Drain shells in a colander and run them under cold water to stop the cooking process. Set aside. In a large skillet heat olive oil. Add garlic and cook for 30 seconds. Add spinach and cook until it’s completely wilted. Allow spinach to cool and then finely chop it. In a large bowl combine ricotta cheese, eggs, parmesan, herbs, salt and pepper. Stir well. Add spinach and stir until combined. Pour a layer of tomato sauce on the bottom of a casserole dish or baking dish. Stuff shells with cheese filling and arrange shells in the dish. Cover shells with the remaining tomato sauce and sprinkle with mozzarella cheese. Freeze for up to 3 months. To cook, thaw the shells overnight in the refrigerator and bake them, covered with aluminum foil, for 30 minutes at 375°F or until they’re heated through. Enjoy! Black Bean & Sweet Potato Enchiladas 1 cup cooked rice ½ red onion, peeled and diced 1 red bell pepper, peeled and diced 1 large sweet potato, peeled and diced 1 can black beans, rinsed and drained 2½ cups salsa OR enchilada sauce 1½ cup cheddar cheese, shredded 12-16 tortillas Preheat oven to 375°F. Toss sweet potato with olive oil, salt and pepper and pour it onto a baking sheet. Bake for 15 minutes. After 15 minutes, remove sweet potato from the oven, add red onion and bell pepper, toss well and return to the oven for an additional 15 minutes. Pour mixture into a large bowl and add cooked rice, black beans and 1 cup of salsa. Mix well and set aside. Prepare a large casserole or baking dish by pouring 1 cup of salsa or enchilada sauce on the bottom of it and spreading it evenly. Gently heat tortillas so that they’re more flexible and easy to work with. Stuff each tortilla with 1/3 cup of filling and a sprinkle of cheddar cheese and roll them. Place each roll seam-side-down in the baking dish. Top with remaining salsa and cheddar cheese. Cover with aluminum foil and freeze for up to 3 months. To cook, thaw the enchiladas overnight in the refrigerator and bake them, covered with aluminum foil, for 30 minutes at 375°F or until they’re heated through. Enjoy! Twice-Baked Broccoli & Cheddar Potatoes 4 russet potatoes, washed and dried 2 tbsp olive oil sea salt ½ cup sour cream 1 cup cheddar, shredded 2 cups broccoli florets, lightly steamed salt and pepper Preheat your oven to 425°F. Wash potatoes thoroughly with a vegetable brush. Dry them well. Rub each potato with olive oil and season them with sea salt. Poke them a few times with the tines of a fork. Place them on a baking sheet and bake them for 1 hour or until they’re cooked through, flipping them once during cooking. Remove the potatoes from the oven and allow them to cool until they can be handled. Cut each potato in half lengthwise and scoop out the cooked potato leaving a ¼ border around the skin. Set skins aside. In a large bowl mash potatoes with sour cream, salt and pepper. Stir in shredded cheddar and steamed broccoli florets. Scoop filling into each potato skin. To freeze, place stuffed potatoes in the freezer for 20-30 minutes. Remove them from the freezer, wrap them individually in aluminum foil and place them in a zipper bag. Freeze for up to 3 months, To reheat, simply place foiled wrapped potato onto a baking sheet and bake for 30-40 minutes or until heated through. In a bowl, combine hash browns, cheese, salt, pepper, and oil. Pack into the bottom half of the cups of a greased muffin tin. Bake for 15-20 minutes, until golden brown. Let me know what you think and if you give them a try! xoxo SUBSCRIBE: https://www.youtube.com/user/honeysucklecatering?sub_confirmation=1 Each Recipe makes 3 servings and can last a few days in the refrigerator MONDAY - Skillet Sausage & Eggs with Roasted Potatoes - 5-6 red potatoes, diced - 1 green bell pepper, diced - 1/2 yellow onion, diced - 2 tbsp olive oil - 1 tsp kosher salt - cracked black pepper - 6 eggs - 1/2 lb pork sausage - cheddar cheese - salsa - sliced green onions In a large bowl add the diced potatoes, green bell peppers, and onions along with olive oil, salt, and pepper. Mix until everything is coated evenly. Pour out onto a baking sheet lined with parchment paper and roast at 450ºF for 35-40 minutes, taking it out halfway through to mix. In a heavy-bottomed skillet cook the sausage until well done, then add 6 whisked eggs and cook until fluffy. Serve in a bowl with shredded cheddar cheese, salsa, and sliced green onions. TUESDAY - Sweet Potato, Kale, Black Bean Hash with Egg - 1/2 yellow onion, diced - 1 sweet potato, diced - chopped dino kale (4 leaves) - 1 tbsp olive oil - 1/4 chicken broth - 1 cup black beans - 2 tsp chili powder - 1/2 tsp cumin - 1/4 tsp smoked paprika - 1/4 tsp garlic powder - 1 tsp kosher salt - 1/4 chicken broth - 1 fried egg - sriracha In a heavy-bottomed pan heat the olive oil and add the onions and saute for 2 min until fragrant. Add sweet potatoes and 1/4 chicken broth and let cook 10 minutes, stirring occasionally. Add Kale, black beans, and the spices along with the rest of the chicken broth. Cook down until the potatoes are tender and crispy (5 min). Serve in a bowl with a fried egg and Sriracha. WEDNESDAY (Humpday) - Chia Seed Pudding with Banana & Coconut - 1 overripe banana - 2 tbsp maple syrup - 1/2 tsp vanilla - 1/2 cup chia seeds - 2 cups coconut milk - fresh strawberries - fresh blueberries - coconut chips - sliced almonds In a large bowl mash the banana then add the maple syrup and vanilla. Mix again the add the chia seeds, mix, then stir in the coconut milk while mixing. Portion out into bowls or tupperware and chill 4 hours-overnight. Top with fresh berries and coconut flakes, almonds. THURSDAY - Savory Bacon, Eggs & Cheese Oatmeal - 2 strips sliced bacon - 1 tbsp bacon fat - 1/4 cup diced onions - 1/2 cup rolled oats - 3/4 cup water - 3/4 cup milk - 1/4 cup shredded cheddar cheese - more cheese - fried egg - sliced green onions In a pan cook the bacon until crispy, saving 1 tbsp of the rendered fat. Then in the same pan cook the diced onions until fragrant, about 2 min. Add the oatmeal, water, and milk. Cook on med-low for 10 min until the liquid is completely absorbed. Add the 1/4 cup cheese and mix in. Top with the egg, more cheese, and green onions. FRIDAY - Raspberry Cheesecake Overnight Oats - 1/2 cup fresh, chopped raspberries - 2 tbsp cream cheese, room temp - 1/2 cup plain greek yogurt - 2 tbsp maple syrup - 1/2 tsp vanilla - 1/2 cup milk - 1/2 cup rolled oats - 1 tbsp flax seed meal - roasted pistachios - fresh raspberries - lemon zest In a bowl mix the cream cheese, greek yogurt, maple syrup, and vanilla. While still mixing, incorporate the milk, rolled oats, flax seed meal, and chopped raspberries. Portion out into containers and chill overnight. Serve with pistachios, fresh raspberries, and lemon zest. Enjoy!!! Allow oats to remain runny since they will soak up the water as they freeze. Grease 2 6-well jumbo muffin tins. Scoop out oats with an ice cream scoop, adding 2 scoops per well. Place topping of choice on top. Cover with foil and freeze. Once frozen, place muffin tin in a 13 x 9 casserole tin with 2 inches of warm water. After 5-8 minutes loosen with a sharp knife and pop out the cups. Store in freezer containers, lined with wax paper. To rewarm, place oatmeal cup in a bowl. Add 2 tsp of water on top, microwave for 2:00-3:00 until oats loosen and are hot. Fluff with a fork and serve! Top with a pat of butter, drizzle of honey or brown sugar. ABOUT THIS CHANNEL Hi! I want you to eat breakfast! It'll energize you for the rest of the day! But if you have no time and are on a budget, I feel ya! So here are 3 super duper easy and cheap, affordable, and healthy breakfast ideas that you can make the night before and have in the morning on the go! #1. FROZEN PARFAIT CUPS Ingredients: 3 tablespoons granola, crushed small 5.3 oz Vegan Yogurt 1 large strawberry, chopped Method: 1. Divide the granola on the bottom of two jumbo silicone muffin molds. (Or, divide the yogurt). 2. Scoop yogurt on top and tap several times (or top with granola and tap to secure the granola) 3. Sprinkle with strawberry pieces. Freeze until solid. Thaw for 3 minutes before eating. Nutrition Info: Calories: 197 | Protein: 2g | Fat: 5g | Net Carbs: 34g | Fiber: 3.5g #2. PANCAKE IN A MUG Ingredients: 5 tablespoons oat, gluten-free or all-purpose flour 1 egg 3 tablespoons almond milk 1 tablespoon maple syrup, or sweetener of choice, to taste 1/2 tablespoon ghee or coconut oil, melted 1/4 teaspoon baking powder Pinch salt 2 tablespoons blueberries plus more for topping Method: 1. Coat a mug or small bowl with cooking spray and set aside. 2. In a small bowl, add the flour, egg, milk and syrup and mix until combined. Stir in the ghee, baking soda and salt, then fold in the blueberries. Add to the mug. 3. When ready to cook, take off the lid and microwave for 1:30-2 minutes, watching carefully for overflow. Cook until set. Top with more blueberries, and serve. Nutrition Info: Calories: 355 | Protein: 13g | Fat: 15g | Net Carbs: 38g | Fiber: 5g #3. OMELETTE IN A MUG Ingredients: 2 eggs 1 egg white 1/3 cup mushrooms, chopped 1/4 cup red bell pepper, diced 2 tablespoons red onion, minced Pinch of salt Pinch of garlic powder 1/4 cup shredded cheese or vegan cheese, divided 1 tablespoon avocado, optional Method: 1. Whisk together all but half the cheese in a bowl. Coat a 12 ounce or larger Mason jar with cooking spray. Pour eggs inside and seal with a lid unless making immediately. 2. Place in fridge overnight or until ready to prepare. 3. Remove lid, place in microwave and heat for about 2 minutes, watching for overflow. If the eggs puff up too much, simply open the microwave for 5 seconds, then heat again until no liquid remains. Top with remaining cheese, and serve. Top with avocado, if using. Remove from heat, add: 1 tsp Vanila 1/2 tsp baking soda Stir. It will foam up. Let sit for a few minutes, then serve warm. Store in the fridge. RECIPE OR INSTRUCTION: Make-Ahead Frozen Breakfast Burritos Servings: 16 to 20 INGREDIENTS 1 pound bacon 1 pound Italian sausage, ground 2 pound frozen hash browns 1 dozen large eggs ¼ teaspoon salt ¼ teaspoon pepper 2 dozen 13 inch flour tortillas 1 cup cheddar cheese, shredded 1 cup queso fresco, crumbled 1 cup cherry tomatoes, diced ½ cup spinach, cut into thin ribbons 15 ounce canned black beans PREPARATION 1. Cook bacon in strips until crispy. Set aside. 2. Cook Italian sausage until brown. Set aside. 3. Cook frozen hash browns until brown and crispy. Set aside. 4. Scramble eggs. Add salt and pepper. Set aside. 5. Place cheddar cheese, queso fresco, cherry tomatoes, spinach, and black beans into separate bowls. 6. Place flour tortilla down and begin building your burritos. Make-Ahead Chicken & Rice Bake Servings: 12 INGREDIENTS 1 tablespoon butter 1 medium onion, diced 1 clove garlic, minced 4 carrots, finely diced 4 stalks celery, sliced 1 rotisserie chicken, shredded 1 cup uncooked, long grain white rice 1 can cream of chicken soup 3 cups chicken stock Salt, to taste Pepper, to taste Bread crumbs, optional PREPARATION Preheat oven to 425°F/220°C. In a skillet, melt butter, and cook onion, garlic, carrots, and celery until tender. Transfer to a 9x13 disposable casserole dish, or split among 2 smaller dishes. The ingredients are then baked in the oven for 20 minutes until the omelet cups resemble muffins. Even if your kids won’t touch an omelet, the muffin appeal of the omelet cup is something a child just can’t resist. Something is triggered in a child’s brain when they see a muffin shape. Muffin = YUMMY! Must eat! I have absolutely zero scientific evidence for this statement, just many years of observing my own two kids. PS: Muffins seem to have the same effect on husbands. Omelet cups are the ultimate make-ahead busy morning meal or lunch. Omelet cups can be frozen for up to 2-3 months (although three months gets a bit iffy with texture and taste) or stored in the fridge for 3-4 days. Just reheat the egg cups and serve. If you're looking for a way to have a delicious, hot breakfast even on the busiest of mornings, these Breakfast Quesadillas are the answer. Make them ahead, mix up the filling to keep things fresh, freeze and cook in the morning. Subscribe to WUM for new vids M-W-F! http://bit.ly/sub2moms INGREDIENTS - tortillas - scrambled eggs - sausage (or turkey bacon, etc) - shredded cheese (I used a Mexican blend) - avocado slices for the top - Optional: spinach, broccoli, any typical omelette filling DIRECTIONS 1) Place tortilla on plastic wrap. Fill one half with eggs, sausage and cheese (being generous with cheese). 2) Using plastic wrap, fold the tortilla in half and wrap. Store in freezer. 3) When you're ready to eat, you can either thaw in refrigerator overnight OR microwave at 50% power for 1:30. Cook your quesadilla at 350 degrees for 6 minutes per side OR cook in a greased skillet. 4) Top with avocado (and any other toppings you like). Enjoy!
