To a cooking pan, add sweet corn kernels. Add 1/4th cup of water. 2. Close the lid and cook on medium flame till the corn kernels get tender and till the water dries up completely. 3. Slice two tomatoes. De-seed and remove the soft pulp. Make small pieces of sliced tomatoes. 4. To a large empty bowl, add diced carrot, diced cucumber, diced onion, diced tomatoes (which we had kept aside), add tenderized sweet corn kernels, lemon juice, chopped coriander, salt and add black pepper powder. 5. Mix well. Vegetable Salad is ready.

Ingredients: For Dressing: 2 tbsp extra virgin olive oil fresh coriander leaves - roughly chopped 3 cloves of garlic - finely minced 2 tsp dried oregano 3 tbsp lemon juice 3/4th tsp cumin powder 1/4 tsp chilli flakes For Salad: 200 gms lettuce tomatoes - chopped corn 1/2 cup kidney beans - boiled 1 avocado spring onion Method: To make the dressing: - In a small glass, add the extra virgin olive oil, fresh coriander leaves, minced garlic, dried oregano, lemon juice, cumin powder and chilli flakes and whisk all the ingredients well. Season with salt and pepper and toss the salad with the dressing and serve immediately. 2 Avocado shrimp salad recipe 410 calories (1 serving) Ingredients: 1 cup romaine lettuce, chopped 6 oz shrimp, uncooked or 3.6 oz boiled and peeled 2 cups of water 1/2 avocado 1/4 cup peas 1/4 red onion 1 tbsp olive oil 1 tbsp lime juice 1 clove garlic, minced 1 tsp. chopped fresh cilantro 1/2 tsp. Dijon mustard 1/8 tbsp salt 1/8 tbsp ground black pepper Instructions: Add water and a slice of lime to a large stockpot set over medium heat. Bring to a boil and allow to boil for 5 minutes. Stir in the raw shrimp, cover and remove from heat. Allow to rest for about 4 minutes, until all the shrimp are cooked through. Season steak with salt and pepper on both sides and fry until golden on each side and cooked to your liking. Remove from skillet and set aside. To make vinaigrette, add oil to skillet and heat over medium-high heat Add shallots and sauté for 2-3 minutes, or until they soften. Add garlic and tomatoes and cook for another minute. Add vinegar, honey and salt and pepper to taste and cook for another 2-3 minutes or until tomatoes soften. Remove from heat and stir in basil. Store in the refrigerator for up to 5 days. Arrange arugula on serving dish of choice. Top with steak strips, vinaigrette and blue cheese. Enjoy! Asian Inspired Slaw 4 cups red cabbage, shredded 2 carrots, julienned 1 red pepper, thinly sliced ½ cup cucumber, julienned 1 avocado, sliced 2 green onions, sliced ¼ cup cashews, chopped Dressing: 2 tbsp rice wine vinegar 1 lime, juiced 1 tbsp agave or brown sugar 1 tbsp soy sauce 1 tbsp ginger, freshly grated ¼ tsp garlic, minced 1 tbsp sesame oil ⅓ cup olive oil In a medium bowl, whisk together dressing ingredients and set aside. To assemble salad, place cabbage in bowl and arrange remaining ingredients on top. Garnish with cashews and pour over dressing. Enjoy! Sesame Ginger Salmon: http://bit.ly/2ngvHcA Harvest Salad with Chicken 2 chicken breasts, boneless and skinless 2 cups butternut squash, diced 4 cups kale, chopped 1 apple, diced ⅓ cup pecan halves ¼ cup goat cheese Oil Salt and pepper to taste Maple Vinaigrette: 1/4 cup balsamic vinegar 2-3 tbsp maple syrup 3 tbsp Dijon mustard ⅓ cup olive oil Salt and pepper to taste In a small bowl, whisk together vinaigrette ingredients and season with salt and pepper to taste. Pour half of the vinaigrette over chicken breasts and let sit in the refrigerator for at least 30 minutes. Set remaining vinaigrette aside. On a large non-stick or parchment lined baking sheet, arrange chicken on one side. On the other side, add squash and drizzle with oil and season with salt and pepper to taste. Bake at 400ºF for 20-25 minutes or until chicken and squash are cooked through and slightly golden. In a large bowl, add kale and drizzle lightly with oil and salt and pepper to taste. Massage kale until it becomes tender. In your serving bowl of choice, fill with kale and top with remaining ingredients. Drizzle over remaining vinaigrette. Super 7 Salad 1 cup finely chopped kale 1 cup finely sliced red cabbage 1 cup finely shredded Brussels sprouts 1 cup finely chopped broccoli 1/2 cup blueberries 1/3 cup slivered almonds Dressing: 1/2 cup plain yogurt 3 tablespoons apple cider vinegar 2 tablespoons honey 1 teaspoon poppy seeds Salt and freshly cracked black pepper In a small bowl, whisk together the yogurt, vinegar, honey, poppy seeds, salt and pepper. In a larger bowl, toss together the kale, cabbage, Brussels sprouts, blueberries and the poppy seed dressing. Top the salad with the blueberries and almonds. Tangled Sesame Salad Salad: 2 English cucumber, julienned 2 carrots, peeled and julienned 1 mango, pitted, peeled and julienned 1 red bell pepper, julienned 1 green onion, finely sliced for garnish Sesame seeds for garnish Dressing: 2 tablespoons tablespoons soy sauce or tamari 1 tablespoon rice vinegar 1 lime, juiced 1 tablespoon sesame oil 1 tablespoon agave 1 garlic clove, grated 1 teaspoon freshly grated ginger In a small bowl, whisk together all of the dressing ingredients. In a large bowl, toss together the cucumber, carrot and pepper. Pour the dressing over the salad and garnish with sesame seeds and green onion Spring Inspired Green Salad 6 cups arugula 2 cups chopped steamed asparagus 2 cups steamed snap peas Dressing: 3 tablespoons olive oil 2 tablespoon white wine vinegar 1-2 teaspoons agave or honey 1 teaspoon Dijon mustard 1/2 finely minced shallot 1 teaspoon freshly chopped dill 1 teaspoon freshly chopped parsley 1 teaspoon freshly chopped basil or tarragon Salt and freshly cracked black pepper In a small bowl, whisk together all of the dressing ingredients. Toss the dressing with the asparagus and snap peas. Capsicum salad - Capsicum Salad Recipe - Veg Salad Recipes - Salads Recipes Vegetable salad in this veggie salad recipe I have used three different colours of Capsicums. In this Multi-colour vegetable salad we have used raw vegetables. Usually raw vegetables are better than cooked ones. While cooking we lose some vitamins and minerals in vegetables and those who are in diet and health conscious to lose weight this is a very good vegetable salad. It’s very filling and it’s very good for health. Normally we use carrot, onion, cucumber, tomato and lettuce for vegetable salad recipes but in this veggie salad we used three different colour capsicums along with carrot. We have not used lettuce too in this salad. Vegetarian salad recipe ingredients Yellow capsicum – 1No. medium size Red capsicum – 1No. medium size Green capsicum – 1No. medium size Carrot – 1No. medium size Mango (ripe or green) – 1No. medium size Grated coconut – 1 tbspn Jaggery powder – 1 tbspn Black pepper powder – 1 tspn Extra Virgin Olive – 1 tbspn Roasted peanuts – 1½ tbspn Lemon – 1No. Salt to taste Preparation of Multi-colour vegetable salad Cut all the all colour capsicum, carrot and mango in to thin same size fine pieces. You can cut the vegetables in any shape as you like and we cut in 1½ inch thin length pieces. Add the vegetables one by one in to the bowl first yellow capsicum, green capsicum, red capsicum, carrot and mix it well in a manner all the vegetables are mixed together, and then add mango pieces, for this salad you can use ripped mango or green mango. Add the grated coconut and mix again. Squeeze the lemon in the bowl and add extra virgin olive oil, black powder, salt and finally powdered jaggery and mix it well still the jaggery dissolves. Pour this mixture in the veggie salad and mix it well. Add roasted peanuts in the mixture and mix it well. The delicious low calorie Multi-colour vegetable salad ready to serve.
