I'm Deborah and today we'll be making a traditional Milanese main dish that's very simple to prepare: Chicken Cacciatore. Let's see what we'll need: • 1 2 and ½ pound chicken • A bunch of parsley • 1 clove of garlic • 1 onion • 2 carrots • 3 ribs of celery • ½ cup of olive oil • 14 oz of tinned peeled tomatoes • A sprig of rosemary • 1 cup of red wine • Salt and pepper to taste. OK, let's prepare our chicken. First of all, wash, dry and cut the chicken into pieces. Now, place the pieces in a pan of hot oil to brown off for at least 10 minutes. Now, add to the chicken the diced onion and garlic, diced carrot and celery, the rosemary, a good pinch of salt, and the pepper. Let it cook for another 15 minutes. After that add the red wine to the chicken. When it cooks off, it's time to add the tomatoes cut into pieces. Cover it up and let it simmer on a low heat for at least a half an hour. If it starts to look dry, just add a bit of broth or water as needed. After everything is cooked, add the minced parsley to finish and you're ready to serve your chicken cacciatore. Today we'll be preparing an appetizer that is as delicious as it is quick to prepare: Bruschetta Caprese. Of course bruschetta is a starter that's eaten throughout Italy and that can be found all over the world, but this type is prepared with traditional ingredients from the Campagna region -- mozzarella di bufala and gaeta olives. Let's see what ingredients we'll need: • 4 slice s of semolina bread • 9 ounces of mozzarella di bufala • 10 cherry tomatoes • Extra virgin olive oil • Dried oregano • Salt • A clove of garlic • 12 black olives (preferably Gaeta olives) • 8 very fresh basil leaves. Let's make our Bruschetta Caprese. We'll begin by toasting our slices of bread. Use a non-stick pan for this, or you can toast them in the oven. I've cut the slices at about an inch thick, which seems to work well. If you'd like a thinner slice, just be sure it's at least thick enough to support all of the ingredients we'll be adding on top without breaking. Once the bread has cooled, rub them with the clove of garlic. Once the bread is ready, it's time to move on to the topping. Here are the tomatoes washed and cut into small pieces like this. The mozzarella should be cut in the same way. Then toss the tomatoes...and the mozzarella... together in another bowl. Now the Gaeta olives. If you want, you can use another type of black olive either pitted or no, or even baked olives -- I'll be using Gaeta here. A pinch of oregano, salt, and also four leaves of basil torn into pieces by hand. Keep the other four aside to garnish the finished bruschette. Now just a drop of extra virgin olive oil. Mix it all together and you're ready to assemble the bruschette. And here are our lovely bruschette Caprese. The finishing touch? Tips • If you can't find beef stir-fry strips in your supermarket, you can use any grilling steak, cut into thin strips, instead. • Substitute jarred minced ginger for the grated ginger root. Ingredients: 1 1/2 cup warm water 1 1/8 teaspoon active dry yeast 2 tablespoons brown sugar 1 1/8 teaspoon salt 1 cup bread flour 3 cups regular flour 2 cups Warm water 2 tablespoons baking soda to taste coarse salt 4 tablespoons butter (melted) Turn this recipe into a puzzle! [click] Directions: Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour. While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 Tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope* (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet. Allow pretzels to rise again. Bake in 450 oven for about 10 minutes or until golden. Brush with melted butter and enjoy! Toppings: after you brush with butter try sprinkling with coarse salt. or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture. Enjoy! * The longer and thinner you can make the dough rope, the more like Auntie Anne's they will be. (Of course I don't have the counter space!)

This is exactly what I need to prepare an excellent braised beef with Barolo wine... let's go! Time and patience will be essential, but they'll pay off in the end when you taste this succulent main course. Let's see together what ingredients we'll need: • 2,2 lbs (1 kg) or more of priest's hat or chuck steak • 1 clove of garlic • 2 bay leaves • 1 branch of ròsemary • Salt / a small piece of cinnamon • 3 cloves • Peppercorns / 1 onion • 2 stalks of celery / 2 carrots • Less than 3 tbsp (40 g) of butter • 3-4 tbsp of extra virgin olive oil • 1 bottle of Barolo or red full-bodied wine Let's make it together: Begin by washing and roughly chopping the vegetables, peel the garlic and put the piece of meat into a glass bowl: it should be narrow and tall since the meat will be covered with wine. Add the vegetables... and the garlic... the bay leaves and the rosemary... and the spices. Now cover everything with the wine and let it màrinate in the fridge for at least 12 hours covered with cling film. 12 hrs -- fridge After marinating all night, here is our piece of meat. Dab it with a clean cloth or some kitchen paper, then start cooking. Here we're using a traditional kitchen, but of course you can cook in your own. Put the oil and the butter in a pot and brown the meat on each side. It's time to add the vegetables to the meat: I heated the marinading mixture with the microwave, but you can simply take it out from the fridge an hour before using, in this way we won't stop the cooking process of the meat by adding cold ingredients. So add the vegetables... and let them brown for 10 minutes or more, until tender. Now it's time to add salt... stir a little bit... and add the wine used for marinating. Let the meat cook, or better simmer, for at least 2 hours on a very low flame, with a lid on. 2 hrs -- low flame After the braised beef has finished cooking, place it on a dish and cover to keep it warm. Then pour the cooking sauce into a bowl and whiz it up with an immersion blender to make the sauce for the beef. Make this recipe for Chandi Padwa or even on regular day and satisfy your crave with fresh homemade Gharis. Ingredients FOR THE FILLING Semolina 2 Tablespoon, roasted Ghee 3⁄4 Tablespoon, divided (1/2 tablespoon for cheese and 1/4 tablespoon for the gram flour) Ricotta cheese/Khoya 1⁄2 Cup (8 tbs) Gram flour 2 Tablespoon Pistachio powder 1⁄4 Cup (4 tbs) Almond powder 1⁄8 Cup (2 tbs) Cardamom powder 1⁄4 Teaspoon Dry milk powder 1⁄8 Cup (2 tbs) (Optional) Sugar 2 Tablespoon (Add according to taste) FOR THE LAYER/COVER All purpose flour 1⁄2 Cup (8 tbs) Ghee 2 Tablespoon, melted Cold water 1⁄4 Cup (4 tbs) Oil 1 Cup (16 tbs) (For deep frying) FOR THE GARNISHING/GLAZING Ghee 1 Tablespoon Powdered sugar 2 Tablespoon Almonds 1⁄4 Cup (4 tbs), slivered Pistachio 1⁄4 Cup (4 tbs), slivered Directions GETTING READY For the filling: 1. Take a pan and heat it and roast the semolina on medium heat. Keep stirring till it slightly changes the color. When done take off the heat and set aside. 2. Into the pan add ghee, and when it melts add the ricotta cheese and stir till all the moisture evaporates from it. Once done, using the spatula push the cheese to one side of the pan. 3. Into the other half of the pan, add 1/4 tablespoon of ghee and gram flour and roast it on a medium heat. 4. Mix the roasted gram flour and the ricotta cheese together. 5. To that mixture add the roasted semolina, powdered almonds and pistachio powder and mix well. 6. You can add the cardamom powder and dry milk powder at this point. 7. Take the mixture off the heat into a plate and set it aside to let it cool down. For the layer/cover: 8. In a mixing bowl, take all purpose flour and to it add the melted ghee and mix using your hands. 9. Gradually add the cold water and knead to get a soft dough. Lastly, smooth out the dough with just a drop of ghee. 10. Cover the dough and let it rest for a minimum of about 10 to 15 minutes. MAKING To prepare the filling: 11. Take the prepared filling mixture, add sugar to it and use your hands to mix it well. 12. Make small balls with portions of the mixture and set them aside. To prepare the layer/cover: 13. Take small portions of the dough and roll into small flat rounds. Place the ball of filling in the center and cover it in the shape of a half moon, sealing the edges well. Use water/milk to seal the edges well so that they do not break apart while frying. 14. The prepared ghari can be wrapped in a damp cloth and kept in an airtight container to prevent it from drying. 15. Take a pan with oil and heat it to a high temperature. Deep fry the prepared gharis till golden brown. Drain into a paper towel and remove excess oil. 16. Let the fried gharis rest for at least 4 hours to cool completely. To prepare the glazing: 17. In a bowl mix the ghee and powdered sugar well. Take one ghari at a time and dip into the ghee-sugar mixture and spread it all around the ghari to glaze/coat it well. 18. Decorate the top of the glazed gharis with slivered almonds and pistachios. SERVING 19. Serve as a snack or dessert on auspicious occasions or during a festive period of the year. NOTE Varieties of this sweet ghari is served during the Chandani Padva festival in Gujarat, India. Things You Will Need 1. Ingredients: 200 gm gawarfali boil & cut 250 gm potatoes 1/2 tsp asafetida 1 tsp turmeric powder 1 tsp cumin seeds 2 tsp coriander powder 1 green chilli chopped Few coriander leaves 5-6 curry leaves Salt to taste 2 tbsp oil Preparation-Heat the oil,to it add asafetida,cumin seeds and curry leaves. Next add the dry spices, turmeric powder,coriander powder and chilli. Mix well.Now add the potatoes and toss well so the potatoes are coated with the masala. Add salt and gawarfali and toss well. Garnish with coriander leaves
