This mildly spicy yet tangy Paneer Recipe is pretty close to Kadhai Paneer, yet different. If you are a fan of Paneer Recipes, you need to try this one out, the freshly roasted spice blend of Coriander-Cumin-Chili-Fenugreek-Tamarind along with the ghee brings out an amazing flavor to this one which separated this out from the crowd.. Skip the Butter Paneer for a day, and try out this Masala Paneer :) Detailed Recipe : Ingredients : Ghee – 2 1/2 tbsp Coriander Seeds – 3 tbsp Cumin Seeds – 1 1/2 tbsp Fenugreek Seeds – ½ tsp Red Chili Powder / Whole – 2 tbsp / 6-7 Tamarind – 1 lemon sized ball Garlic – 5-6 cloves Dahi – ¼ cup Paneer – 200g GG Paste – ½ tsp Salt – ½ tsp Turmeric – ¼ tsp Coconut Milk Powder – 2 tbsp. Method : • In a pan, add ½ tbsp. ghee, next goes in the coriander seeds, cumin seeds, fenugreek seeds. Roast for a minute, and then add in the red chili powder, tamarind, garlic and roast well for 2-3 minutes in low flame. • After the spices have cooled down, add water and make a smooth paste. • Make ridges/cuts in paneer cubes, and keep aside. In a mixing bowl, add in ginger-garlic paste, salt, turmeric and yogurt. Mix well, add in the paneer and keep aside. • In a pan, pour in rest of the ghee, once hot, place in the just the paneer one by one and cook for 2 minutes in each side and take them out. • In the remaining ghee, add the spice paste, and cook until it starts leaving the sides. • Add in the coconut milk powder, remaining yogurt and mix well. • Roasted paneer goes in next, along with water to adjust the consistency. Begin by adding - Paneer, potatoes, french beans, carrot, green chili, coriander leaves, besan, red chili powder, cumin powder, garam masala, salt, turmeric powder, cashewnut powder to a mixing bowl. 2. Mix all the ingredients together and keep aside. Also heat up oil to deep fry. 3. Place a spring roll sheet, take small portions of the filling, and start placing in the bottom portion of the sheet, leaving about a inch from the bottom. Bring the sides to the center, pull up the bottom and start rolling. 4. Just before rolling it all up, apply a slurry of flour, in the top area and roll it. Keep aside, covered with damp cloth. 5. Now that you've done the rolling, dice these up diagonally with a sharp knife in a swift motion & there you have these ready to fry. 6. Fry in hot flame until golden. Once done, get this down to a kitchen towel lined plate. Serve Hot! It is nothing but minced vegetables cooked with onions, tomatoes and ginger garlic paste. Check out Chef Ruchi Bharani's take on this popular kheema recipe. Ingredients: 3 medium onions, finely chopped 1/2 capsicum finely chopped 1 carrot steamed and finely chopped 100g French beans steamed and finely chopped 1/2 cup frozen peas 1 green chilli finely chopped 1 tomato finely chopped 1 1/2 cup tomato puree 3 tbsp cheese 100g grated paneer 1 tsp garam masala 1/2 tsp red chilli powder 1 tbsp ghee 1 tbsp ginger and garlic paste coriander leaves salt to taste 1/2 tsp coriander and cumin seed powder Method: - In a pan, heat ghee. Add the onions and saute them well until they are brown in colour. - Add the ginger and garlic paste. - Add the finely chopped capsicum, frozen green peas and chopped green chillies, - Add the tomato puree and let it cook for at least 2 minutes. - Add the finely chopped tomatoes and let them cook until they are absolutely mushy. - Add the red chilli powder, coriander and cumin seed powder, garam masala and salt to taste. - Add little water and saute the ingredients well. - Add the chopped, steamed vegetables - French beans and carrots. - Add the grated paneer (cottage cheese) and then grate some cheese over it. Mix all the ingredients well. - Sprinkle some coriander leaves over the kheema masala and add little water. Mix well. - The kheema masala is ready to be served. Garnish it with some grated cheese and coriander leaves. Also squeeze some lime over it. Learn how to make Paneer Pasanda a recipe by Ruchi Bharani only on Rajshri Food Ingredients: 400gms paneer 2-3tbsp cream 3 tbsp cornflour For chutney 1 tbsp cashews 1 cup coriander leaves 3green chillies 1 piece ginger 2 garlic cloves 1tbsp grated paneer Salt to taste 1 tbsp mint leaves For gravy 1 cup curd 1 tbsp cashew nuts 2 small onion 3 tomatoes 4 dry red chillies 1 tsp cumin seeds 2 tbsp ghee⁠⁠⁠⁠ Method: - Cut paneer into equal sizes and make a paneer sandwich by stuffing it with mint & coriander chutney. - In a bowl add corn flour, salt and water and make a paste. Chicken Tikka Masala Recipe : https://www.youtube.com/watch?v=juIDOIltzmA Ingredients 250 gms Paneer cubes 50 gms yogurt 1 tbsp red chilli powder 1 tsp turmeric ½ no lemon juice 1 tbsp mustard oil Salt to taste Tikka Masala 2 tbsp oil 2 medium onions 3 large tomatoes 1 tsp chopped green chilly 1 tbsp red chilli powder 1 tsp turmeric ½ tsp Garam masala Garnish with springs of coriander Method - Slice paneer into cubes - For tikka marination add curd, red chilli powder, turmeric, juice of lemon, mustard oil and salt as required.Mix the ingredients properly. - Add the paneer cubes to the marination mix and coat them well and keep aside for 10 minutes. - In a pan heat some oil on moderate flame. - Add chopped onions and let them turn brown. Now add green chillies, red chilli powder, turmeric powder,garam masala and salt. - Let the masala cook for 30-40 seconds and then add the chopped tomatoes. - Add water and let the whole mixture cook properly. - Cover it with the lid and allow it to cook for 8-10 minutes. - Grill the paneer cubes by heating up oil in the pan and placing the cubes over it. - Let the paneer cook from both the sides.Once done keep them aside for further use. - Add the left over marination paste into the masala. - Allow it to cook for a minute and then turn off the flame and allow it to cool down - Now grind the mixture into a fine paste - Add the masala paste into pan again add some water to it and cook it on moderate flame. - Once the masala start simmering add the paneer tikka cubes. - Give gentle stir and let it cook for over a minutes - Paneer Tikka Masala is ready to be served. Veggies: • In a pan, add in oil, once hot, add the ginger, garlic, green chili. • Add the chopped veggies, and season with salt, pepper, oregano & basil. • You can add the chili paste and cook for a minute in high flame. Veggies are ready. White Sauce: • In a saucepan, add in butter & flour. Cook until the flour is cooked but not brown, then add milk slowly while whisking gently. • Season with pepper, salt and oregano. • Add small chunks of cheese while whisking, and once it’s all incorporated, cook for another 30 seconds. White Sauce is ready. Assemble Lasagna : • In a 12x8 Pan, spread a ladle full of red sauce, then place in the oven ready lasagna sheets. • Pour in some more red & white sauce. Layer in the veggies, sprinkle in some cheese. Then place the lasagna sheets & repeat the process. • In the last segment, sprinkle cheese over sauces. • Bake at 200C for 25 minutes in a preheated oven. • Garnish with coriander, and serve hot with garlic breadsticks, Enjoy! Learn how to make Kadai Paneer - Restaurant Style at home in just a few easy steps. Making restaurant style kadai paneer is no more a hectic job. Just few simple ingredients readily available at home, is all that is needed. Without spending long hours in the kitchen to make delicious food, Chef Ruchi Bharani brings a very simple and easy to make quick homemade kadai panner recipe from North Indian cuisine. Ingredients: Dry Spices 2 cloves 1tsp fennel Seeds 1 tsp Jeera 4 pepper corns 1 tbsp Coriander Seeds 2 Cardamoms Saute 2 onions ( cut lengthwise) 1 big Tomato ( chopped ) 1 tsp oil Gravy 1 capsicum ( diced) 1 baby onions (cubed) 1 tbsp butter 2 green Chillies ( cut lengthwise ) Salt 1 tsp Aamchur Powder 1 tsp ginger paste 1 tsp garlic paste 250 gms Paneer Method: - Roast coriander seeds, cumin seeds, fennel seeds, cloves, cardamoms, pepper corns in a heated pan for about a minute. - Open the cardamom pods and let the seeds remain in the mixture - Let the mixture cool - Heat some oil in a pan, add the onions to it and saute - Meanwhile grind the dry roasted seeds in a grinder to make a smooth powder - Once the onions turns brown, add the tomatoes and cook it till the tomatoes turn soft - Add salt and mix everything well - Put the content in the grinder with the powdered spices in it. - Add raw mango powder and grind it to make a smooth paste. - Add water if needed. - Put butter in a pan and add ginger and garlic paste to it - Mix well ginger and garlic before the butter melts - Add chillies and saute it with the paste - Add shelled onions and toss them and cook them for about 2 mins - Add diced capsicum to it and add the masala paste once the onions have turned translucent - Cook everything for a min and add water to it. - Stir it in and let it boil - Add the paneer cubes, toss them up and mix well everything. - Add salt and coriander leaves to it and mix well - The gravy dish is ready to be served hot with roti / paratha Director: Neha Sarkar Camera: Kawaldeep Singh Jangwal, Manjeet Katariya Editing: Pratik Jain Creative Head: Kavya Krishnaswamy Producer: Rajjat A. More Paneer Recipes : https://goo.gl/vXY7Pz For Gravy : Oil - 2 tbsp Cashewnuts - 1/4 cup Onions - 2 (roughly chopped) Salt - as per taste Ginger Garlic Paste - 1 tbsp Tomatoes - 5 (roughly chopped) For finishing the sabzi : Oil/Ghee : 2 tbsp Cumin Seeds - 1 tsp Onion - 1 (small, finely chopped) Red Chili Powder - 3/4 tsp Coriander Powder - 1 tsp Kasoori Methi - 1/2 tsp Cumin Powder - 1/2 tsp Fennel Powder - 1/2 tsp Turmeric Powder - 1/2 tsp Salt - 1/2 tsp Coriander Leaves - 3 tbsp (finely chopped) Tomato Puree / Ketchup - 1 tbsp Cream - 2 tbsp Ginger Juliennes - 1" Green Chili Slits - 2 Matar / Peas - 1 cup (parboiled) Paneer - 300g (cubed) Garam Masala - 1/4 tsp Method : 1. For Gravy : In a hot pan, add in the oil & as it gets hot, add in the cashewnuts and roast them for a minute or two. 2. Add in the roughly chopped tomatoes and the salt as per taste and cook the onions until golden. 3. After the onions get golden, add in the ginger garlic paste and stir for a minute. 4. Chopped tomatoes goes in next, and cook until they get mushy. Turn off the flame, let it cool down, then blend to a smooth paste. 5. For finishing the sabzi : In a kadhai/pan, add in the oil and after it gets hot, goes in the jeera/cumin seeds. After they sizzle, add the onions and cook for a minute. 6. Lower the flame, and add the spices - red chili powder, coriander powder, cumin powder, kasoori methi, fennel powder, turmeric powder and salt. Roast the spices for 2-3 minutes in low flame. 7. Add in the finely chopped coriander leaves and cook them for a minute, then goes the gravy paste, tomato ketchup & cream & stir around. 8. Peas, Ginger, Green Chili goes in next, along with some water to adjust the consistency, cook them out for a couple minutes, then add in the cubes of paneer. 9. Finally, sprinkle in a touch of garam masala & turn the flame off. Ingredients: Paneer 200 gms cut in cubes 2 Tbsp butter 1 Tbsp oil 2 Onions cut in cubes 4 tomatoes cut in cubes A bay leaf Cinnamon- small piece Cloves 4-5 Cardamom 2-3 Cumin seeds- 1 tsp Garlic pods 8-10 Ginger- small piece Cashewnuts 15-20 Dry fenugreek leaves- 1 tsp Salt as required Red chilly powder- 1 tsp Garam masala powder- 1 tsp Coriander powder- 2 tsp Turmeric powder- 1/4 tsp Honey/sugar- 1 tsp Fresh cream 4 tbsp some fresh coriander Method: - In a wok, add butter, cumin seeds, cloves, cardamom and cinnamon sticks and stir fry it for few minutes. - Add garlic and ginger and fry for a minute. - Add the onions and cook until they are cooked and tender. - Add the tomatoes and cook for about 2 - 4 minutes. - Add the cashew nuts, salt to taste and water and cover the wok with a lid on a medium high flame for about 10 - 12 minutes. - Once cooked, let it cool down slightly and then add this to a mixture along with little water and blend for about 30 - 40 seconds. - Strain this mixture into another bowl to avoid lumps. - In a wok, add the butter and oil. - Add a bay leaf followed by red chilli powder and stir well. Then quickly add the strained mixture to it and cook for about 4 - 5 minutes. - Add salt, turmeric powder, coriander powder, garam masala and mix well. - Using hands, crush the fenugreek leaves and add to the gravy. - Add honey and then stir in the fresh cream. - Add the paneer cubes and let them cook well until they are coated completely with the gravy. Ingredients: Cottage Cheese (Paneer) - 150 Gm Onion - 1 Medium Size Fine chopped Ginger - 1 Inch Green Chilly - 2 No. Tomato - 2 Medium Size Onion - 1 Medium Roughly choped Cashew Nuts - 9-10 No. Green Chilly - 2 No. Ginger - 1 Inch Garlic - 7-8 No. Curd (Must not be too tangy) - 100 Gm Coriander Powered - 1 Tbs Turmeric Powder - 1/4 Tbs Garam Masala - 1 Tbs Cumin Powder - 1 Tbs Red Chilly Powder - 1 Tbs Kasoori Methi - 1 Tbs Coriander Leaves - Small Qty. Cloves - 5 No. Green Cardamom - 3 No. Black Cardemom - 2 No. Cinnamon - 1 Inch Bay Leaves - 2 No. Salt to taste. Cooking Oil. Process: 1. Put 1 Small spoon full cooking oil in a pan and heat. 2. Roast paneer from both sides till it become light golden in color and then keep it aside. 3. Fry roughly chopped onion till it goes little transparent then add tomato, garlic, green chili, ginger and cashew until tomato is lightly cooked. Keep them aside to cool. 4. Grind the entire thing in "Step 3" to make smooth paste. 5. Take the same pan and add small spoon full of cooking oil. 6. Add raw spices and roast a little till they change their color. Remove it from pan. 7. Add 1 Big spoon full of cooking oil in pan and add finely chopped onion and fry till it becomes transparent. 8. Add green chili, sliced ginger and cook a little. 9. Add the paste we have kept ready. 10. Add red chili and mix well. 11. Add curd and then salt immediately. Mix well. 12. Add Coriander powder, cumin powder, turmeric powder and cook till oil leaves the gravy. 13. Add a cup of water. 14. Add garam masala. 15. Add roasted paneer pieces and stir gently. 16.
