Below is the final recipe we used, what you’ll need, and a couple of pointers. Method is in the video. Pris: 719:- (ord pris 795:-) Köp den här: http://bit.ly/1IU6DOe Sous vide innebär att maten placeras i vakuum i en påse som därefter tillagas i ånga eller vattenbad med väldigt precis temperatur. Fördelen med vatten är att det leder värme bättre än luft. Genom att tillaga maten i en exakt temperatur blir den aldrig torr eftersom maten aldrig överskrider den perfekta temperaturen. Laxen i det här fallet kör jag på 52 grader. Om den ligger i vattnet 25 eller 45 minuter spelar ingen roll. Den blir aldrig varmare än 52 grader och därför perfekt oavsett när man tar upp den. Kött kan ligga i betydligt längre än fisk eftersom det tar längre tid för det att brytas ner. Fisk som ligger för länge tappar allt tuggmotstånd och därför är det inte att rekommendera. Somliga gillar laxen bättre när den är 50 grader och somliga vill ha den 54 grader. Jag gillar 52. Det är en högst personlig sak så testa dig fram till det som passar dig! Frozen Steaks Experiment - What's Best for Sous Vide?

We all know sous vide is AMAZING! But what is the best way to deal with frozen steak sous vide? On this experiment I try 4 different ways. One with thawed in the sous vide circulator, the next thawed in cold water, the following was thawed 24hrs in the refrigerator and lastly I just cooked it completely frozen directly on the sous vide. Which is the winner? This is a special moment. We all agreed, this was by far the best brisket we ever ate in our lives. We are totally speechless on hold good this brisket was. It was by far, the best or the best. This was a 62hrs cook, 3 hrs smoked on my Camp Chef Smoker Pro. We sous vide it at 140F with Joule from Camp Chef. We put it in the water bath and we did not touch it until it was time to eat. The marinate I made for it came so good that even ninja loved it. I also seared these chicken thighs 2 different way to really find out the best way to cook chicken things sous vide. I used the slow n sear on my weber and also pan fried the others. I was able to get fresh and I mean fresh eggs from my sister's house, she has all types of chicken including Blue Easter Egger, Snowy Easter Egger, Golden Cuckoo Marans, Cream Legbar, White Leghorn, Golden Laced, Delaware, Buff Brahma Bantam, Silkie and more. Holiday Roast can be quite expensive, but I had an idea to take chuck and see if I could make a holiday roast out of it. This experiment was great and I learned alot from it. The end result was tender and juicy but it needs more seasoning. When you think you have enough season, think again. Season your chuck very, very heavy. Tradionally you also make crispy skin out of the pork but since this was a shoulder it was skinless. Sous Vide SEASONING EXPERIMENT - Should you SALT BEFORE OR AFTER Sous Vide?

You guys asked and I deliver! I put the SALT BEFORE or SALT AFTER SOUS VIDE to the test! For this experiment I used prime sirloin steak. Yes I wanted to use picanha but to change it up a little I used Prime USDA Sirloin Steak. On this experiment I answer this very controversial question. Should you season your steak before or after sous vide? I even went further doing a 3rd experiment! Which is season the steak after searing. The experiment is as follow, every steak is exactly the same. It has the same good old stuff which is salt, pepper, onion, garlic and organic thyme. The only difference is the timing for the salt and pepper was applied. I am please to let you know that all 3 of us had the same conclusion on which one is best! The idea of making a bunch and eating it when ever you want to eat is is awesome. However I would like your opinion on the way I made it and if anyone has some good advice on making it work even better than the way I made it, I would love to hear.
