla Frosting- 100 gms butter ( around half cup) 1 cup/ 1 packet/ 226 gms cream cheese. 450-500 gms icing sugar 1/2 teaspoon lemon juice Method In a bowl sieve 195 gms maida, 30 gms cornflour, 2 teaspoons cocoa and remove the lumps In another bowl add 60 gms butter, 220 gms sugar and cream these together. Add 60 ml of oil and mix it well. In a container add 80 ml curd, 170 ml water, 1 tbsp red colour, 1 teaspoon vanilla and stir it nicely. Mix the dry ingredients and the buttermilk mixture to the sugar and butter mixture. Add 1 teaspoon soda and 1 teaspoon vinegar into the cake batter and mix. Pour the batter into two 6 inch round baking tins and bake them for around 25-30 mins in a preheated oven at 180 degrees. For sugar syrup In a vessel add 2 tbsp of sugar, 1/4 cup of water and boil till the sugar dissolves completely. For cream cheese frosting In a bowl add 100 gms of butter, 1 cup of cream cheese, 480 gms of icing sugar, 1/2 teaspoon lemon juice mix it well and refrigerate for around 2 hours. Brush the cakes with sugar syrup. Put 2 spoons of the frosting and spread it on the cake and place the other cake on the top, again put 2 spoons of the frosting and make a crumb coat on the cake. Refrigerate the cake for around 15 mins. Apply the second layer of the frosting and chill the cake again in the fridge for 10 mins. Apply some more frosting and smoothen the cake from all sides. Garnish the cake with white chocolate shavings, cream cheese frosting and strawberries. Red Velvet Cake with Cream Cheese Frosting is ready! Recipe for Homemade Chat Masala - https://www.youtube.com/watch?v=94MQubax_QA Ingredients: 200 gms Potato boiled and grated 100 gms French Beans finely chopped 100 gms Cabbage shredded 2 Carrots grated 50 gms beetroot grated 50 gms paneer grated 100 gms Green Peas blanched 3 tbsp vegetable oil 4 tbsp gram flour 1 tbsp corriander cumin powder 1 tbsp chaat masala 1/2 tsp garam masala 2 tbsp ginger garlic paste 3-4 green chillies chopped 1 tbsp raisins chopped 2 tbsp chopped cashew nuts Salt as required Refined flour for dusting Method: - Take oil in a pan, add gram flour along with shredded cabbage, shredded carrots and chopped beans. - Add boiled green peas and cook the vegetables well. - Once the vegetables are cooked, remove it in a bowl and allow it to cool down. - Add chopped cashew nuts, chopped raisins, chopped green chillies in the vegetable mixture. - Add grated potatoes and grated paneer to the vegetable mixture. - Also grate beetroot in the mixture. - Add coriander and cumin powder, garam masala, ginger garlic paste, salt and chat masala. - Mix them well and bring the mixture together. - Roll them in the form of the cylinder and allow it to rest in fridge for 15 to 20 minutes. - Heat oil in a pan on moderate flame. - Dust flour over them and roll it. - Fry them in the frying pan from all sides. - As the kebabs are ready, garnish it with onions, red radish, lemons, green chillies, coriander and mint leaves. Ingredients: Paneer 200 gms cut in cubes 2 Tbsp butter 1 Tbsp oil 2 Onions cut in cubes 4 tomatoes cut in cubes A bay leaf Cinnamon- small piece Cloves 4-5 Cardamom 2-3 Cumin seeds- 1 tsp Garlic pods 8-10 Ginger- small piece Cashewnuts 15-20 Dry fenugreek leaves- 1 tsp Salt as required Red chilly powder- 1 tsp Garam masala powder- 1 tsp Coriander powder- 2 tsp Turmeric powder- 1/4 tsp Honey/sugar- 1 tsp Fresh cream 4 tbsp some fresh coriander Method: - In a wok, add butter, cumin seeds, cloves, cardamom and cinnamon sticks and stir fry it for few minutes. - Add garlic and ginger and fry for a minute. - Add the onions and cook until they are cooked and tender. - Add the tomatoes and cook for about 2 - 4 minutes. - Add the cashew nuts, salt to taste and water and cover the wok with a lid on a medium high flame for about 10 - 12 minutes. - Once cooked, let it cool down slightly and then add this to a mixture along with little water and blend for about 30 - 40 seconds. - Strain this mixture into another bowl to avoid lumps. - In a wok, add the butter and oil. - Add a bay leaf followed by red chilli powder and stir well. Then quickly add the strained mixture to it and cook for about 4 - 5 minutes. - Add salt, turmeric powder, coriander powder, garam masala and mix well. - Using hands, crush the fenugreek leaves and add to the gravy. - Add honey and then stir in the fresh cream. - Add the paneer cubes and let them cook well until they are coated completely with the gravy. Mustard seeds A sprig of curry leaves 1 cup boiled, peeled and mashed potatoes ¼ cup boiled green peas ¼ tsp. turmeric powder 1 tbsp. finely chopped coriander salt as required Other Ingredients:- 8 bread slices 4 tbsp. Butter 3 tbsp. Coriander chutney 2 tbsp. Chaat masala 12 slices of Onions 12 slices of Tomatoes 12 slices of Beetroot 12 rings of Capsicum 4 slices of Cheese For the Topping: - 4 tbsp. Nylon sev For Coriander chutney: - 1 cup Coriander leaves 2 Garlic Cloves 2-3 Green Chillies 1 tbsp. Lemon juice ½ tsp. Cumin seeds ¼ tsp. Salt Method:- - In a pan heat oil and crackle mustard seeds in it. - Add cumin seeds, curry leaves, turmeric powder, potatoes, salt and give it a few tosses. - Add coriander leaves, boiled green peas and turn the flame off. - Apply butter and coriander chutney to the bread slices. - Then place the potato sabzi, tomatoes, chaat masala, onion slices, capsicum, beetroot, cheese slice and then the other slice of the bread on top. - Toast this sandwich in the stove toaster. - Once toasted apply butter, green chutney, tomato ketchup, nylon sev and serve. Today we're going to show you how to make Homemade Fruit Jam. Do try it at home and let us know in the comments below. Ingredients: 1 kg Alphonso - Mango Pulp 100 grams - Chopped Apple 400 grams - Sugar Juice of 1 lemon 200 grams - Mango Dices Method of preparation: In a non- stick pan add apple paste, mango pulp, sugar and mix it well. Cook the pulp continuously on medium flame and keep stirring it. Add lemon juice and diced mangoes Keep stirring it well and increase the flame. After stirring it for 1/2 an hour, check the consistency. Once you feel you've got the proper consistency, switch off the flame and keep scrapping for 2 minutes and allow it to cool completely at room temperature. Once the temperature of the jam cools down, start filling it in a jar. Make sure you do not cap the bottle before the jam cools down. Learn How To Make Mumbai Vada Pav Recipe with The Bombay Chef - Varun Inamdar only on Rajshri Food. Make this quick and easy street food recipe at your home and let us know how it turned out in the comments section below. Ingredients:- For the potato mix:- 400 gms potatoes 1 tbsp ginger garlic green chilly crushed 1 tsp mustard seeds  a pinch of asafoetida 1/4 tsp turmeric powder 10 nos curry leaves 2 tbsp coriander leaves 1 tbsp lemon juice (optional) salt as required For the batter:- 1.5 cups gram flour  ½ cup water or as required salt as required For red chutney:- 3 tbsp red chilli powder 3 -4  garlic cloves Salt as required Fritters from the remaining batter Method:- The Potato Mix Heat oil in a pan and add mustard seeds in it. Once the mustard seeds crackle add asafoetida, curry leaves, crushed ginger-garlic-green chillies mix and cook it for 30-60 seconds. Then add turmeric powder and turn the flame off. Add the finely chopped coriander, hand mashed boiled potatoes, lemon juice and mix it evenly followed by salt as per taste. Once the potato mix is cooled down to room temperature, make lemon-sized balls of the mix. The Batter:- In a bowl, take the sieved gram flour, salt, water and make a batter using fingers making sure no lumps remain in it. The Frying:- Dip the potato mix balls in the batter and fry them in oil on a moderate flame. Once golden brown, take them out of the oil and place them on a paper towel to drain the excess oil. Fry the remaining batter into fritters and let them cool down to room temperature. The Red Chutney:- In a grinder, take red chilli powder, garlic, salt, fritters and grind to a coarse powder. Delicious Vada-Pav with red chutney is ready to serve! This dish also lends itself well to an elaborate celebratory meal, perfect for any occasion that needs a good North Indian accompaniment. Check out Anushruti's take on this popular dish. Ingredients: Note- 1 cup =250 ml 500 gm paneer cut into fingers 5 to 6 tomatoes, chopped 2 green capsicum or bell pepper, cut into julienne 2 tbsp freshly grated ginger 2 to 3 green chilies, slit 3 tbsp ghee 1 tsp yellow asafoetida powder 2 tbsp coriander powder ½ tsp to ¾ tsp red chili powder 2 tbsp crushed kasuri methi 1 ½ tsp salt ginger julienne and slit green chilies for garnishing Method: - Begin by prepping the paneer and the vegetables. Cut the paneer into fingers and keep aside. Chop the tomatoes into small pieces. Cut the bell peppers or capsicum into julienne. Grate the ginger and slit the green chilies. - In a wok or kadhai or pan, heat the ghee and when it melts, add in the ginger and the slit green chilies. Stir for a few seconds and then add the asafoetida powder. - Next, put in the chopped tomatoes and cook for 3 to 4 minutes. Then stir in the coriander and red chili powders and cook until the tomatoes are pulpy, about 5 to 6 minutes more. - Stir in the bell peppers and cook covered for about 3 to 4 minutes. - Gently stir in the paneer, and coo for 2 to 3 minutes more. - Sprinkle the kasuri methi and the salt and mix well. - Garnish with ginger julienne and slit green chilies. - Serve hot and stir with rice or roti. Ingredients: Oil 1 tsp Garlic Paste 1/2 Red Capsicum (Cut Lengthwise) 1/2 Green Capsicum (Cut Lengthwise) 1/2 cup Carrots (Shredded) 1/2 cup Cabbage (Shredded) 2 & 1/2 tbsp Tomato Ketchup 1 & 1/2 tbsp Red Chilli Sauce 1 & 1/2 tsp Vinegar 1 & 1/2 tsp Soya Sauce 2 tbsp Corn (Boiled) 100 Gms Fried Noodles Method: - In a pan heat oil, add garlic paste to it and saute it - Add red capsicum, green capsicum, carrots, cabbage and mix well and stir fry them for about 1 - 2 mins - Meanwhile in a bowl add the tomato ketchup, red chilli sauce, vinegar, soya sauce and mix everything well. - Add 2 tbsp of boiled corn to the stir fried vegetables and add all the sauces. - Mix everything well and let it cook for a minute - Add fried noodles and toss everything well - Sprinkle some spring onions and salt to taste and the dish is ready to be served. Learn how to make Laccha Partha or Lacchedar Paratha with chef Varun Inamdar only on Rajshri Food. Laccha Paratha is also called as Paratwala Paratha. In Punjabi “Parat” means layer and layers can be seen on the Paratha when it gets cooked. There are different techniques to make these Parathas. Check out the 2 techniques of chef Varun Inamdar. Ingredients 1 cup whole wheat flour 1 cup refined flour Salt as required 1.5 Tsp powdered sugar 1 Tbsp Ghee Approx 100 ml water For layering 3 Tbsp Melted Ghee 3 Tbsp oil 2 Tbsp refined flour Oil/ Ghee for pan frying Method -Take 1 cup of refined flour in a bowl, add 1 cup of Whole Wheat flour, to this add powdered sugar, Salt to taste and add some Ghee. Mix it well. -Now add water and knead into a soft dough for 5 to 7 minutes and cover it with a damped cloth. Let it rest for around 10 to 12 minutes. -Divide the dough into 4 equal portions. -Smear little oil and roll a portion into a thin disc. -On top of it smear some oil and dust little refined flour. -Start folding it in a zig zag way and start coiling it inwards from one side. Place it in a plate and dab a little oil on top. Method 2 - Smear little oil and roll a portion into a thin disc. -On top of it smear some oil and dust little refined flour. -Take a sharp knife cut it into thin and long strips. -Take all strips together by pushing it away from you and coil it inwards as mentiond in the first method. -Dab some oil and keep it aside. -Prepare the remaing portions in the either way. -Dab a little oil and roll it in a thin disc. -Heat a pan and roast it and flip it over and add ghee or butter. -To increase the lacchas flatten it from all the sides. Laccha Parathas are ready to be served on the dinner Table! Paneer Chilli is a must have Indo-Chinese appetizer for all the vegetarians. It is evolved from the Chicken Chilli where the meat is replaced with soft Paneer (cottage cheese). Ingredients: 1 cup Thickly Sliced Assorted Capsicums 1 Large Red Onion (Petals) 1/2 tsp Chopped Ginger 2 tbsp Chopped Garlic 8 Sliced Green Chillies 350 gm Paneer 2 tbsp Light Soy Sauce Salt and pepper as required For Batter: 3 tbsp Refined Flour 1 tsp Rice Flour 3 tbsp Corn Flour 1 tbsp Dark Soy Sauce Salt & Black Pepper as required Oil for frying Garnish: Fresh coriander leaves Method: Dice the capsicums into rough traingles after removing the cap and the seeds. Cut the red onion in 6 pieces. Take the ginger and garlic and chop both into fine julians. Slice the green chillies in thick slices after removing the caps. Take the cottage cheese and cut it into cubes gently. Batter: Take refined flour, rice flour, corn flour, salt, dark soy sauce, black pepper powder and water at room temperature and mix these ingredients with whisk. Frying: Heat oil in a pan. Once the oil is hot take the Paneer cubes and dip them into the batter one by one and fry them in the oil till golden brown on all sides. Assembly: Add oil in a wok and heat it on a high flame. Once the oil is hot add the ginger, garlic and green chillies to it. Cook for 30-40 seconds. Add the capsicums and the onion and toss it in a wok. Keep the flame high all the time. Add the fried Paneer cubes after a few seconds and toss them on high flame. Add salt to taste, dark soy sauce, freshly ground black pepper and give it a quick toss. Add some fresh coriander leaves and give it a quick final toss. Voila! Paneer Chilli is ready to be served. Ingredients: - 2 Green Chillies - 1/2 Cup Coriander Leaves - 3 Cup Mint Leaves - Cumin Seed Powder - 1 Tsp. Black Salt - 1/2 Tsp. Pepper Powder - 1 Tsp. Pani Puri Masala - Salt - 2-3 Lemon Juice - Ice-Cold Water - 2 Chopped Boiled Potatoes - 1/2 Cup Soaked Moong - 1/2 Cup Soaked Boondi - Black Salt - Puffed Puri Method: - To make the tangy flavored water, chop 2 green chillies roughly and add 1/2 cup coriander leaves, 3 cups mint leaves, flavoring spices like 1/2 tsp. cumin seed powder, 1 tsp. black salt, 1/2 tsp. pepper powder, 1 tsp. pani puri masala, salt and lemon juice and grind it all into a smooth paste. - Remove the paste into a bowl and add 3 cups of ice-cold water to it. - Strain the water and keep it in the refrigerator to chill for atleast 2-3 hours. - Add 4-5 ice cubes to the tangy flavored water before serving. - To make the filling, take 2 chopped boiled potatoes and add 1/2 cup soaked moong or boil the moong for 5-6 minutes, 1/2 cup soaked boondi and season it it black salt and cumin seed powder and mix them well. - Take the puffed puri and make a hole in it in order to spoon the filling into it. - As per your liking add little date & tamarind chutney (http://www.youtube.com/watch?v=jBVJDMw5VpA) and the tangy water that we made into the puffed filled puri. - Pani Puri is ready to eat. The best thing about our visit is that Master Chef Pankaj reveals the recipe secrets for his version of a "Bombay Chowpatty Beach" style Pau Bhaji. We promise you that it is absolutely delicious. This is very much a privilaged peek into Tifin Box's restaurant kitchen, watching a highly experienced cook making a large quantity of yummy Indian food. The recipe shown in the video is to serve approximately 40 people (as this is a working commercial kitchen). INGREDIENTS REQUIRED (you can adjust the quantity according to taste & requirements) : * Vegetable Oil (Tel). * Sliced white onion (Dungri). * Tinned plum tomatoes chopped & pureed (Tamata). * Chopped fresh tomato (Tamata). * Finely chopped Garlic (Lasan). * Finely chopped Ginger (Adrak). * A garlic & chilli paste. * Tamarind water (Amli pani). * Pav Bhaji Masala - MDH brand is used here (but any good quality brand such as Mangal, Badshah etc will also do). * Salt (Namak). * Red chilli Powder (Lal Mirchu). * Black pepper powder (Kali Muri). * Tumeric powder (Haldi). * Coriander & cumin powder (Dhania & Jeera). * Garam masala. * Whole cumin seeds (Jeera). * Washed & freshly cut Green Coriander Leaves (Dhania). * The following vegetables were pre-boiled & then mashed: Cauliflower, Tindoora, Cabbage, Carrots, Aubergine, Green Peas & Potatoes. * Chopped red & green capsicum to add at the very end. * Water (Pani). * We suggest that you serve it with soft burger buns (buttered & toasted). * finely chopped or sliced red onion. * & if you like, a wedge of lemon.
