Cut potatoes into hearty chunks. Place into a medium sized pot and cover with enough water to come about an inch above the potatoes. Place over a high heat and bring to a boil. Allow potatoes to boil for about 5-10 minutes or until the chunks are fork tender. Drain water from potatoes and put the potatoes back into the warm pot. Add olive oil, roasted garlic cloves, salt and pepper. Use potato masher (or the back of a fork) to mash the potatoes until you have a nice, hearty, rustic mash. Adjust seasonings and enjoy! Nutrients per 1/2cup: Calories: 210; Total Fat: 14g; Carbohydrate: 22.1g; Fiber: 2g Sugars: 2g; Protein: 2.3g ROASTED GREEN BEANS WITH CRANBERRIES + ALMONDS RECIPE 1 pound green beans, trimmed 2 teaspoon olive oil 1/4 teaspoon garlic powder salt and pepper to taste The zest of one orange (about 1 teaspoon) 1/4 cup cranberries 1/4 toasted, almond slices Pre heat oven to 400º fahrenheit Makes sure your green beans are dry and then place them on a rimmed baking sheet lined with parchment paper. Season with olive oil, garlic powder, salt and pepper. Toss gently, coating the green beans with the spices making sure to spread them out on the pan (no over crowding or they will steam instead of roast). Pop in the oven for 10 minutes. Remove tray, give it a shake, and then sprinkle the cranberries around the tray and pop back into the oven for 5 more minutes or until green beans are light browned and tender. Transfer to a serving dish and top with orange zest and almonds. Serve and enjoy! Nutrients per 1/4th of recipe: Calories: 103g; Total Fat: 6.1g; Saturated Fat: 0.6g; Cholesterol: 0mg; Carbohydrate: 11.4g; Dietary Fiber: 3.2g; Sugars: 5.99g; Protein: 2.8g FESTIVE KALE + POMEGRANANTE SALAD RECIPE Salad 8-10 cups of kale, washed, stemmed and cut into thin ribbons 1/2 cup roasted pecans, chopped 1 cup pomegranate seeds (1 medium pomegranate) 1/4 cup sunflower seeds, roasted and salted 2 ounces feta cheese, crumbled Salad Dressing 1/2 small red onion, diced 1 cove crushed garlic (optional) 1/4 cup extra virgin olive oil 1/4 cup apple cider vinegar 1tablespoon honey Salt and pepper to taste In a large bowl combine the kale, pecans, pomegranate seeds, sunflower seeds and feta cheese. Set aside while you make the dressing. In a small spouted cup or bowl combine onion, garlic, olive oil, vinegar, honey, salt and pepper. Mix well and adjust the seasonings. Drizzle dressing over the salad and gently toss together. Serve and enjoy! Bone-In Beef Short Ribs to Share Chef JJ Johnson Prep time: 35 minutes Cooking time: Approximately 4 hours Total time: 4.5 hours Ingredients 2 pounds short ribs bone in, prepped from the butcher 1Ž4 cup olive oil plus 3 tablespoons 2 cups dry red wine (Pinot Noir or Merlot) 1 quart veal stock 3 cinnamon sticks 3 bay leaves 3 oranges, quartered 1 bunch thyme 1 bunch parsley 1 jalapeno, chopped with seeds Directions Preheat your oven to 325 degrees F. Heat a large Dutch oven over medium-high heat and add 3 tablespoons of the olive oil. Once the oil begins to shimmer add the short rib in a single layer and season with salt and pepper. Sear the meat until lightly browned on all sides, turning with long tongs, about 2 minutes per side. Transfer meat to a plate. Deglaze the pot with the red wine, making sure to bring up the brown bits of fond from the bottom of the pan with a wooden spoon. Return the short ribs back to the pot and lower the heat to medium. Add in the veal stock, 3 cups of water, cinnamon sticks, bay leaves, oranges, thyme, parsley and jalapeno. Season generously with pepper. Cook for 2-3 hours. Place carrots on a rimmed baking sheet and season with two teaspoon of olive oil, sweet paprika, turmeric, salt and pepper. Roast until soft and tender 15-20 minutes, adding garlic cloves during final 10 minutes. Let cool. Meanwhile, place chickpeas in a food processor with remaining olive oil, tahini, lemon juice, and two tablespoons of water and blend. Add more water as needed until smooth. Once the carrots and garlic have cooled, add to processor and finish blending until smooth. Scoop into a bowl, drizzle with olive oil, honey and season with cinnamon. Serve with raw veggies, crackers, and/or chips. Hummus will keep in an airtight container in the fridge for up to 7 days. Nutrients per 1/4 cup of hummus: Calories: 154; Total Fat: 9g; Saturated Fat: 1.3g; Cholesterol: 0mg; Carbohydrate: 13.1g; Fiber: 2.9g; Sugars: 4.2g; Protein: 2.9g BACON + MAPLE WRAPPED BRUSSELS SPROUTS 10 medium to large brussels sprouts, trimmed and halved 5 pieces of nitrate free bacon 1-2 tablespoons maple syrup black pepper Pre heat oven to 425ºF and line a rimmed baking sheet with parchment paper or a silpat mat. Slice each side of bacon in half horizontally and then slice each half in half again, vertically. You will end up with 4 thin strips of bacon when done (See video for an example). Brush each slice of bacon with the maple syrup. Wrap the bacon around the brussels sprouts and place on the baking sheet. Repeat until you have finished wrapping all the brussels sprouts in bacon. Brush the tops of the bacon wrapped sprouts with some more maple syrup and season with black pepper. Pop in the oven for thirty minutes or until the bacon has cooked and brussels sprouts are tender. Serve and enjoy! Nutrients per 4 pieces: Calories: 49; Total Fat: 2.5g; Saturated Fat: 1g; Cholesterol: 5mg; Carbohydrate: 4.3g; Fiber: 0.6g; Sugars: 2.8g; Protein: 2.6g SWEET + SPICY NUTS 1 cup raw, unsalted walnuts (halves or pieces) 1 tsp. pastured butter 1 tbsp. honey A few dashes of hot sauce A pinch of salt 2 tsp. of fresh rosemary, chopped up Heat a small non-stick sauté pan over a medium-low heat, toss in nuts and gently toss around, looking for 8-10 minutes or until fragrant and lightly toasted. Turn the heat all the way down, as low as it can go, and add in the butter, hot sauce, honey, salt and rosemary. Toss again until the nuts are coated in all the yummy goodness (you can also do this by mixing with a rubber spatula). Transfer to a rimmed baking sheet to cool. Enjoy!
