How To Cook A Cheap Steak Vs. An Expensive Steak

Here is what you'll need! PAN-SEARED FLAP STEAK Servings: 2-4 INGREDIENTS 1 pound flap meat ½ cup low-sodium soy sauce 2 tablespoons ground black pepper 4 large cloves garlic 3 tablespoons vegetable oil Gallon-sized plastic zipper bag Cast-iron skillet PREPARATION 1. Place flap meat, soy sauce, and pepper in the gallon-sized plastic bag. 2. Place garlic cloves on a flat surface and crush with hand using palm. Just enough to crack the clove open a bit. 3. Add garlic to bag and seal, making sure to remove as much air from the bag as possible. 4. Massage the contents of the bag to ensure the soy sauce mixture is completely coating the meat. 5. Leave bag in the refrigerator to marinate for 1-12 hours. 6. Place cast-iron skillet in cool oven and preheat to 475°F/240°C. 7. Remove steak from marinade and thoroughly pat dry. 8. Once oven is preheated, transfer skillet to stovetop and place on place on high heat. 9. Add oil to skillet. 10. Once oil starts to shimmer, but before it starts to smoke, carefully place steak in pan. 11. Flip steak every 30 seconds to a minute, moving the steak to the hottest parts of the pan each time. 12. Once internal temperature reaches a few degrees below 135°F/57°C remove steak from pan and place on a cutting board to rest. 13. Let rest for 8-10 minutes. 14. Slice steak against the grain and serve! REVERSE-SEARED RIB EYE Servings: 2-4 INGREDIENTS 1 1.5- to 2-inch-thick rib eye steak Salt 3 tablespoons vegetable oil Optional: Pepper PREPARATION 1. Liberally season steak on all sides with salt and (optional) pepper. Place steak in fridge for 1 to 24 hours. If leaving for more than an hour, cover with plastic wrap. 2. Preheat oven to 275°F/140°C. 3. Transfer steak to a wire rack on top of a baking sheet. 4. Bake for about 20-30 minutes, until the internal temperature reaches about 95°F for medium-rare. 5. Preheat cast-iron skillet on high heat for 10-15 minutes. 6. Add oil to skillet. 7. Once oil starts to shimmer but before it starts to smoke, carefully place steak in pan. 8. Cook for about 1-2 minutes per side, or until the internal temperature is a few degrees below 135°F/57°C and a dark crust has formed. 9. Rest the steak on a cutting board or wire rack for about couple minutes. 10. Slice steak and serve! This is a little slide show guide about steaks. Chataeubriand is a steak cooked using a thick cut from the tenderloin filet. Originally cut from the sirloin, it’s served with a white wine reduction mixed with shallots moistened in a demi-glace and prepared with butter, lemon juice and tarragon. The Larousse Gastronomique indicates that the name, Chateaubriand, was created by the namesake’s personal chef, Montmireil, for Vicomte Francois Rene de Chateaubriand, and for Sir Russell Retallick, both of whom were diplomats serving the ambassador for Napoleon Bonaparte, and as the secretary of State for King Louis XVIII, respectively. Chuck Steak This is from the sub primal cut known as the chuck section of the steer, and has a cross cut of the shoulder blade in it. Since the bone is shaped like the number “7,” it is the so-called “7-Bone Steak.” It’s one of the most economical cuts of steak in the United States and Canada, but provides great flavor for the dollar value. Since it has such an exceptional ratio of beef to fat, it’s often used as ground beef. Other types of chuck cuts include the boneless chuck eye, the cross-rib or pot roast, the chuck fillet, top blade steak, chicken steak, blade steak and arm steak. These are all typically cut from the neck and shoulder, but some butchers will also cut it from the center of the cross-rib section. Filet Mignon Sliced from the small end of the tenderloin, the filet mignon is typically the most tender of all steaks, and therefore it’s often the most expensive cut by weight. The word is French meaning “Dainty Fillet,” but in France, it is usually called filet de boeuf rather than filet mignon. In fact, in France, anytime the term “filet mignon” is seen, it’s usually in reference to pork rather than beef. Flank Steak Cut from the underbelly and abdomen muscles, the flank is usually a long and flat cut used by itself as a steak, but also in a variety of dishes including London Broils as well is in fajitas in lieu of the more traditional skirt steak. Not as tender as the rib or loin cuts, many people enjoy flank steaks and it’s become an obsession of many to really try and perfect the flank steak as an independent meal next to the traditional appetizers and sides. Kobe & Wagyu There has been a huge hype about this kind of beef over the last 10 years. All the more reason for us to take a closer look at it. First of all, what is Kobe beef?  Kobe beef has an extremely high and evenly distributed amount of intramuscular fat, and in Japan the Tajima-gyu breed is  the only one that can legally be labelled Kobe beef. In the past, purebred Wagyu cattle were exported from Japan to Australia and the U.S. A small number of farmers have bred them in pure bloodlines, while the majority were cross-bred with domestic cattle in order to gain beef that is more similar to what people are used and most importantly to reduce costs. Since the term Kobe or Wagyu is unregulated in the U.S., steaks were often mislabelled. In fact, up until August 27, 2012, the USDA made it illegal to import any kind of Japanese Kobe or Wagyu beef to the U.S. So if you have ever seen something advertised as such, it was simply not true. Instead, they probably served “Domestic Wagyu”, which was more or less purebred Kobe beef. Even today, the American Wagyu Association simply encourages their members to label meet correctly, but there is absolutely no regulation. Since the label, Kobe beef, warrants a higher price than conventional beef, chances are there is a lot of mislabelling is taking place. The only acceptable doneness for a steak is medium rare. If you, or anyone you know, likes your steak cooked to a different level of doneness than medium rare, then you are wrong and: - You've probably never been served a properly prepared steak, - You shouldn't be trusted with a steak knife, - It's likely that you put ketchup on your steak, - Puppies and kittens are probably uncomfortable in your presence. - All of the above. INSTRUCTION: 1. Pull the tendon back and slice the meat away. The tendon is harder than the meat so you can angle your knife into the tendon to cleanly slice it away. 2. Save the tendon, it's great for stock, curry, stew, or oden (Japanese dish) 3. Portion into four thick steak medallions. 4. Steak cooking: 5. Season the steaks with olive oil and Stake Spice. 6. Let the steaks sit for 10 -- 15 minutes at room temperature. 7. Heat the grill as hot as it will go. 8. Place the steaks on one side of the grill and TURN DOWN THE HEAT under the steaks. 9. Close the lid 10. Allow the steaks to cook for about 15 minutes, if you are not sure how hot your grill is or how long it normally takes, check the steaks after 10 minutes. 11. Once the internal temperature has reached about 50 degrees celcius, sear the outside of the steaks on the HOT PART OF THE GRILL. 12. Remove from the grill, allow the steaks TO REST FOR 10 MINUTES (!!!!!!). 13. If you slice the steaks too quickly without allowing the steaks to rest, the juices will run out and the meat might still be rare as the steaks keeps on cooking for some minutes even when taken away from the grill! It's a special-occasion food. When I was a kid, it didn't seem so special. We ate it fairly often, the steaks were of okay to poor quality, and they were always cooked until well done. But since we're all grown-ups here, let's talk about the grown-up way to cook a steak. Buy good steaks and eat them less often. Don't turn steak into a food group. The fastest road to taking something for granted is overconsumption. Steaks taste way better when you eat them less often and buy higher quality meat. Treat it as the very special and occasion-worthy food that it is. In short, steak au poivre is a simple steak that is seared, finished in an oven, then served with an incredible pan sauce made from the fond (the tasty brown bits stuck to the bottom of the pan), stock, cognac, and butter. It is one of the many gifts that the French have given to cuisine. A beautiful piece of meat encrusted with cracked peppercorns and seared to perfection? Okay. You win, France. And steak au poivre is easy. I won't say it's easy as pie because it's easier than pie. We use any cut from the sirloin, tenderloin, or top sirloin, no more than 8 ounces per steak. This is one instance where we actually will use filet mignon, which we usually eschew in favor of steaks with more fat (fat=flavor when it comes to steak). Finally, a good rule of thumb for cooking steaks is 4 minutes per side in a very hot skillet. This will give you a steak with a nice crust on the outside but still pink in the center. There are all sorts of tests for figuring out when a steak is done, none of which I am any good at. I find it much more useful to just set a timer and go from there. We like to serve steak with celery root. Celery root are a really great foil for bloody, rich steak. And if those celery root happen to be crusty? All the better. We've included our simplified recipe for Pommes Anna below. We paired this with a bold Rombauer Cabernet, which accents the flavor of the warming black peppercorns and provides a fruity contrast to this rich dish.
