FULL RECIPE BELOW Don't let a beef roulade intimidate you-they're fairly simple to throw together! Learn how to make it in this video tutorial! BEEF ROULADE RECIPE: http://www.escoffieronline.com/how-to-make-beef-roulade/ Ingredients 1 1/2 to 2 pounds of flank steak 8 oz prosciutto ham 10 oz roasted red peppers 3 oz sundried tomato pesto 4 oz sautéed onions 2 oz Parmesan cheese ¼ cup olive oil Salt & Pepper to taste Preparation 1. Place a piece of heavy duty plastic wrap on a large work surface. Place flank steak on it. Cover with another piece of plastic wrap and pound the flank steak until is 1/4 inch thick using a meat mallet. 2. Keep in mind: you will be rolling the meat with the grain of the meat, you do this because when you slice it later, the beef will be more tender when you cut across the grain. 3. Spread the pesto sauce; then add the rest of the ingredients. Leave about ½ inch free on all sides of the meat. Carefully roll the roulade up tight, then tie it with butcher’s twine. 4. In a heavy skillet, add the oil and sear the roulade on all sides. Place the roulade in a baking tray with the seam side down. Roast until the internal temperature reaches 130˚F (The internal temperature will rise with the carry over heat). 5. Allow the roulade to rest for a few minutes before slicing. Why tie a roast? We want to make sure the meat stays firm and nice & even. Take some butchers twine and go under the meat. Make a loop around your fingers and make a knot and pull tight but don't tear the meat. Now take the string and loop under and repeat. Now turn meat over and cut the string. Go over, under and pull till complete. Now tie the two ends together. Now we have a beautiful cut filet piece of meat that will cook evenly with this old butchers trick.

Click "Show More" (below) for a written recipe of Chef Uwe's classic Rouladen from the GermanDeli test kitchen. This entree serves 3 people (two Rouladen per person) You will need: 1. Six large Top Round Beef slices, cut or pounded until the slices are about 1/4" thick 2. One Large white or yellow onion, chopped 3. One cup diced bacon (double-smoked is ideal, but regular bacon can work, as well) 4. One quarter cup finely chopped fresh marjoram and/or parsley 5. Salt and pepper (freshly-ground is best) 6. About one half cup Dusseldorf-style German mustard (a hot variety is best, but mild will also work) 7. Six small German pickles 8. Several wooden toothpicks 9. One cup rough-chopped carrots 10. One cup rough-chopped celery 11. One cup rough-chopped onions 12. Four TBLS tomato paste 13. One cup red wine 14. About 32-ounces of beef stock (low sodium is best) 15. Cooking oil 16. About one half cup cornstarch 17. About one cup water Instructions: Heat oil in a pan and add one cup of chopped onion, stirring until the onions are translucent and slightly golden Add the chopped marjoram to the cooked onions and set in the refrigerator to cool In a separate pan fry the bacon until the pieces are slightly crispy, remove from oil, and cool Lay out the six 1/4"-inch beef top round slices onto a clean surface Season each slice of beef with salt and pepper Generously spread mustard onto the meat slices Spread the cooked and cooled bacon evenly on each slice Add a German pickle to the center of each slice Distribute the cooked and cooled fried onions onto each slice Roll up each slice, while turning the sides up and in to keep ingredients inside the roll Secure each beef roll with one or more toothpicks In a large pot brown each beef roll on all sides in hot oil Remove the Rouladen from the pot Add the rough-chopped onions, carrots, and celery to the meat drippings in the pot and stir Add the tomato paste "Deglaze" the pot with the red wine Add the beef stock to the pot of vegetables and bring to a boil Return the beef rolls to the pot Cover the pot and place into an oven set at 350 degrees Cook the beef, covered, for 1 1/2 hour After 1 1/2 hours remove the Rouladen from the pot You may use a traditional flour and butter "Roux" as a thickener , but Chef Uwe recommends thickening the sauce over med-high heat using a mixture of Cornstarch mixed with water (add the cornstarch/water mixture a little at a time until the sauce is thick enough to coat the back of a spoon) Use a strainer to remove the carrots, celery, and onions so that you have a flavorful but smooth sauce to serve with or over the Rouladen The perfect sides include red cabbage and mashed potatoes or potato dumplings (or bread dumplings)

Start a 1/3 of the filet when you reach the end. Continu at half the thickness of the pork loin - When you opened your pork loin sprinkle it with salt and pepper - Chop the pecan nuts and apricots - Sprinkle the pecan nuts and apricots on the pork loin - Roll the pork loin and wrap it with butchers twine - Start your barbecue and add a wood chunk to your fire and smoke your pork loin indirect at 180 deg Celsius (350 deg Fahrenheit) - Smoke until the core reaches 63 deg Celsius (145 deg Fahrenheit) - Glaze the pork loin with apricot marmalade in the last 10 minutes, make sure it doesn't burn. - Carve the prok loin at the table. Prep Time: 30 minutes Yield: 4 servings (serving size: 4 rolls) Preparation 1. Cut steak diagonally across grain into 16 thin slices. Combine steak, soy sauce, 1 tablespoon vinegar, mirin, and sesame oil in a shallow dish. Marinate steak 10 minutes, turning occasionally. 2. Remove steak from marinade, reserving marinade. Place 1 steak slice on a cutting board or work surface; arrange 3 green onion pieces and 3 bell pepper strips on the end of steak slice. Roll up; set aside, seam side down. Repeat procedure with remaining steak strips, onion pieces, and bell pepper pieces. 3. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Place beef rolls in pan, seam side down; cook 7 minutes, turning once. 4. While beef rolls cook, bring reserved marinade to a boil over medium-high heat; cook 3 minutes. Remove from heat; stir in remaining 1 1/2 tablespoons vinegar. Drizzle sauce over rolls. Let's learn how to prepare a classic international dish: the beef stew, a traditional, tasty main course which needs quite a long cooking time. *** Hi all of you friends and welcome to the giallozafferano kitchen. Today we'll be preparing together the beef stew: this cheap meat main course has quite a long cooking time, but your whole family will like it. Let's see together what ingredients we'll need: • 4 tbsp of extra virgin olive oil • 3 tbsp of flour • 2 stalks of celery • 1 carrot / 1 onion • 2,2 lbs (1 kg) of beef • pepper / salt • 1 oz (30 g) of butter • 1 glass of red wine • 2 pints (1 lt) of meat broth Let's prepare the beef stew: First of all, finely chop the celery, the carrot and the onion, then brown them in a pan with melted butter and oil. Brown on a very low flame for about 10 minutes. 10 min. -- low heat While the mirepoix is cooking, we can move on to the meat; remove any excess fat or gristle and, if they're quite big pieces, cut them into smaller cubes. After that, dip them in flour. Now add the floured pieces of meat to the sautéed vegetables... and stir constantly for 15-20 minutes until golden brown on all sides. 15-20 min. -- high heat When the beef is well browned... add a glass of red wine and let it evaporate. Now add enough broth to cover all the meat... after that, let it simmer on a very low flame for an hour and a half - 2 hours with the lid on, leaving a small opening. 90-120 min. -- low heat Once the meat is nice and tender and the gravy quite thick, the beef stew is ready to be served, perhaps accompanied by a lovely potato puree as a side dish.
