Put the flour and a pinch of salt into a large mixing bowl and make a well in the centre. Crack the eggs into the middle. 2. Pour in the the milk and start whisking from the centre, gradually drawing the flour into the egg and milk. Once all the flour is incorporated, whisk until it is smooth. Then whisk in the melted butter. 3. Add a little more milk if it is too stiff. 4. Rest your batter in the fridge for 30 minutes. This is an important step and yields better pancakes. 5. To cook: Heat the pan over a medium heat, then wipe it with butter. Ladle some batter (roughly ⅓ cup/ 4 tablespoons) into the pan, tilting the pan to move the mixture around for a thin and even layer. then leave to cook, undisturbed, for about 30 secs. 6. If the pan is the right temperature, the pancake should turn golden underneath after about 45 secs and will be ready to turn. Flipping pancakes: Hold the pan handle, ease a fish slice under the pancake, then quickly lift and flip it over. Make sure the pancake is lying flat against base of the pan with no folds, then cook for another 30 secs before turning out onto a warm plate. Continue with the rest of the batter, serving them as you cook or stack onto a plate. You can make them up to a day ahead and reheat them on the oven on in the oven. Homemade Nutella INGREDIENTS 1 generous cups /5 ¼ oz /150g hazelnuts 100g/4oz milk chocolate, melted and cooled 2 tbsp cocoa powder 1/2 cup/65g/21/4oz icing sugar 1/2 tsp vanilla extract 1 tbsp vegetable oil (or any flavorless oil) METHOD 1. Roast at 200º C for 10-15 mins until very fragrant and well roasted. 2. Then rub them vigorously with a cloth towel to remove as much of the skins as possible. 3. Place the hazelnuts in a food processor and blend until it forms a very smooth peanut butter-like paste. This takes a little over 2 minutes. Note: While it is processing make sure to scrape down the bowl so that all of the nuts get blended up well. You need the nut paste to be very smooth. 4. When the paste resembles peanut butter and is smooth and shiny on top then it is done. You need to get it smooth now so that your finished nutella will also be smooth 5. Next add in the remaining ingredients: Cocoa powder, icing sugar, cooled melted chocolate, vanilla extract and vegetable oil. 6. Continue blending all of these ingredients together for around another 90 seconds or so. Just like before, stop the machine to wipe down the sides to ensure everything is getting blended. When it is smooth and is lovely and shiny then it is done. 7. Store your Nutella in an airtight jar at room temperature for weeks.

Pour in sugar. Use a hand mixer, or the whisk attachment on a stand mixer, to whip cream until stiff peaks form. Scoop the nutella into the bowl. Fold it together using a rubber spatula until all of the whipped cream is brown and loses its streaks. Scoop into serving dishes, or use a piping bag if you are being fancy. Mix everything listed in muffin ingredients except blueberries into a microwave safe mug with a small whisk. Drop blueberries in, spreading them out. 2. In a small bowl, mix streusel ingredients with a fork until butter pieces resemble bread crumbs. 3. Sprinkle streusel on top of muffin batter, spreading out evenly across surface. 4. Microwave for around 1 minute or until firm in the center of the cake (timing is based on my 1200W microwave so your timing might vary) 5. Enjoy immediately! French Toast in a Mug INGREDIENTS 2 slices of bread, buttered (White, challah, brioche) 5 tbps milk 1 egg 2 tablespoons maple syrup (or sugar) 1 tablespoon of chocolate chips/ chunks METHOD 1. In your microwavable mug, mix together the egg, milk, syrup until combined 2. Cut your bread into square bit sized pieces 3. Add the bread to the mug and press them down so they are submerged within the liquid 4. Add the chocolate chips to the mug and give a little stir to incorporate them in the mixture 5. This mug cake might take longer than other cakes. Microwave for 1/ 1 minute 20 seconds or until firm in the center of the cake. (timing is based on my 1200W microwave so your timing might vary) 6. Let cool for about 1-2 minutes 7. Sprinkle powdered sugar on top 8. Enjoy immediately! Cinnamon Roll Mug Cake (Adapted from http://www.cookingclassy.com/2012/03/cinnamon-roll-mug-cake-made-in-3-minutes/) INGREDIENTS 2 Tbsp applesauce (or mashed banana) 1 Tbsp vegetable oil (any flavorless oil) 2 Tbsp milk 1/4 tsp vanilla extract 5 tbsp flour 1 ½ Tbsp packed light-brown sugar 3/4 tsp ground cinnamon 1/4 tsp baking powder 1/8 tsp salt Cream Cheese Icing 1 Tbsp Cream Cheese or Neufchatel Cheese, at room temp 2 Tbsp powdered sugar 1 tsp milk METHOD 1. Combine all ingredients in a mug then whisk together with a fork until combined and nearly smooth. 2. Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds. (timing is based on my 1200W microwave so your timing might vary) 3. Serve warm topped with Prepare Cream Cheese Icing by mixing all of the ingredients together in a bowl by hand until smooth 4. Enjoy immediately!

Peanut Butter S’mores Dip Serves 4-6 INGREDIENTS 1 pound mini peanut butter cups 1 pound large marshmallows 15-20 graham crackers PREPARATION 1. Preheat oven to 350°F/175°C. 2. Place the peanut butter cups in an even layer on the bottom of a large skillet or nonstick pan. 3. Place the marshmallows in a single layer on top. 4. Bake for 20 minutes until marshmallows are golden brown. 5. Serve with graham crackers for dipping! Cookies & Cream Truffles Serves 6-8 INGREDIENTS 36 chocolate sandwich cookies 8 ounces cream cheese, softened 12 ounces white chocolate, melted PREPARATION 1. In a food processor, finely crush the cookies, reserving about 2 tablespoons of the mixture for sprinkling on top of the truffles. 2. In a large bowl, combine cookie crumbs and cream cheese, stirring until evenly mixed. 3. Chill the mixture for about an hour or until the mixture can be rolled into a ball and hold its shape. 4. Roll ping pong–sized balls with the mixture. 5. Dip the truffles in the melted white chocolate and place on a baking tray lined with parchment paper. 6. Sprinkle some of the cookie crumbs on top of the chocolate-coated truffle before the chocolate hardens. 7. Repeat with the rest of the truffles, reheating the chocolate if necessary. 8. Serve! Palmier Cookies Serves 4-6 INGREDIENTS 1 sheet puff pastry, thawed 1 cup cane sugar ½ stick melted butter PREPARATION 1. Preheat oven to 425°F/220°C. 2. Brush the melted butter evenly over the puff pastry. 3. Sprinkle half the sugar on the pastry, then spread it around evenly. 4. Using a rolling pin, roll the pastry into a rectangle, pressing the sugar into the pastry. 5. Flip the pastry, then repeat the process, brushing with butter and rolling in the rest of the sugar. 6. Starting from the shorter edges, roll them tightly towards the middle. 7. Wrap in cling film and chill for about 30 minutes. 8. Remove the cling film and push one of the rolls directly on top of the other. 9. Trim off the uneven ends of the pastry, then slice 1-centimeter cookie rounds. They should look like smushed hearts. 10. Place the slices on a baking tray lined with parchment paper about 2 inches apart to allow for expansion. 11. Bake for 15 minutes, flipping them halfway, until the sugar is caramelized and the cookies are golden brown. 12. Cool, then serve! Triple Decker Brownies Serves 4-6 INGREDIENTS 1 16-ounce tube cookie dough 16 chocolate sandwich cookies ½ box brownie mix, prepared according to package instructions PREPARATION 13. Preheat oven to 350°F/175°C. 14. Press the cookie dough in an even layer on the bottom of a 9x9 square baking pan. 15. Place the 16 cookies evenly on top of the cookie dough. 16. Pour the brownie batter on top, spreading it evenly over the cookies. 17. Bake for 45-50 minutes, until a toothpick inserted inside comes out clean. 18. Cool, slice, then serve! Classic Chocolate Chip Cookies | Oh Yum with Anna Olson

Welcome to Oh Yum with Chef Anna Olson! In this video Chef Anna guides you on making these delicious classic chocolate chip cookies. Click on 'SHOW MORE' for baking directions. Ingredients for the chocolate chip cookies: ½ cup unsalted butter, at room temperature ½ cup packed light brown sugar ½ cup granulated sugar 1 large egg, at room temperature 1 tsp vanilla extract 1 ¼ cup all-purpose flour 1 Tbsp cornstarch ½ tsp baking soda ½ tsp salt 1 ½ cup chocolate chips 1 cup lightly toasted, coarsely chopped pecans (optional) Chocolate Chip Cookies Baking Directions: 1. Cream the butter with the brown sugar and granulated sugar together well. Beat in the egg and the vanilla. 2. In a separate bowl, sift the flour with the cornstarch, baking soda and salt. Add this to the butter mixture and stir until blended. Stir in the chocolate chips and pecans (if using). 3. Using a small ice cream scoop or a tablespoon, scoop spoonfuls of dough (about 2 Tbsp) shape them into a ball and place onto a parchment lined baking tray or a plate. Chill the scooped cookies for at least an hour, or once chilled, the cookies can be frozen for baking later. 4. Preheat the oven to 325ºF. Arrange the chilled scooped cookies onto parchment-lined baking trays, leaving 3 inches between the cookies. Bake for 15-18 minutes, until browned around the edges. Cool the cookies on the baking tray. If baking cookie dough that has been frozen, arrange the frozen cookies on the baking tray and let them thaw for 20 minutes at room temperature before baking as above. Let cool slightly and enjoy. Preheat the oven to 350oF (180oC). Butter and line 3 8-inch x 2-inch round cake pans. You can use 2 time, I just wanted 3 layers in mine. 2. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into a large bowl. Whisk the ingredients together by hand. 3. In another bowl, combine the buttermilk, oil, eggs, vanilla and coffee 4. Add the wet ingredients to the dry and GENTLY mix the batter just to combine. Do not over mix or beat as this cake can toughen up. 5. Pour the batter into the prepared pans and bake for 30 to 35 minutes, until a cake tester comes out clean. 6. Note: this cake cooks fast so check if after 25 minutes. You don’t want to overcook it. 7. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely. Buttermilk Substitute: You can make a replacement for buttermilk by mixing 1 cup of milk with 2 tablespoons of lemon juice. Let it sit for 30 minutes at room temperature, then use. To make the Fudge Frosting: 1. In the bowl of an electric mixer, beat room temperature butter until lightly fluffy. Add the sifted powdered sugar 1 spoon at a time and mix well. It will get light in color and bigger 2. Add vanilla and cocoa, and the milk, scraping down the sides of the bowl as you work. 3. Turn mixer on medium high. Beat frosting until light, fluffy and of spreading consistency. 4. If the frosting is too thick, slowly add more milk or half and half, one tablespoon at a time, until it reaches the desired consistency. 5. You can use the frosting immediately, or store it in the refrigerator for 3 days, or freeze if for up to 3 months. Allow frosting to come to room temperature before using. To Decorate: 1. Place 1 layer, flat side up, on a flat plate or cake pedestal. 2. Create a crumb layer :With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. 3. Put the cake in the fridge and let the crumb layer set for around 30 minutes (this will make the finished product look really clean) 4. Take the cake from the fridge and put on another, final layer of frosting. Try and get it as smooth as you can. 5. To finish the top of your cake, take a spoon that has been dipped in hot water and dried. Work from the outside in and create a swirl until you get to the center. 6. Finish your cake off with your homemade sprinkles. 7. Store at room temperature or in the fridge for up to 4 days. If storing in the fridge make sure it reaches room temperature before eating.
