How to Make Cauliflower Rice | Get the Dish

Yes, you can use cauliflower to make rice! Looking to swap your grains for veggies, but don't want to miss out on all that flavor? Well look no further because we have a delicious and fail-proof cauliflower "rice" that's paleo friendly, vegan, and filled with tons of antioxidant rich nutrients! Cauliflower "Rice" Stir Fry From Whole Living INGREDIENTS 2 cups cauliflower florets (one large head) 2 tablespoons coconut or extra-virgin olive oil, divided 1 sliced red onion, divided 4 minced cloves garlic, divided Coarse salt 1/4 cup low-sodium vegetable broth 1 tablespoon minced fresh ginger 1 thinly sliced small red chili 2 cups broccoli florets 1 julienned large carrot 1/2 red bell pepper, stemmed, seeded, and diced Juice of 1/2 lemon 2 tablespoons shelled pumpkin seeds 2 tablespoons fresh cilantro leaves DIRECTIONS Pulse cauliflower florets in a food processor until finely chopped. Heat one tablespoon coconut oil in a large skillet over medium heat. Add 1/2 sliced red onion and two minced cloves garlic and cook, stirring, until tender, about six minutes. Add cauliflower and season with coarse salt. Stir in vegetable broth and steam, covered, until broth has evaporated and cauliflower is tender, about six minutes. Transfer to a bowl and cover. Wipe pan and heat one tablespoon oil over medium-high heat. Add 1/2 sliced red onion and cook, stirring, until tender, about five minutes. Add two minced cloves garlic, ginger, and chili and cook one minute. Add broccoli florets, carrot, and bell pepper and cook, stirring, until tender, about five minutes. Season with a sprinkle of salt. Remove from heat and add lemon juice. For each serving, top cauliflower with vegetables and sprinkle with one tablespoon pumpkin seeds and one tablespoon cilantro. Here is what you'll need! Cauliflower Rice Serves 1 INGREDIENTS 1 cauliflower head PREPARATION 1. Remove all leaves and cut the cauliflower into small florets. 2. Place the florets in a food processor and blend until they are a rice-like texture. Be careful not to over process or it may turn mushy. Set aside, and drain excess moisture with a towel, if desired. Sesame Chicken Fried “Rice” Serves 3-4 INGREDIENTS 1 chicken breast, diced 2 cups peas & carrots 2 tablespoons soy sauce 2 teaspoons black pepper 1 recipe cauliflower rice 3 eggs, beaten 2 tablespoons sesame seeds PREPARATION 1. In a large saucepan over medium-high heat, cook the chicken until no pink is showing. Add the peas, carrots, soy sauce, and black pepper. 2. Stir until most of the liquid has reduced, then add the cauliflower rice. Cook for about 3-4 minutes until the vegetables and chicken are incorporated evenly into the cauliflower. 3. Spread the rice towards the edge of the pan, creating a well in the center. 4. Pour the beaten eggs into the well, stirring only the eggs until they are cooked. 5. Fold the eggs into the rice, then mix in the sesame seeds. 6. Serve! Beef & Broccoli Fried “Rice” Serves 3-4 INGREDIENTS ¾ pound flank steak, sliced into small strips 2 cups broccoli florets 1 teaspoon salt 1 teaspoon black pepper 2 tablespoons soy sauce 2 tablespoons brown sugar 1 recipe cauliflower rice PREPARATION 1. In a large saucepan over medium-high heat, cook the steak until no pink is showing. Add the broccoli, salt, pepper, soy sauce, and brown sugar. 2. Cook for 4-5 minutes until most of the liquid has reduced. 3. Add the cauliflower rice, then cook for about 3-4 more minutes. 4. Serve! Veggie Fried “Rice” Serves 3-4 INGREDIENTS ½ onion, diced 1 red bell pepper, diced 1 green bell pepper, diced 1 yellow bell pepper, diced 2 cups mushrooms, sliced 2 teaspoons salt 1 teaspoon pepper 1 recipe cauliflower rice 3 eggs, beaten PREPARATION 1. In a large saucepan over medium-high heat, cook onions, bell peppers, mushrooms, salt, and pepper until vegetables are tender but not soft. 2. Add the cauliflower rice. Cook for about 3-4 minutes until the vegetables are incorporated evenly into the cauliflower. 3. Spread the rice towards the edge of the pan, creating a well in the center. 4. Pour the beaten eggs into the well, stirring only the eggs until they are cooked. 5. Fold the eggs into the rice. 6. Serve! Garlic Pork Fried “Rice” Serves 3-4 INGREDIENTS 2 pork chops, diced 4 cloves garlic, finely diced ½ onion, sliced 1 teaspoon salt 1 teaspoon pepper 2 tablespoons soy sauce ¼ cup honey 1 recipe cauliflower rice 3 eggs, beaten ½ cup green onions, sliced PREPARATION 1. In a large saucepan over medium-high heat, cook the pork until no pink is showing, then add the garlic, onions, salt, pepper, soy sauce, and honey, stirring until the sauce has started to brown. 2. Stir until most of the liquid has reduced, then add the cauliflower rice. Cook for about 3-4 minutes until the pork is incorporated evenly into the cauliflower. 3. Spread the rice towards the edge of the pan, creating a well in the center. 4. Pour the beaten eggs into the well, stirring only the eggs until they are cooked. 5. Pulse about 10 times to make into a rice consistency. Heat a frying pan over medium high heat and add the olive oil. Once that starts to shimmer, add the garlic and sauté for 1 minute. Add the cauliflower and stir to coat. Add salt and pepper and cover with a lid. Cook for about 10 minutes and stir once or twice during that time. This dish featured prominently in my weight loss journey by helping me to slowly transition out of eating starchy carbohydrates that are far too commonplace in the Western diet and learning to incorporate healthy, paleo alternatives. It is full of flavour, super simple and fast and stores very well in the fridge for a few days. I should mention that the KitchenAid 9-cup food processor is an incredible tool for this job. If you don't have one, I would recommend getting one. However, you can easily make the rice by hand and a little elbow grease by simply finely chopping the florets. I happened to make this dish for 6 of my closest friends (not paleo people) and they all loved it! I served it with some grilled chicken thighs, my chipotle laced guacamole and a variety of salsas. Cauliflower Rice Ingredients Blanched Cauliflower - 1 Cooked Basmati Rice - 1 bowl Onion - 2 thinly sliced Tomato - 1 chopped Green Chilli - 2 Grated Coconut - 2 tbsp A few Coriander leaves A few Mint leaves Ginger & Garlic paste - 1 tsp Sambar powder - 2 tsp Salt to taste Ghee - 1 cup Whole spices (Cinnamon, Clove & Cardamom) Method: Basic Masala for the Rice 1. Heat Ghee in a pan. Add the whole spices (Cinnamon, Clove & Cardamom), Onions & Green chilli. 2. Saute it till the onion becomes transparent. 3. Add Ginger garlic paste, Tomatoes, grated Coconut, Salt, Sambar powder or Chilli powder & mix it well. 4. Then add mint leaves & mix gently. 5. Turn off the stove, let the mixture cools down & grind it into a fine paste. While grinding pour little water. This makes the basic masala for the rice. Preparing the cauliflower rice 1. Heat Ghee in a same pan & add the blanched Cauliflower. 2. Season it with Salt, Sambar powder or Chilli powder & mix well. Masala flavour has to coat the Cauliflower florets. 3. Now add the grinded Masala to the Cauliflower & gently mix it. 4. Add the Coriander leaves, Mint leaves & mix well. 5. Add the rest of the ghee. Start adding the Cooked Rice in consistency, keep the flame on low & mix it well with the Cauliflower masala. 6. Check for seasoning & completely mix the masala to the rice. 7. Serve the Cauliflower Rice with raita. INGREDIENTS: 24 ounces cauliflower florets 2 tablespoons reduced sodium soy sauce 1 tablespoon sesame oil 1 tablespoon freshly grated ginger 1/4 teaspoon white pepper 2 tablespoons vegetable oil, divided 2 large eggs, beaten 2 cloves garlic, minced 1 onion, diced 6 ounces broccoli florets, chopped 2 carrots, peeled and grated 1/2 cup frozen corn 1/2 cup frozen peas 2 green onions, thinly sliced 1/2 teaspoon sesame seeds DIRECTIONS: 1. To make the cauliflower rice, pulse cauliflower in the bowl of a food processor until it resembles rice, about 2-3 minutes; set aside. 2. In a small bowl, whisk together soy sauce, sesame oil, ginger and white pepper; set aside. 3. Heat 1 tablespoon vegetable oil in a medium skillet over low heat. Add eggs and cook until cooked through, about 2-3 minutes per side, flipping only once. Let cool before dicing into small pieces; set aside. 4. Heat remaining 1 tablespoon vegetable oil in a large skillet or wok over medium high heat. Add garlic and onion to the skillet, and cook, stirring often, until onions have become translucent, about 3-4 minutes. Cauliflower Rice Without Food Processor | How To Make Cauliflower Rice Recipe Cauliflower rice may be hard to prepare without food processor or blender and cutting whole cauliflower head to rice shape with knife may be really nerve-wracking. I don't own any food processor and I don't have patience to cut whole cauliflower head with a knife so I had to find a way around using grater. At first I didn't thought it would work but this simple trick will allow you to easily make rice shaped cauliflower without food processor. I thought it's impossible to grate cauliflower but it really works. It may get little messy because bits of grated cauliflower tends to fly away from you but you can easily clean that up. When cooking cauliflower rice I've tried to stir fry it but I am personally fan of cooked cauliflower rice which is much more similar to classic rice and tastes better when combined with curries or stir fried vegetable and meat. Cooking cauliflower rice is very easy all you have to do is to cover cauliflower with just enough water and bring it to boil for few minutes. I've cooked it for exactly 4 minutes but you can adjust that time. Make sure you are tasting cauliflower during cooking because you are aiming for soft but not overcooked cauliflower. Just be careful when cooking it because grated cauliflower will overcook pretty quickly and cooking it for very short time will leave you with raw cauliflower which is also great but cooked will taste better. Cauliflower rice is great classic rice substitute and it can be served with almost anything from curries, meat & veggies mix to steaks or pasta sauces. This recipe is from PeaceLoveAndLowCarb.com. It has a delicate flavour from the garlic, shallot and mushrooms. It didn’t thicken as much as I’d hoped, but it didn’t matter, it was very tasty and we enjoyed it. Next time I might add an 1/8th tsp of Xanthan gum in the last step. Also, I used beef stock rather than chicken because that’s what I had on hand. Either is fine. To get the 4 cups cauliflower rice, I used half a large head of cauliflower and processed it in my Oskar, which is a small food processor just until it was the size of rice - don’t let it get too fine. Ingredients 2 Tbs. Butter (28.35g) 2 Tbs. Olive Oil6 Cloves Garlic – Minced 4 oz. Onion – Diced (113g) 1 Large Shallot (About 1 oz./28g) 8 oz. Mushrooms – Thinly Sliced (226g) 2 Cups Chicken Stock – Divided (I used beef stock) 4 Cups Cauliflower – Riced 1 Cup Heavy Cream ½ Cup Parmesan Cheese – Grated 2 Tbs. Italian Flat Leaf Parsley – Chopped Sea Salt and Pepper – To taste Directions In a large sauté pan, heat butter and olive oil over medium heat. To the pan, add garlic, onion, and shallot. Sauté until soft and fragrant. About 5 minutes. To the pan, add mushrooms and 1 cup chicken stock. Sauté until mushrooms are soft. About 5 minutes. Add cauliflower and remaining 1 cup chicken stock and stirring frequently, sauté 10 minutes. Reduce heat to low, stir in heavy cream, Parmesan cheese, parsley, sea salt and pepper. Paleo cauliflower rice is a fantastic substitute for normal rice for those on the paleo diet. It is also a great dish for those who aren’t following the Paleolithic diet. Full Recipe: http://paleocrashcourse.com/paleo-cauliflower-rice/ If you’re a fan of curry, stir fry etc. but miss having rice in your paleo version of these then this paleo cauliflower rice is the perfect substitute. It is nice and fluffy and incredibly easy to cook up. It is probably in fact easier to cook up then actual normal rice! The ingredients I use in this recipe are listed below: • 1 Cauliflower • 2 Tsp coconut oil • Salt & Pepper Now as I mention in the video if you don’t have a food processor you can grate the cauliflower by hand. This will take a bit longer and could be a lot messier as well. A good tip would be to grate the cauliflower in a bowl. This will stop the little bits from flying all over your kitchen. If you want a bit more flavor in this paleo cauliflower rice recipe then you can try adding a bit onion and garlic. This is a fantastic idea if you plan on eating the dish not as a side or simply just want the extra flavor. I hope you have enjoyed this video on this fantastic paleo recipe.

Directions: Chop a full head of cauliflower into small pieces. Place in blender on "pulse" until pieces are fine and resemble grains of rice. Heat up two tablespoons of olive oil in a pan and cook the cauliflower for 3-4 minutes. Finally, sprinkle salt and pepper. You can use cauliflower rice as a regular side or as the base in a stir-fry. It’s cauliflower rice. So, I’m going to show you how to make cauliflower rice and how to make cauliflower couscous. Have you tried cauliflower rice? I understand why a lot of people are kind of obsessed with it because you can use a healthy vegetable like cauliflower in place of rice in all of your rice recipes. And, it’s lower calorie, it’s lower carb, it’s getting fiber and better nutrition into your diet, and it’s paleo and Whole 30, if you’re doing any of those diets. I totally understand. It’s not quite as good as rice, in my opinion, but it’s a pretty dang decent substitute for rice. You can either make it yourself—I’m going to show you how easy it is to make it yourself, with or without the food processor—or you can even buy it in the produce section now, you can buy it frozen, you can make it yourself and freeze it. Usually one regular size head of cauliflower makes about four cups of cauliflower rice, and that’s often more than you need for one recipe. What we’re going to do to make cauliflower rice in the food processor is we’re going to cut the cauliflower into florets. And to make cauliflower couscous, we’re going to use this blade in the bottom of the food processor. And to make cauliflower rice, so it’s more of a rice consistency with bigger grains, I guess it would be, we’re going to use this attachment. One thing I made sure to do last year is get much more comfortable with just getting my food processor set up a lot more quickly so I wouldn’t be so hesitant to use it when I need it. So that’s something I recommend if you cook a lot like I do. And the other thing—let me just show you how easy it is to do it on a box grater. We’re not going to do it, but let me just show you how you could do it this way. You just take your box grater, lay it down, take your big old head of cauliflower, which you’ve already washed, and just slide it up and down the box grater. And sure enough, you have cauliflower rice! So if you don’t want to get your food processor out, you don’t need to. Once you have your cauliflower rice, whether you make it yourself, with a food processor, without a food processor, or you buy it, what do you do with it? Well, what you want to do is you can steam it and use it like rice and just put your favorite dishes that you would serve over white or brown rice. So you can steam it in the microwave or in a pan. Or, if you’re making something like fried rice, you can do that right in the pan when you’re cooking it. So it’s really easy to use. And what I’m going to do is I’m going to link to some of my favorite cauliflower rice recipes from some of my friends on the internet that I know I can trust. So there will some great recipes to go along with this video underneath this video. Heat oil for deep frying, add cleaned cauliflower in hot oil and fry till golden brown. Drain and set aside. In a pressure cooker or a regular pot with a tight fitting lid. Heat oil and ghee. Add in all whole spices and fry for a min. Add in onions and cook till golden brown. Now add in coriander, mint and tomatoes and mix well. Cook that for few mins. Add in all spice powders and salt and mix well. Add in the fried gobi and toss well. Add in rice and toss well in the masala. Now add in water and mix well. Bring it to a boil and simmer on a very very low heat for 10 to 15 mins. Now let the pressure go by itself and open the cooker. Now fluff the rice and serve.

GRAIN FREE CAULIFLOWER RICE Ingredients 1 cup grated cauliflower 1 cup grated broccoli 1 tablespoon olive oil 1 tablespoon chopped garlic Salt to taste Crushed black peppercorns to taste ½ tablespoon chopped fresh parsley Method 1. Boil 2-3 cups water in a deep non-stick pan. Add cauliflower and broccoli, mix, cover and cook for 1-2 minutes. Strain and cool the cauliflower and broccoli to room temperature. 2. Heat olive oil in a non-stick pan. Add garlic and sauté till light brown. Add the blanched cauliflower and broccoli, mix well and sauté for 1-2 minutes. 3.
