Preheat oven to 400ºF/200ºC. 2. In a medium casserole dish, evenly coat the carrots in butter, honey, salt, and pepper. (TIP! If you prefer bite-sized pieces, simply chop the carrots instead of leaving them whole.) 3. Bake for 25-30 minutes. 4. Enjoy! Butter Parmesan Corn Serves 6 INGREDIENTS 6 half ears corn, cleaned and husked 2 tablespoons butter, softened ½ cup grated parmesan Salt, to taste Pepper, to taste PREPARATION 1. Preheat oven to 375ºF/190ºC. 2. Coat each ear of corn in a thin layer of butter and roll in the parmesan cheese to coat. 3. Place corn in a square baking dish and sprinkle with salt and pepper. 4. Bacon and Onion Roasted Potatoes Serves 6-8 INGREDIENTS ½ pound bacon, chopped 6 medium red potatoes, chopped into ¾-inch pieces 1 2-ounce packet onion soup mix Salt, to taste Pepper, to taste PREPARATION 1. Preheat oven to 425ºF/220ºC. 2. Cook bacon in a cast iron skillet until crisp. 3. Remove any excess grease, if preferred. 4. Add the potatoes and onion soup mix to the skillet and stir. Add salt and pepper to taste. 5. Bake in the skillet for 20-25 minutes, or until potatoes are cooked through. 6. Enjoy! Bake at 400ºF until tender and lightly golden, approximately 20-25 minutes. Remove from oven and drizzle over apple cider vinaigrette and return to the oven for another 3-5 minutes. Enjoy! Orange Glazed Carrots 1 tbsp butter 2 garlic cloves, peeled and squashed with back of the knife 18-24 small carrots, peeled 2 rosemary sprigs 1 orange, zest and juice 1/2 cup watee 2-3 tbsp honey Salt and pepper to taste In a large skillet over medium-high heat, melt butter. Add garlic, carrots, rosemary, orange zest and juice. Add water to the bottom of the pan, season with salt and pepper to taste and cover with lid. Bring to a boil and cook for 7-10 minutes, or until carrots are tender. Remove lid drizzle over honey. Cook for another 2-4 minutes, or until remaining liquid has mostly evaporated and honey has lightly caramelized. If your carrots are still hard and water has evaporated, add more water as needed. Enjoy! Maple Pecan Roasted Brussels Sprouts 2 lbs brussels sprouts, trimmed and halved ½ cup bacon, diced 1 tsp garlic powder 2 tbsp maple syrup ¼ cup pecans, roughly chopped Oil Salt and pepper to taste Place sprouts into an oven safe baking dish and top with bacon. Season with garlic powder and bake until tender, about 15-20 minutes. Toss with maple syrup, black pepper and pecans. Bake for another 5 minutes. This easy recipe for Parmesan potato stacks makes a great side dish or appetizer that your family and guests will definitely enjoy. They are very flavorful due to the thyme, garlic and parmesan which I always love to pair when cooking potatoes. If you don’t like thyme feel free to use any other herbs you prefer like rosemary, oregano or basil. Preheat the oven to 375°F (190C). Butter 12 muffin cups and set aside. Cut the potatoes into thin slices, preferably using a mandoline. 2. Place potato slices into a large bowl. Add melted butter, Parmesan cheese, thyme, garlic, salt and pepper. Toss to coat evenly. 3. Layer the potato slices into stacks and place in the prepared muffin cups. Sprinkle some freshly ground black pepper. 4. Bake until the edges and tops are golden brown and the centers are tender, 55 minutes to 1 hour. 5. Many Koreans prepare these for their children as part of their school lunch menus. Potato with soy sauce ("gamja jorim") Gamja jorim (potato side dish) used to be my regular lunch box menu. My mother sometimes added small dried anchovies and carrot, and sometimes she added ham cut into dice like potato. I used to make this all the time as my children's lunch box side dish, too. Ingredients: 2-3 medium sized potatoes, onion, 2 cloves garlic, soy sauce, 1 tbs corn syrup, 1 tbs sugar, half cup of water. 1. Peel the potatoes, wash, and cut them into 1 inch dice and make 2 cups. 2. Rinse the potato using colander in running water to remove starch. 3. Cut half onion into bite sized pieces. 4. Heat the pan and add 1-2 tbs olive oil and pour the potato into the pan. 5. Add 2 cloves of minced garlic and sauté it until the potato look a little translucent, then add the onion and keep stirring it. 6. Add half cup of water into the pan, 2 tbs -- 2½ tbs soy sauce (depends on your taste), 1 tbs of sugar, 1 tbs of corn syrup and mix it and simmer it over medium heat for about 10 minutes until the liquid is evaporated.Tip: Keep checking and stirring not to burn it and to cook evenly, if it needs more water, add some. 7. When the potato is cooked, turn off the stove and add 1 tbs of sesame oil and sprinkle a pinch of sesame seeds. Potato with mushroom ("gamjachae bokkeum") This potato dish can be made without mushrooms. I found the taste turns out very good when king oyster mushroom is added. By using king oyster mushroom, this color of dish is still clean white. If you don't have mushrooms, just use potato as it is. Ingredients: 1 medium size of potatoes, 2 cloves garlic, 2 king oyster mushrooms, half onion, ½ ts to 1 ts of salt, 1 to 2 tbs olive oil, 1 tbs sesame oil, 4 to 5 tbs of water. Tip: If you only use potatoes, use 2 medium size potatoes and ½ cup of water. 1. Peel the potatoes and wash and cut them into julienne strips. 2. Wash the potato in running water using a colander to remove starch. 3. Cut the mushrooms into julienne strips. 4. Slice the onion and mince 2 cloves of garlic. 5. In a heated pan, add 2 tbs of olive oil and add the potato strips. Stir it with a wooden spoon for 1 minute. 6. Add 4-5 tbs water and lower the heat over lower heat to cook and stir it. 7. Cover the lid of the pan and simmer it for a few minutes. 8. Open the lid and add garlic and the mushroom strips and sauté until potato strips are fully cooked. 9. Add ½ ts to1 ts of salt (depends on your taste), 1 tbs of sesame oil and turn off the heat. 10. Garnish with chopped red pepper and green onion.

It’s a spicy Korean cucumber side dish called oi-muchim. If you have a nice seedless English cucumber, you can make this delicious banchan in just a few minutes. During my round the world Gapshida trip to meet my readers in 2011, I made this dish almost everywhere I went. Everybody loved it. Who wouldn’t like cold, fresh, crispy, seasoned cucumber? Each bite is succulent and wonderful! Oi means “cucumber” in English, and muchim means “mixed” or “seasoned,” so many people simply call this dish “seasoned cucumber”. Many Koreans have their own version of it, so you’ll find many variations from family to family. This one is mine, and I’ve been using it for a long time. It’s also one of the dishes in my cookbook. A major tip for this recipe is to make it and mix it just before serving, which will keep it crisp and fresh and prevent it from getting watery. It’s perfectly for a summertime BBQ – refreshing and just spicy enough to give you a little kick! Enjoy the recipe! Let me know if you make it! This is really low calorie and high calcium so Korean parents regularly prepare it for their children. When I was going to school, this was one of the usual dishes we ate all the time. My mom always prepared it for my school lunch. In this video I make two kinds of myulchi bokkeum. One is sweet, crispy, and mild, the other is sweet, crispy, and hot spicy. Ingredients: 1. 2 cups dried anchovy, olive oil, brown sugar, 2. garlic, hot pepper paste, corn syrup, water, 3. sesame oil, sesame seeds For mild myulchi bokkeum: 1. Stir 1 cup of small dried anchovy in a heated pan for 1 minute. 2. Add 1 tbs olive oil and stir it for another minute. 3. Push the cooked myulchi to the edge of the pan away from the heat. 4. Make sauce by adding 1 or 2 tbs sugar, ½ ts minced garlic, 2 ts water, and 1/2 tbs corn syrup (optional) to the cleared spot on the pan. 5. Tip the pan so only the sauce is over the heat. Simmer it until the sauce looks shiny. 6. Mix the cooked anchovy with the sauce and turn the heat off. 7. Add ½ tbs sesame seeds and 1 ts of sesame seeds. For spicy myulchi bokkeum: 1. Stir 1 cup of small dried anchovy in a heated pan for 1 minute. 2. Add 1 tbs olive oil and stir it for another minute. 3. Push the cooked myulchi to the edge of the pan away from the heat. 4. Make sauce by adding 1 tbs hot pepper paste, 1 tbs sugar , ½ ts minced garlic, 4 ts water, ½ tbs corn syrup to the cleared spot on the pan. 5. Tip the pan so only the sauce is over the heat and simmer until the sauce looks shiny. 6. Mix the cooked anchovy with the sauce and then turn the heat off. 7. Add 1 ts sesame oil and ½ tbs sesame seeds. *You can keep it in the refrigerator up to 2 weeks until you finish eating it. When you eat it, put it at room temperature for a while before eating, so it can get soft.

Heat up a skillet over medium high heat, and add the sausage to the pan once the pan is hot enough that when you add the sausage, it hisses and sizzles. Break up any large bits of sausage with your cooking utensil, and brown the sausage for about 5 minutes, until the sausage has cooked through. Remove the pan from the heat and set aside to cool slightly. Split the zucchinis in half down the length of them, scoop out the middle of the zucchini using a melon baller, and discard the scooped middle part. Place the prepped zucchinis on a sheet pan, and sprinkle with salt. In a large bowl, combine the browned sausage, bread crumbs, parmesan cheese, garlic, diced tomatoes, egg, parsley, and scallions. Add a pinch of salt and pepper, and mix it all together until well blended. Scoop this filling into the prepped zucchinis, and be generous about piling as much of the mixture in as you can.
