Bring the water to a boil and then reduce it to a simmer and cover the pot. Cook the chicken for 30 minutes, or until the inside isn't pink. Place chopped lettuce, red onion, tomatoes, Shreded Chicken, avocado, and crumbled feta cheese in a large bowl. In a small bowl, combine olive oil, lime zest, lime juice. Season with salt and pepper and toss the salad with the dressing and serve immediately. 2 Avocado shrimp salad recipe 410 calories (1 serving) Ingredients: 1 cup romaine lettuce, chopped 6 oz shrimp, uncooked or 3.6 oz boiled and peeled 2 cups of water 1/2 avocado 1/4 cup peas 1/4 red onion 1 tbsp olive oil 1 tbsp lime juice 1 clove garlic, minced 1 tsp. chopped fresh cilantro 1/2 tsp. Dijon mustard 1/8 tbsp salt 1/8 tbsp ground black pepper Instructions: Add water and a slice of lime to a large stockpot set over medium heat. Bring to a boil and allow to boil for 5 minutes. Stir in the raw shrimp, cover and remove from heat. Allow to rest for about 4 minutes, until all the shrimp are cooked through. Pour the shrimp and liquid into a colander to strain, peel and set a side. In a large bowl, add chopped romaine, avocado, tomatoes, red onion, peas shrimp and cilantro. In a small bowl, whisk together olive oil, lime juice, garlic, Dijon, salt, and pepper. Super 7 Salad 1 cup finely chopped kale 1 cup finely sliced red cabbage 1 cup finely shredded Brussels sprouts 1 cup finely chopped broccoli 1/2 cup blueberries 1/3 cup slivered almonds Dressing: 1/2 cup plain yogurt 3 tablespoons apple cider vinegar 2 tablespoons honey 1 teaspoon poppy seeds Salt and freshly cracked black pepper In a small bowl, whisk together the yogurt, vinegar, honey, poppy seeds, salt and pepper. In a larger bowl, toss together the kale, cabbage, Brussels sprouts, blueberries and the poppy seed dressing. Top the salad with the blueberries and almonds. Tangled Sesame Salad Salad: 2 English cucumber, julienned 2 carrots, peeled and julienned 1 mango, pitted, peeled and julienned 1 red bell pepper, julienned 1 green onion, finely sliced for garnish Sesame seeds for garnish Dressing: 2 tablespoons tablespoons soy sauce or tamari 1 tablespoon rice vinegar 1 lime, juiced 1 tablespoon sesame oil 1 tablespoon agave 1 garlic clove, grated 1 teaspoon freshly grated ginger In a small bowl, whisk together all of the dressing ingredients. In a large bowl, toss together the cucumber, carrot and pepper. Pour the dressing over the salad and garnish with sesame seeds and green onion Spring Inspired Green Salad 6 cups arugula 2 cups chopped steamed asparagus 2 cups steamed snap peas Dressing: 3 tablespoons olive oil 2 tablespoon white wine vinegar 1-2 teaspoons agave or honey 1 teaspoon Dijon mustard 1/2 finely minced shallot 1 teaspoon freshly chopped dill 1 teaspoon freshly chopped parsley 1 teaspoon freshly chopped basil or tarragon Salt and freshly cracked black pepper In a small bowl, whisk together all of the dressing ingredients. Toss the dressing with the asparagus and snap peas. To a cooking pan, add sweet corn kernels. Add 1/4th cup of water. 2. Close the lid and cook on medium flame till the corn kernels get tender and till the water dries up completely. 3. Slice two tomatoes. De-seed and remove the soft pulp. Make small pieces of sliced tomatoes. 4. To a large empty bowl, add diced carrot, diced cucumber, diced onion, diced tomatoes (which we had kept aside), add tenderized sweet corn kernels, lemon juice, chopped coriander, salt and add black pepper powder. 5. Mix well. Vegetable Salad is ready.

Here's the recipe: Ingredients 1 pound thin spaghetti, broke into 3-4" pieces 3 Roma tomatoes, diced 1 medium zucchini, diced 1 medium yellow zucchini squash, diced 1 green pepper, diced 1 red pepper, diced 1 red onion, diced 1 cucumber, diced 2 (2.25 oz) cans sliced olives, drained 8 oz cheddar cheese, cut into small cubes Dressing: 1 (16 oz) bottle Italian dressing ¼ cup grated Parmesan cheese 1 teaspoon paprika ¼ teaspoon garlic powder Cook spaghetti and let cool. Place all ingredients in a large bowl with cooled spaghetti noodles and mix well. mix dressing ingredients and pour onto salad. Mix well. Chill for 2 hours or more. The longer the better. Toss and serve. Enjoy. Season steak with salt and pepper on both sides and fry until golden on each side and cooked to your liking. Remove from skillet and set aside. To make vinaigrette, add oil to skillet and heat over medium-high heat Add shallots and sauté for 2-3 minutes, or until they soften. Add garlic and tomatoes and cook for another minute. Add vinegar, honey and salt and pepper to taste and cook for another 2-3 minutes or until tomatoes soften. Remove from heat and stir in basil. Store in the refrigerator for up to 5 days. Arrange arugula on serving dish of choice. Top with steak strips, vinaigrette and blue cheese. Enjoy! Asian Inspired Slaw 4 cups red cabbage, shredded 2 carrots, julienned 1 red pepper, thinly sliced ½ cup cucumber, julienned 1 avocado, sliced 2 green onions, sliced ¼ cup cashews, chopped Dressing: 2 tbsp rice wine vinegar 1 lime, juiced 1 tbsp agave or brown sugar 1 tbsp soy sauce 1 tbsp ginger, freshly grated ¼ tsp garlic, minced 1 tbsp sesame oil ⅓ cup olive oil In a medium bowl, whisk together dressing ingredients and set aside. To assemble salad, place cabbage in bowl and arrange remaining ingredients on top. Garnish with cashews and pour over dressing. Enjoy! Sesame Ginger Salmon: http://bit.ly/2ngvHcA Harvest Salad with Chicken 2 chicken breasts, boneless and skinless 2 cups butternut squash, diced 4 cups kale, chopped 1 apple, diced ⅓ cup pecan halves ¼ cup goat cheese Oil Salt and pepper to taste Maple Vinaigrette: 1/4 cup balsamic vinegar 2-3 tbsp maple syrup 3 tbsp Dijon mustard ⅓ cup olive oil Salt and pepper to taste In a small bowl, whisk together vinaigrette ingredients and season with salt and pepper to taste. Pour half of the vinaigrette over chicken breasts and let sit in the refrigerator for at least 30 minutes. Set remaining vinaigrette aside. On a large non-stick or parchment lined baking sheet, arrange chicken on one side. On the other side, add squash and drizzle with oil and season with salt and pepper to taste. Bake at 400ºF for 20-25 minutes or until chicken and squash are cooked through and slightly golden. In a large bowl, add kale and drizzle lightly with oil and salt and pepper to taste. Massage kale until it becomes tender. In your serving bowl of choice, fill with kale and top with remaining ingredients. Drizzle over remaining vinaigrette.
