Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions. 2. Strain pasta and set aside. Toss with a small amount of oil to prevent sticking 3. In the same pot, heat the olive oil and fry sausages, working in batches as needed, until deeply browned on all sides. 4. Preheat oven to 325˚F (160˚C). 2. Grease and line three 8-inch cake tins with parchment paper. 3. In a large bowl, sift together the flour, cocoa powder, salt, baking soda, and baking powder. Set aside. 4. In a large glass measuring cup, combine the stout, vanilla, and espresso powder. Set aside. 5. In a large mixing bowl, cream together the butter and sugar until it is light and fluffy, about 5 minutes, scraping down the sides occasionally to ensure all the ingredients are being evenly creamed together. 6. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. 7. Add the mayonnaise and beat until the mixture is smooth and creamy. 8. Alternate adding the prepared dry and wet ingredients to the batter. Starting with about ⅓ of the dry ingredients, beat until incorporated. Then add ⅓ of the liquid ingredients, mixing until the batter comes together. Continue until all the wet and dry ingredients have been incorporated. 9. Using a rubber scraper, fold the dark chocolate chunks into the batter. 10. Distribute the batter evenly between the 3 prepared cake tins. 11. Bake for about 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. 12. Place the cakes on a cooling rack and leave to cool for about 10-15 minutes, until the outside of the pan is cool enough to touch. 13. Once the cakes have cooled, loosen the edges using a butter knife. Then place a large plate over the tin and invert to release the cake from the pan. Remove the parchment paper from the bottom of the cake and slide the cake back onto the cooling rack to cool completely. Repeat for the remaining two layers. 14. While your cakes are cooling, prepare the buttercream. 15. In a large bowl, beat together the butter and vanilla. 16. Gradually add in the cocoa powder, powdered sugar, and milk, continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy. 17. Blueberry Curd Tart Servings: 8 INGREDIENTS Tart Shell 1 cup walnuts 1 cup all-purpose flour ½ cup powdered sugar ½ teaspoon cinnamon ½ teaspoon salt 8 tablespoons (1 stick) unsalted butter, melted Blueberry Curd 1½ cups blueberries 1 tablespoon water 2 large eggs 2 large egg yolks ¾ cup granulated sugar ½ cup lemon juice 2 teaspoons cornstarch 3 tablespoons unsalted butter, cubed 3 tablespoons extra-virgin olive oil 8 kiwis, skins removed PREPARATION In the bowl of a food processor, add the walnuts, and pulse until coarsely ground. Add the flour, sugar, cinnamon, and salt, and pulse until finely ground. Add the butter and pulse until the mixture comes together and holds when compressed. Press the mixture into a 9-inch round tart pan. Prick the bottom of the crust with a fork. Freeze for 1 hour. Preheat the oven to 350˚F (180˚F). Bake for 20-25 minutes. Add the blueberries and water to a medium saucepan and bring to a boil over high heat. Reduce the heat to medium-low and simmer until most of the blueberries have burst, about 5 minutes. Strain the blueberry mixture through a fine-mesh sieve into a small bowl. Add the blueberry juice, eggs, egg yolks, sugar, lemon juice, and cornstarch to a medium saucepan over low heat, whisking constantly. Once the mixture is warmed through, add the butter, 1 tablespoon at a time, whisking until melted and incorporated. Continue whisking until the curd begins to thicken, 5-8 minutes. Strain the curd through a fine-mesh sieve into a bowl. Whisk in the olive oil. Pour the blueberry curd into the par baked tart shell, and bake for 15 minutes. Chill the tart in the refrigerator overnight. Slice the kiwis into desired shapes and arrange on top of the chilled tart. Slice and enjoy! Wrap the beet in tin foil and place on a baking sheet. Roast for 1 hour, until fork-tender. Wearing gloves, peel the beet skin. Add the beet to the bowl of a food processor and pulse until smooth. In a medium bowl, add 3 tablespoons of the beet puree to the butter and use a spatula to mix until evenly colored. Transfer the beet compound butter to plastic wrap, and refrigerate for at least 2 hours, or until very cold. Make the Beet-Colored Dough: in the bowl of a food processor, add the flour, sugar, and salt, and pulse 2-3 times. Add the cold, cubed beet compound butter and pulse 8-10 times until butter is pea-sized. Transfer the dough to a large mixing bowl, and gradually add the beet juice, 1 tablespoon at a time, mixing with your hands until the dough comes together. Knead the dough on a work surface, and divide into two even discs. Wrap in plastic wrap and chill in the refrigerator overnight. Make the Dough: in the bowl of a food processor, add the flour, sugar, and salt, and pulse 2-3 times. Add the cold, cubed butter and pulse 8-10 times until butter is pea-sized. Transfer the dough to a large mixing bowl, and gradually add the ice water, 1 tablespoon at a time, mixing with your hands until the dough comes together. Knead the dough on a work surface. Preheat oven to 400˚F (205˚C) 2. Add potatoes to a parchment paper-lined baking sheet. 3. Season with olive oil, thyme, salt, and pepper. 4. Bake for 20 minutes. 5. To prepare salmon marinade, combine lemon juice, garlic, onion powder, paprika, thyme, parsley, and honey, and stir until evenly combined. 6. On the same baking tray, push the potatoes to one side of the tray and add salmon and asparagus. 7. Season the salmon and asparagus with olive oil, salt, and pepper. Gourmet Salmon Dinner Servings: 2 INGREDIENTS 2 salmon fillets Salt, to taste Pepper, to taste Thyme, to taste Olive oil, to taste 4 cloves garlic, minced 2 pounds potatoes, boiled 2 shallots, thinly sliced 5 tablespoons butter, divided ½ cup whole milk 1 teaspoon salt ½ teaspoon white pepper 1 cup porcini mushrooms, trimmed 1 bunch asparagus, ends trimmed 2 salmon fillets Salt, to taste Pepper, to taste Thyme, to taste Olive oil, to taste PREPARATION 1. In a medium-sized pan on medium high heat melt 3 tablespoons butter and add shallots. Cook for 3-4 minutes. 2. Add garlic and 2 more tablespoons of butter into pan and continue to cook for another 3-4 minutes, stirring frequently. 3. Add milk, white pepper, and salt to pan and stir until incorporated. 4. Transfer the shallot mixture to a food processor and process into a paste. 5. Mash potatoes and incorporate shallot mixture and continue to mash until fully incorporated. 6. Add olive oil to a large pan over medium heat and add in the mushrooms, cooking for 5 minutes, stirring occasionally. 7. Add the asparagus to the pan and season with salt and pepper, cooking for 5 minutes. 8. On a cutting board, cut 4 slits into salmon skin roughly a quarter inch apart and ½-inch into the salmon. 9. Season salmon with salt, pepper, and thyme. 10. Add olive oil to a medium pan on medium-high heat and place the salmon skin-side down. 11. Cook for 3-4 minutes or until a lighter pink color has reached ⅓-½ of the way up the side of the salmon. 12. Flip salmon and immediately add the butter, garlic, and thyme. 13. Stir the garlic and thyme around the pan to infuse the flavors and spoon the butter onto salmon. 14. Allow salmon to cook through, roughly 2 more minutes. Transfer the salmon to a paper towel-lined plate. 15. Add the potato puree to a plate, and top with mushrooms, asparagus, and salmon. 16. Enjoy! While it’s cooking, in a large skillet over medium-high heat, melt butter. Add garlic, shrimp, asparagus, wine and chili flakes. Cover and cook for 2-3 minutes, or until shrimp is cooked through. Add parsley and season with salt and pepper to taste. Toss well. Enjoy! Cashew Chicken Sauce: 2 tbsp soy sauce 2 tbsp oyster sauce 1 tsp sesame oil 1 tbsp brown sugar ¾ cup chicken broth 2 garlic cloves, minced 1 tbsp ginger, freshly grated 1 tbsp cornstarch Stir Fry: 2 chicken breasts, diced 1 green pepper, diced 1 red pepper, diced 1 cup unsalted cashews ¼ cup green onion ¼ tsp red pepper flakes (optional) Oil Salt and pepper to taste In a small bowl, whisk together sauce ingredients and set aside. In a large skillet over medium-high heat, add oil. Add chicken and season with salt and pepper to taste. Cook until no longer pink and add green pepper and cook for another minute. Add sauce and cashews and cook for another 1-2 minutes, or until peppers have softened and sauce has thickened. Add green onions and mix well. Enjoy! Halibut Packets 3 halibut fillets 1 red bell pepper, thinly sliced 1 cup sugar snap peas ½ cup red onion, thinly sliced 1 garlic clove, minced 1 tbsp dill, chopped (or tarragon) 1 lemon, sliced Salt and pepper to taste Oil Cut out 3 large parchment paper squares. Into the centre of each square, add snap peas, red pepper and red onion. Top with lemon slices and halibut. Season with salt and pepper to taste, garlic and dill. Top with another slice of lemon. Fold packets to seal edges, leaving an air pocket inside to help steam fish. Bake at 400ºF for 13-14 minutes, or until vegetables and fish are cooked through. Enjoy! *Be careful when opening packets!
