CHEESY EGG CUPS Servings: 12 INGREDIENTS 15 ounces frozen hash browns, thawed 1½ cups cheddar cheese, shredded 1 teaspoon salt ½ teaspoon pepper 1 tablespoon oil 8 eggs 3 slices bacon, cooked and crumbled Salt, to taste Pepper, to taste PREPARATION Preheat oven to 425°F/220°C. In a bowl, combine hash browns, cheese, salt, pepper, and oil. Pack into the bottom half of the cups of a greased muffin tin. Bake for 15-20 minutes, until golden brown. In a separate bowl, whisk eggs with the bacon, salt, and pepper. Pour into the top half of each muffin cup. Bake 15 minutes. Freeze up to 1 month. Enjoy! Drain shells in a colander and run them under cold water to stop the cooking process. Set aside. In a large skillet heat olive oil. Add garlic and cook for 30 seconds. Add spinach and cook until it’s completely wilted. Allow spinach to cool and then finely chop it. In a large bowl combine ricotta cheese, eggs, parmesan, herbs, salt and pepper. Stir well. Add spinach and stir until combined. Pour a layer of tomato sauce on the bottom of a casserole dish or baking dish. Stuff shells with cheese filling and arrange shells in the dish. Cover shells with the remaining tomato sauce and sprinkle with mozzarella cheese. Freeze for up to 3 months. To cook, thaw the shells overnight in the refrigerator and bake them, covered with aluminum foil, for 30 minutes at 375°F or until they’re heated through. Enjoy! Black Bean & Sweet Potato Enchiladas 1 cup cooked rice ½ red onion, peeled and diced 1 red bell pepper, peeled and diced 1 large sweet potato, peeled and diced 1 can black beans, rinsed and drained 2½ cups salsa OR enchilada sauce 1½ cup cheddar cheese, shredded 12-16 tortillas Preheat oven to 375°F. Toss sweet potato with olive oil, salt and pepper and pour it onto a baking sheet. Bake for 15 minutes. After 15 minutes, remove sweet potato from the oven, add red onion and bell pepper, toss well and return to the oven for an additional 15 minutes. Pour mixture into a large bowl and add cooked rice, black beans and 1 cup of salsa. Mix well and set aside. Prepare a large casserole or baking dish by pouring 1 cup of salsa or enchilada sauce on the bottom of it and spreading it evenly. Gently heat tortillas so that they’re more flexible and easy to work with. Stuff each tortilla with 1/3 cup of filling and a sprinkle of cheddar cheese and roll them. Place each roll seam-side-down in the baking dish. Top with remaining salsa and cheddar cheese. Cover with aluminum foil and freeze for up to 3 months. To cook, thaw the enchiladas overnight in the refrigerator and bake them, covered with aluminum foil, for 30 minutes at 375°F or until they’re heated through. Enjoy! Twice-Baked Broccoli & Cheddar Potatoes 4 russet potatoes, washed and dried 2 tbsp olive oil sea salt ½ cup sour cream 1 cup cheddar, shredded 2 cups broccoli florets, lightly steamed salt and pepper Preheat your oven to 425°F. Wash potatoes thoroughly with a vegetable brush. Dry them well. Rub each potato with olive oil and season them with sea salt. Poke them a few times with the tines of a fork. Place them on a baking sheet and bake them for 1 hour or until they’re cooked through, flipping them once during cooking. Remove the potatoes from the oven and allow them to cool until they can be handled. Cut each potato in half lengthwise and scoop out the cooked potato leaving a ¼ border around the skin. Set skins aside. In a large bowl mash potatoes with sour cream, salt and pepper. Stir in shredded cheddar and steamed broccoli florets. Scoop filling into each potato skin. To freeze, place stuffed potatoes in the freezer for 20-30 minutes. Remove them from the freezer, wrap them individually in aluminum foil and place them in a zipper bag. Freeze for up to 3 months, To reheat, simply place foiled wrapped potato onto a baking sheet and bake for 30-40 minutes or until heated through. Let me know what you think and if you give them a try! xoxo SUBSCRIBE: https://www.youtube.com/user/honeysucklecatering?sub_confirmation=1 Each Recipe makes 3 servings and can last a few days in the refrigerator MONDAY - Skillet Sausage & Eggs with Roasted Potatoes - 5-6 red potatoes, diced - 1 green bell pepper, diced - 1/2 yellow onion, diced - 2 tbsp olive oil - 1 tsp kosher salt - cracked black pepper - 6 eggs - 1/2 lb pork sausage - cheddar cheese - salsa - sliced green onions In a large bowl add the diced potatoes, green bell peppers, and onions along with olive oil, salt, and pepper. Mix until everything is coated evenly. Pour out onto a baking sheet lined with parchment paper and roast at 450ºF for 35-40 minutes, taking it out halfway through to mix. In a heavy-bottomed skillet cook the sausage until well done, then add 6 whisked eggs and cook until fluffy. Serve in a bowl with shredded cheddar cheese, salsa, and sliced green onions. TUESDAY - Sweet Potato, Kale, Black Bean Hash with Egg - 1/2 yellow onion, diced - 1 sweet potato, diced - chopped dino kale (4 leaves) - 1 tbsp olive oil - 1/4 chicken broth - 1 cup black beans - 2 tsp chili powder - 1/2 tsp cumin - 1/4 tsp smoked paprika - 1/4 tsp garlic powder - 1 tsp kosher salt - 1/4 chicken broth - 1 fried egg - sriracha In a heavy-bottomed pan heat the olive oil and add the onions and saute for 2 min until fragrant. Add sweet potatoes and 1/4 chicken broth and let cook 10 minutes, stirring occasionally. Add Kale, black beans, and the spices along with the rest of the chicken broth. Cook down until the potatoes are tender and crispy (5 min). Serve in a bowl with a fried egg and Sriracha. WEDNESDAY (Humpday) - Chia Seed Pudding with Banana & Coconut - 1 overripe banana - 2 tbsp maple syrup - 1/2 tsp vanilla - 1/2 cup chia seeds - 2 cups coconut milk - fresh strawberries - fresh blueberries - coconut chips - sliced almonds In a large bowl mash the banana then add the maple syrup and vanilla. Mix again the add the chia seeds, mix, then stir in the coconut milk while mixing. Portion out into bowls or tupperware and chill 4 hours-overnight. Top with fresh berries and coconut flakes, almonds. THURSDAY - Savory Bacon, Eggs & Cheese Oatmeal - 2 strips sliced bacon - 1 tbsp bacon fat - 1/4 cup diced onions - 1/2 cup rolled oats - 3/4 cup water - 3/4 cup milk - 1/4 cup shredded cheddar cheese - more cheese - fried egg - sliced green onions In a pan cook the bacon until crispy, saving 1 tbsp of the rendered fat. Then in the same pan cook the diced onions until fragrant, about 2 min. Add the oatmeal, water, and milk. Cook on med-low for 10 min until the liquid is completely absorbed. Add the 1/4 cup cheese and mix in. Top with the egg, more cheese, and green onions. FRIDAY - Raspberry Cheesecake Overnight Oats - 1/2 cup fresh, chopped raspberries - 2 tbsp cream cheese, room temp - 1/2 cup plain greek yogurt - 2 tbsp maple syrup - 1/2 tsp vanilla - 1/2 cup milk - 1/2 cup rolled oats - 1 tbsp flax seed meal - roasted pistachios - fresh raspberries - lemon zest In a bowl mix the cream cheese, greek yogurt, maple syrup, and vanilla. While still mixing, incorporate the milk, rolled oats, flax seed meal, and chopped raspberries. Portion out into containers and chill overnight. Serve with pistachios, fresh raspberries, and lemon zest. Enjoy!!! Add chicken, rice, soup, stock, salt, and pepper. Mix thoroughly, and cover with foil. Bake for 30 minutes. Remove foil, top with bread crumbs if desired, and bake an additional 10 minutes. Or, bake for 30 minutes, let cool completely, cover, and freeze up to 2 months. To reheat, let thaw in the refrigerator during the day. Bake as directed above. Enjoy! Spray muffin pan with oil (I use coconut oil) and fill with cooked oatmeal and then add your favorite toppings. Cover and place in freezer overnight and then pop out using a butter knife. I store these in freezer bags and to serve I will place 2-3 in a bowl with about a 1/4 cup milk or water to rehydrate them and pop in the microwave for 2-3 minutes, checking and stirring every minute. ***My Favorite Vegetable Soup*** Adopted from Alton Brown's recipe, but I substitute with my favorite veggies and/or what I have on hand http://www.foodnetwork.com/recipes/alton-brown/garden-vegetable-soup-recipe.print.html# 4 tablespoons olive oil 2 cups chopped leeks, white part only 2 tbs minced garlic 2 cups carrots, peeled and chopped 2 cups peeled and diced potatoes 2 quarts chicken or vegetable broth 16 oz can diced tomatoes 2 cups celery seasonings Cook veggies for 5-8 mins then add stock, increase the heat to high, and bring to a simmer. Once simmering, add the tomatoes. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 30 minutes. Remove from heat and add parsley. Season, to taste. You can also add beans or meat of choice to make this even more filling/substantial. TO STORE (this works with any soup) Allow soup to come to room temperature and put into plastic cups. Cover and freeze. To serve I remove from the freezer and allow it to thaw for 5 minutes and then push on the bottom of the cup to pop it out. You can reheat on the stovetop or in the microwave. ***Corn & Bean Salad*** 1 bag frozen corn (thawed) 1 bag frozen green beans (thawed) 1 can black beans 1 can kidney beans I combine all ingredients into a tupperware container and store this in my refrigerator - when i'm ready to serve I put portion in a separate bowl and add my favorite dressing (Annie's Chile Lime) - but any dressing would work! Italian dressing is also delicious with this. ***Lemon Chicken with Asparagus*** Full recipe can be found here: https://bakebroilandblog.wordpress.com/2014/05/26/lemon-chicken-asparagus-quinoa-bowl/ ***Turkey Meatballs*** These meatballs are a mix between a meatball and a meatloaf - the rice inside makes them moist and fluffy!! 1 lb ground turkey (or meat of choice) 1/2 grated large white onion (TIP, chew a piece of gum while doing this to minimize eye irritation!) 2 cloves chopped garlic 1 egg 1/3 cup rice (if using raw rice, the cooking time will be longer, if using cooked rice the cooking time is much shorter. I use long grain brown rice. You can also use breadcrumbs for a more traditional meatball) Seasoning -- salt, pepper, Italian seasoning Combine and roll into balls (approx the size of golf balls). Place into baking dish that's been saturated in marinara sauce and cover the balls completely in the sauce. Cover with foil and bake at 350. If using cooked rice or breadcrumbs, cooking time is 20-30 mins, if cooking with raw rice cooking time is 1.5-2 hours, you will want to check on them as it may vary depending on the type of rice used. I like to eat these with spaghetti squash. I wash and puncture a whole squab wit a knife 10-15 times and place in the oven at 350 for 1-1.5 hours. These meatballs store well in the freezer or refrigerator and can be used a variety of different meals including ---with your favorite pasta ---with quinoa or other grain ---on a sandwich or sub ---wrapped in lettuce with sauce ---with a side of veggies **About Me** Hi + welcome!! FROZEN PARFAIT CUPS Ingredients: 3 tablespoons granola, crushed small 5.3 oz Vegan Yogurt 1 large strawberry, chopped Method: 1. Divide the granola on the bottom of two jumbo silicone muffin molds. (Or, divide the yogurt). 2. Scoop yogurt on top and tap several times (or top with granola and tap to secure the granola) 3. Sprinkle with strawberry pieces. Freeze until solid. Thaw for 3 minutes before eating. Nutrition Info: Calories: 197 | Protein: 2g | Fat: 5g | Net Carbs: 34g | Fiber: 3.5g #2. PANCAKE IN A MUG Ingredients: 5 tablespoons oat, gluten-free or all-purpose flour 1 egg 3 tablespoons almond milk 1 tablespoon maple syrup, or sweetener of choice, to taste 1/2 tablespoon ghee or coconut oil, melted 1/4 teaspoon baking powder Pinch salt 2 tablespoons blueberries plus more for topping Method: 1. Place in fridge overnight or until ready to prepare. 3. Remove lid, place in microwave and heat for about 2 minutes, watching for overflow. RECIPE: Make-Ahead Egg & Tomato Strata Servings: 4 INGREDIENTS 10 large eggs ½ cup 2% milk 1 teaspoon kosher salt 4 slices sprouted grain bread, cut in rough 1-inch squares 1 pint (2 cups) cherry tomatoes, halved 1 15-ounce can chickpeas, rinsed and drained ¼ cup basil leaves, roughly chopped 4 ounces fresh goat cheese, crumbled 1 tablespoon extra virgin olive oil INSTRUCTIONS In a large mixing bowl, whisk together the eggs, milk, and salt. Add the bread and toss so that all of the bread is saturated with liquid. Refrigerate the mixture and let it sit for at least 2 hours and up to overnight. When you’re ready to bake the strata, preheat the oven to 375°F. Take the egg and bread mixture out of the fridge and add the tomatoes, chickpeas, basil, and goat cheese to the mixing bowl. Toss everything together to thoroughly combine. Heat olive oil in a large, oven-safe skillet over medium heat. Swirl the oil to coat the bottom and at least an inch up the sides. Pour the combined ingredients into the skillet, then use a spatula to spread everything evenly over the skillet, pressing the bread into a flat, even layer. Bake the strata in the preheated oven until the eggs are completely set and the edges are golden brown, 35 to 40 minutes. Take the strata out of the oven and let it sit in the pan for at least 15 minutes. Flip the cooled strata out of the pan and onto a cutting board, then slice it into four portions. Eat immediately, or let the strata cool completely before storing in an airtight container in the fridge. To reheat the strata: Microwave for 1 minute on high, or reheat in a 375°F oven for 5 minutes, just to heat through. Music provided by Warner Chappell Inc. Used with permission

If you're looking for a way to have a delicious, hot breakfast even on the busiest of mornings, these Breakfast Quesadillas are the answer. Make them ahead, mix up the filling to keep things fresh, freeze and cook in the morning. Subscribe to WUM for new vids M-W-F! http://bit.ly/sub2moms INGREDIENTS - tortillas - scrambled eggs - sausage (or turkey bacon, etc) - shredded cheese (I used a Mexican blend) - avocado slices for the top - Optional: spinach, broccoli, any typical omelette filling DIRECTIONS 1) Place tortilla on plastic wrap. Fill one half with eggs, sausage and cheese (being generous with cheese). 2) Using plastic wrap, fold the tortilla in half and wrap. Store in freezer. 3) When you're ready to eat, you can either thaw in refrigerator overnight OR microwave at 50% power for 1:30. Cook your quesadilla at 350 degrees for 6 minutes per side OR cook in a greased skillet. 4) Top with avocado (and any other toppings you like). Enjoy! RECIPE OR INSTRUCTION: Make-Ahead Frozen Breakfast Burritos Servings: 16 to 20 INGREDIENTS 1 pound bacon 1 pound Italian sausage, ground 2 pound frozen hash browns 1 dozen large eggs ¼ teaspoon salt ¼ teaspoon pepper 2 dozen 13 inch flour tortillas 1 cup cheddar cheese, shredded 1 cup queso fresco, crumbled 1 cup cherry tomatoes, diced ½ cup spinach, cut into thin ribbons 15 ounce canned black beans PREPARATION 1. Cook bacon in strips until crispy. Set aside. 2. Cook Italian sausage until brown. Set aside. 3. Cook frozen hash browns until brown and crispy. Set aside. 4. Scramble eggs. Add salt and pepper. Set aside. 5. Place cheddar cheese, queso fresco, cherry tomatoes, spinach, and black beans into separate bowls. 6. Place flour tortilla down and begin building your burritos. Have fun mixing and matching ingredients. 7. Wrap completed burritos in parchment paper and store in freezer for up to one month. 8. Get the recipe: http://www.foodnetwork.com/recipes/ina-garten/cauliflower-gratin-recipe-1917463 Cauliflower Gratin Recipe courtesy of Ina Garten Total: 50 min Prep: 20 min Cook: 30 min Yield: 4 to 6 servings Level: Easy Ingredients 1 (3-pound) head cauliflower, cut into large florets Kosher salt 4 tablespoons (1/2 stick) unsalted butter, divided 3 tablespoons all-purpose flour 2 cups hot milk 1/2 teaspoon freshly ground black pepper 1/4 teaspoon grated nutmeg 3/4 cup freshly grated Gruyere, divided 1/2 cup freshly grated Parmesan 1/4 cup fresh bread crumbs Directions Preheat the oven to 375 degrees F. Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain. Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan. Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. I have an easy Crockpot Breakfast Casserole that you can make ahead the night before Christmas morning. https://youtu.be/Dfy-J99TdlY DIY Table Riser: https://www.youtube.com/watch?v=VP-c1u54kXI Breakfast Casserole: INGREDIENTS For Regular Size Slow Cookers 4 cups (about 5 slices) white bread, cubed 1 box (10 oz.) frozen spinach, thawed, squeezed dry 1/2 pound (about 8 strips) bacon, cooked and crumbled 2 cups shredded cheddar cheese, divided 1 small red bell pepper, chopped (about 1 ½ cups) 1/4 cup onion, chopped 1 can (10.75 oz) cream of celery soup 5 eggs 1/2 cup evaporated milk 1/2 teaspoon each salt and dry mustard 1/8 teaspoon pepper 1 reynolds kitchens™ slow cooker liner, regular size For Small Size Slow Cookers half each ingredient listed for regular size slow cookers DIRECTIONS STEP 1 LINE a 5- to 6-quart slow with a Regular size Reynolds KITCHENS™ Slow Cooker Liner. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl. STEP 2 MIX bread, spinach, bacon, 1 2/3 cups cheese, bell pepper and onion in a large bowl; pour into lined- slow cooker. Whisk together the soup, eggs, milk, salt, dry mustard and pepper in the large bowl. Pour egg mixture over bread mixture; stir gentle with a wooden or plastic spoon to combine. Place lid on slow cooker. Refrigerate at least 3 hours or overnight. STEP 3 COOK 6 to 7 hours on LOW OR 3 to 3 1/2 hours on HIGH or until casserole is at least 160°F. STEP 4 CAREFULLY remove lid to allow steam to escape. Sprinkle with remaining 1/3 cup cheese. Let set with lid off for 15 minutes until cheese is melted. Serve casserole directly from lined slow cooker. Remove all food and cool slow cooker completely before removing liner from slow cooker. Do not lift or transport liner with food inside. TIP For fewer servings, use half of each ingredient and cook in a 2 ½ to 3-quart slow cooker lined with a Small size Reynolds KITCHENS™ Slow Cooker Liner.

The ingredients are then baked in the oven for 20 minutes until the omelet cups resemble muffins. Even if your kids won’t touch an omelet, the muffin appeal of the omelet cup is something a child just can’t resist. Something is triggered in a child’s brain when they see a muffin shape. Muffin = YUMMY! Must eat! I have absolutely zero scientific evidence for this statement, just many years of observing my own two kids. PS: Muffins seem to have the same effect on husbands. Omelet cups are the ultimate make-ahead busy morning meal or lunch. Omelet cups can be frozen for up to 2-3 months (although three months gets a bit iffy with texture and taste) or stored in the fridge for 3-4 days. Just reheat the egg cups and serve. Here is what you'll need! MAKE-AHEAD LASAGNA ROLL-UPS Servings: 6 INGREDIENTS 16 lasagna noodles 1 pound ground beef ½ pound ground pork sausage ½ onion, chopped 1 teaspoon salt ½ teaspoon pepper 3 cups marinara, divided 30 ounces ricotta cheese 2 cups fresh baby spinach 1 tablespoon Italian seasoning 1 egg 1 cup shredded mozzarella 1 cup parmesan PREPARATION Preheat oven to 350°F/180°C. Cook lasagna noodles al dente. In a skillet over medium heat, cook beef, sausage, onion, salt, and pepper until fully cooked. Add spinach and 1 cup of marinara sauce, and let simmer. Remove from heat. In a bowl, combine ricotta, Italian seasoning, and egg. Spread mixture over each lasagna noodle, then top with meat mixture. Roll up tightly and place in a disposable casserole dish. Let cool completely, then freeze up to 4 days. To bake, let thaw in the refrigerator during the day. Preheat oven to 350˚F/180˚C . Top with remaining 2 cups of marinara, cover tightly, and bake for 40 minutes. Uncover, and top with mozzarella and parmesan. Broil an additional 5 minutes or until cheese is melted to your preference. Enjoy!
