For More Videos And Recipes visit http://www.polishrecipebook.com This video shows you the process of preparing pierogi to be frozen, to be served immediately, or to be pan fried. The processes of deep frying and baking pierogi are covered in other videos within our series. The link below this video takes you to the Polish cookbook where you will find that information. The pierogi shown here are coming directly from the preparation board and are being dropped into a pot of boiling water. Make sure your pot is large enough so that when you drop in the pierogi there is enough water to maintain the boiling temperature. The pierogi will go to the bottom. And some of them will stick. So gently use a ladle or spoon to move them enough that you remove those that have decided to stick. Be gentle so that you do not break the seals. As the pierogi boil, then will start to come to the top. That will take a couple minutes. If you are going to freeze the pierogi, boil them for about another minute after the last one comes to the top. Remove them to a rack to dry. Please note that I have another video on how to prepare the pierogi for the freezer and freezing them. If you are making the pierogi for immediate consumption, continue to boil them for another 3 to 5 minutes after the last one comes to the top. At that time remove them from the pot and put them on a rack just long enough to allow the water to drain off so that when you put them on a plate the plate is not get covered with water. If you are going to fry them, once they are dry, remove them to another plate so that you can continue boiling the rest of your pierogi. When you are ready to serve them, fried them up.

Add half of your onion, tsp of salt, bay leaf, dried mushrooms, peppercorns and cover with water. Cook for around an hour. Let it cool. Grind your cooked meat, onion and mushrooms in a grinder or a food processor. Chop the other half of the onion and caramelize on a little bit of oil. Transfer your ground meat in to a mixing bowl and add caramelized onion. Season with salt and pepper and mix very well until everything is incorporated. I like to use my hands for that. When you are done mixing, cover with a plastic wrap and set aside. In to your food processor add your flour and salt. Pulse few times and then start adding your water very slowly, watching the flour. When you see ball of dough in your food processor you don't need any more water. Let the food processor process the dough for another minute. Put a large pot full of water to boil, add one tsp of salt. Flour your surface slightly and transfer your dough from your food processor. Knead it few times. It should get elastic and not sticky very quickly. Divide the dough in two parts, one put aside in a zip lock bag. Roll the remaining dough with your rolling pin flipping from side to side to prevent sticking to your working surface. Add some more flour if you have to. Keep rolling until you get 1 to 2 mm thick dough. Lightly flour large plate. With a glass or large cookie cutter cut circles and take the remaining dough to add it to your zip lock bag to roll it out after you are done with your first batch. Pick up your circle of dough and flip it over so you place the stuffing on the side which was touching your working surface (they will close better this way). Stretch it a bit and then place in the centre about 1/2 to 1 tbs of stuffing (depends how big your glass/circle is). With your fingers stretch the dough around the stuffing to seal your pierogi (watching the video will help you understand - link at the bottom). Put your pierogi on the floured plate. When you done with all your circles, put your pierogi into the boiling water. Stir gently with a wooden spoon so they don't stick to the bottom. Do not overcrowd your pot. When the pierogi come to the surface boil them for one more minute. Spray your plate with some non stick spray and put your drained pierogi on it. Spray the pierogi on top as well. You can use butter if you prefer. You can serve your pierogi straight from the water with some sour cream and salt and pepper or with some caramelized onion or with some crispy bacon. You can also fry them on a little bit of oil. They freeze perfectly. Enjoy!

Put them to boil until tender. Set aside to cool down a little. Chop your onion finely and caramelize it on a little bit of oil. Press your potatoes and cottage cheese through the potato press. Add onion salt and pepper and mix very well. Cover with a plastic wrap and set aside. In to your food processor add your flour and salt. Pulse few times and then start adding your water very slowly, watching the flour. When you see ball of dough in your food processor you don't need any more water. Let the food processor process the dough for another minute. Put a large pot full of water to boil, add one tsp of salt. Flour your surface slightly and transfer your dough from your food processor. Knead it few times. It should get elastic and not sticky very quickly. Divide the dough in two parts, one put aside in a zip lock bag. Roll the remaining dough with your rolling pin flipping from side to side to prevent sticking to your working surface. Add some more flour if you have to. Keep rolling until you get 1 to 2 mm thick dough. Lightly flour large plate. With a glass or large cookie cutter cut circles and take the remaining dough to add it to your zip lock bag to roll it out after you are done with your first batch. Pick up your circle of dough and flip it over so you place the stuffing on the side which was touching your working surface (they will close better this way). Stretch it a bit and then place in the centre about 1/2 to 1 tbs of stuffing (depends how big your glass/circle is). With your fingers stretch the dough around the stuffing to seal your pierogi (watching the video will help you understand - link at the bottom). Put your pierogi on the floured plate. When you done with all your circles, put your pierogi into the boiling water. Stir gently with a wooden spoon so they don't stick to the bottom. Do not overcrowd your pot. When the pierogi come to the surface boil them for one more minute. Spray your plate with some non stick spray and put your drained pierogi on it. Spray the pierogi on top as well. You can use butter if you prefer. You can serve your pierogi straight from the water with some sour cream and salt and pepper or with some caramelized onion or with some crispy bacon. You can also fry them on a little bit of oil. They freeze perfectly. Enjoy!

Drain your cabbage and check if it needs rinse (if it is too sour). Transfer the cabbage to the pot add around one cup and a half of water. Add bay leaf and cook until tender. Drain your soaked mushrooms and cook in separate pot until tender. Let the cabbage and mushrooms cool a little bit and then drain and chop them finely. Chop your onion and fry on few tbs of oil until soft and glossy. Add your cabbage and mushrooms and season with salt and pepper. Cook until all the liquid is evaporated (around 5 minutes). To me nothing says more comfort food than these yummy potatoes and onion filled dumplings! Vareniki also known as Perogies is a staple Slavic dish for centuries. Although time consuming, they are simple to make with easy to find ingredients. Once made, the dumplings can be frozen between layers of cling film until needed. Simply cook from frozen. Serve with melted butter and sautéed onions. The recipe has been in the family for generations, with a few alterations of course! Serve plain, or with butter, sour cream, bacon, etc. Perfecting the perogie technique takes time, and after a while, you will develop your own system. They're delicious garnished with some of the fried onion held back from the filling, as well as a drizzle of melted butter or a dollop of sour cream. Eat them as a side dish or serve with a green salad to make them a meal. Ingredients: 185 ml OR ⅔ cups buttermilk ( Kefir) 1 Tbsp sour cream 2 large eggs 2 cups warm water 1 tsp salt 840 OR 7 cups of plain flour + extra if needed Filling 6-8 potatoes 2 onions Butter for onions 50 gr Butter for potatoes 100-150 gr oil Salt & Pepper ----------------------------------------------------------------------------------------------------------- Вареники - кто же их не любит? Making Pierogi - How To Use Pierogi Press Whole Wheat Russian Pierogis

Traditional Polish recipes and more about making pierogi at http://www.polishrecipebook.com If you use a pierogi press properly you can make some very nice looking and find tasting pierogi like the whole-wheat Russian pierogi made with whole-wheat dough pictured in the opening picture. If you do no,t your pierogi may have too much dough around the edges and your pierogi tool may jam. I use two different and sometimes three different cutters when I use a pierogi press. A pierogi press has its own built-in cutter but I use either a tunafish can or a tin cup to cut a smaller circle than the circle cut by the pierogi press itself. When you use the larger circle cutter bullt into a pierogi press you end up with a very large sealing area. To start using your press flour the surface so that the dough doesn't stick. The filling being used is potato filling. Now look at the sealing area. You have very large wings around the edges of the pierogi. Now I seal with one of the smaller circles. Note there is an open area around the edge. Seal again but look at the pierogi. The same amount of filling but it's nicer looking is more delicate and you don't have to have your people eating dull dough around the edges. I will do it again with a larger pierogi. Note the large sealing area and look at the difference here as compareed to the ones made with a small a circle. Be sure you don't overfill the pierogi because the tool will jam. And press them flat when you're done. You can put a board over the top like a cutting board. A flat filling cooks much better and pierogi look better especially when you fry them.

I grew up eating Pierogies and have been making them at home for quite some time. Were you raised on them too? They are a comfort food for sure. So come along as I show you how to make these from scratch. *PLEASE LET ME KNOW IF YOU HAVE ANY QUESTIONS* Recipe: Ingredients Pierogi Dough: 4 pounds all-purpose flour (If you don't have a scale, it's estimated 3 1/2 cups PER lb) Use your judgement when mixing the dough. If it seems like it's getting too stiff, don't add anymore flour. You want a nice soft dough that is not sticky to the touch. 1 tablespoon olive oil 2 large eggs 1 teaspoon kosher salt 3 1/2 cups warm water Nonstick cooking spray Cheese & Potato Filling: 2 pounds of potatoes (I use baking potatoes) Kosher salt (as needed to season the potatoes) 1 stick butter 16 ounces cream cheese 3 ounces sour cream 1 tablespoon granulated garlic 1/2 teaspoon onion powder 1/2 teaspoon black pepper To Serve: butter...lots of butter to drown your pierogies in. 1 onion sliced or diced, more if you like a lot of onion like I do. The pierogi recipe is here: http://www.youtube.com/watch?v=8PFyEtZgSUs 1 pound ground beef 1/2 cup chopped onion 1/4 cup all-purpose flour 1 can (14-1/2 ounces) beef broth 1 package (16 ounces) frozen cheese and potato pierogies, thawed (see my video here how to make your own: http://www.youtube.com/watch?v=8PFyEtZgSUs ) 2 cups frozen mixed vegetables, thawed and drained (use fresh carrots, peas and green beans!) 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon Italian seasoning 1/2 cup shredded cheddar cheese In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain, reserving 3 tablespoons drippings. Sprinkle flour over beef and drippings; stir until blended. Gradually add beef broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the pierogies, vegetables and seasonings. Cook, uncovered, for 4-5 minutes or until heated through. Sprinkle with cheese. Yield: 4 servings. Actually this would make 5-6 servings or 4 VERY VERY VERY large servings.

Pierogi are one of the most well-known, traditional Polish dishes and can be found around the world. They are small dumplings, also known as Pierożki, similar to Italian ravioli or Asian dumplings or gyoza.To make pierogi, you make the dough, which is a process very similar to making fresh pasta. For 500g flour, you’ll probably need around a cup of water – but see how the dough feels and comes together. Using an inverted glass, or a scone cutter, around 8cm in diameter, cut out circles of dough. Boil them, in a large pan of boiling water for just a few minutes and rise to the top of the pan when cooked – around 5 minutes. Sauté with fried onions seasoned with curry and cayenne pepper.
