Learn how to make classic spritz cookies! Including how to use both new and old cookie presses. These cookies are slightly crunchy, buttery, not too sweet and absolutely, the most addicting cookies you will ever have! They are a tradition on many holiday tables but many folk have problems making them. Let me take all the guess work out of it! What you'll need: 2 sticks (1 cup) unsalted butter, softened 2/3 cup granulated sugar 2 large egg yolks 2 tsp milk 2 tsp vanilla extract 1/2 tsp almond extract 2-1/4 cups all-purpose flour 1/4 tsp salt Cream together butter and sugar in a large bowl until creamy. Add in wet ingredients and mix well. Add in flour and salt and mix to combine. Color the dough if you wish to do so or leave it plain. **DO NOT REFRIGERATE DOUGH** Put into a cookie press and press out onto an ungreased, room temp cookie sheet. Decorate if desired with colored sugar, dragees, nonpareils, sprinkles, etc. Bake in a preheated 350*F oven for 9-11 minutes or until done but not browned. Let cool a few minutes on the cookie sheet and then remove to a wire rack to cool completely. Let cookie sheet cool before pressing out more cookies. If using a new press, makes 7-8 dozen cookies. If using an old press, makes 3-4 dozen cookies. Store in an airtight container. Enjoy! Chef Remy shows how to make basic Spritz Cookies using a cookie press. By simply adding peanut butter, chocolate, lemon, or dozens of other ingredients, this basic recipe becomes the starting point. Other more complex recipes follow. INGREDIENTS: 1 cup shortening ¾ cup sugar 2 ¼ cups flour, sifted 1 egg 1 tsp vanilla extract ½ tsp salt ¼ tsp baking powder METHOD: Cream shortening and sugar well. Beat in egg and vanilla. Blend dry ingredients, flour, salt, and baking powder, together. Then gradually add to shortening egg mixture blending smooth. Form a ball and fill tube of cookie press. Excess may be set aside, covered with wrap to keep from drying out. Pick a cookie design and use cookie press to form cookies on an ungreased cookie sheet. Cookies may be baked in a 350 degree oven in 10-12 minutes. Place cookies on a wire rack to cool.

Now these are not your ordinary cookies, these are super special. My Nanny (mom's mom) and my mom both made these type of pressed butter and sugar cookies. They are delicious and so special. They look great on a cookie tray or included in your holiday baskets to friends and family. We will be making several different types of pressed cookies in the coming week, and today we are beginning with the basic Spritz Cookie Recipe. A simple butter cookie dough that is put through a traditional cookie press. Any type of press will work. I prefer the SAWA 2000 press from Sweden. I don't think that they make these any longer, so I really kind of covet this contraption. No matter what type of press you use, or even if you just put these through a pastry bag, they will turn out lovely. Sprinkle them with colored sugar, non-pariels, or plop a halved candied cherry in the middle and make them even more special. I hope you try these and I hope you enjoy them! These Butter Spritz Cookies are an easy to make "melt in your mouth" type cookie. Recipe: All purpose shortening: 1lb4oz Butter: 1lb Granulated Sugar: 1lb Water: 8oz Cake Flour: 2lb8oz Procedure: Put shortening, butter and sugar in mixing bowl and start on slow speed. Gradually increase to high speed and cream until it is light and fluffy. About 2-3 minutes. 2nd stage: Slowly add water while mixing on low speed. Stop your mixer and scrape it down on the sides and the bottom. Turn mixer back on and mix on high speed for about a minute. 3rd stage. Add your cake flour and incorporate it on low speed. Mix it on low for about 2 minutes. 4th stage. Fill your piping bag fitted with a star tip and pipe out cookies (rosettes, shells or whatever shape you like ) on to a sheet pan with parchment paper. I decided to post a mini baking series to accompany my holiday prep series this year. This first video showcases a Christmas cookie tradition passed down to me by my Grandma. I have pasted the recipe below as well as the link to it on my pinterest page. Please let me know what you think if you decide to try this recipe out! Thanks for watching :) Cream Cheese Spritz http://pinterest.com/pin/11822017743664959/ Cream Cheese Spritz Note: Recipe from OrganizedJen's Grandma Makes about 7 dozen cookies 2 ½ cups All Purpose Flour ½ teaspoon Salt ¼ teaspoon Cinnamon 1 cup Unsalted Butter, room temperature 3 oz Cream Cheese, room temperature 1 cup Sugar 1 Egg Yolk, unbeaten 1 teaspoon Vanilla Assorted Toppings (sprinkles, sanding sugar, etc.) Preheat oven to 350 with two racks positioned in the center. Whisk together flour, salt and cinnamon and set aside. Cream together thoroughly the butter and cream cheese using an electric mixer on medium speed. Gradually beat in sugar until fluffy. Add the egg yolk and vanilla and mix on medium speed until incorporated. Add the sifted dry ingredients a little at a time, mixing after each addition on low, until well blended. Fill the cookie press chamber with dough. Place the desired forming plate in the cookie press and close tightly. Mold dough onto slightly greased cookie sheets. Decorate the shaped cookies with sprinkles. Bake until light brown, 8 to 10 minutes, rotating the sheets halfway through. Allow the cookies to cool on the sheets for 5 minutes before moving to cooling racks. Once completely cool, store the cookies in an airtight container. A recipe Kelly Ripa's grandma used to make some press spritz cookies. They are good and are light a lighter version of a shortbread. These cookie press cookies are great for cookie exchanges because one batch makes a ton of them! I like them for fall and christmas. I got this out of a magazine one year and had been wanting to try them. If I did it again, I would add a touch less of the almond extract, maybe I am saying that because I ate some of the dough and the alcohol in the extract left a nasty taste in my mouth! ;)

In this video, Susie the Disk Designer shows you step by step how to make & decorate Christmas tree spritz cookies with a cookie press. Full recipe and link to photo blog below! RECIPE: Impress! Vanilla-Honey Spritz 1 1/2 cups (3 sticks) butter, softened (not melted) (I recommend Land O Lakes brand as I know it creams well. I have had trouble with some generic butters not creaming properly and making the dough hard to press.) 1/2 cup granulated sugar 1/3 cup honey 1 and 1/2 Tablespoons vanilla extract 1 egg 4 cups all-purpose flour 3/4 teaspoon baking powder 1/4 teaspoon salt GEL food coloring (NOT liquid), I used Kelly green Preheat oven to 400°F. In a large bowl, combine flour, baking powder, and salt. Set aside. Using an electric mixer, cream the butter very well. Creaming your butter extremely well until it is fluffy is the key to great spritz cookies. I like to pretend I’m making frosting and use the “whip” setting on my mixer. Add the sugar, then the honey, then the extracts and egg, re-creaming the mixture after each new addition. Next add the flour mixture slowly, mixing on a slow speed until a soft dough forms. Perfect spritz dough has a soft malleable texture that is not too sticky or too stiff. Remember you can add water a tablespoon at a time to stiff dough, or add flour a tablespoon at a time to sticky dough to troubleshoot. Bake for 6 to 10 minutes. Check early and often as spritz cookies brown quickly. Let sit 3 or 4 minutes and move to cooking rack. Makes about 110 cookies. DECORATING: Use colored icing and decorating tips to add decorations. Lemon Spritz Cookies 2 cups butter softened 1 1/4 cups sugar 2 eggs grated peel of one lemon 2 tsp of lemon juice 1 tsp vanilla 5 1/4 cups all purpose flour 1/4 tsp salt Coloured sugar for decorating In a large mixing bowl combine butter,sugar,eggs, vanilla, lemon juice and grated peel. Mix well. Add flour and salt and blend. Using a cookie press, place cookies on an ungreased cookie sheet. Bake at 375 F for 5-7 minutes. They burn fast, use a timer!
