Music by: Jason Shaw http://www.youtube.com/user/audionautix I was looking for a good recipe for a colleague at work who love peanut butter and chocolate. I found this one on the Woman's Day website. It was love at first sight. INGREDIENTS 1 box Chocolate Brownies mix 1⁄2 cup peanut butter chips 1⁄2 cup dry roasted peanuts (original recipe says chopped, I left them whole) Peanut Butter Filling 3⁄4 cup creamy peanut butter 1 cup marshmallow cream (such as Marshmallow Fluff or Creme) 3⁄4 stick (6 Tbsp) butter, softened 3⁄4 cup confectioners' sugar (also called icing sugar or powdered sugar) Chocolate Glaze 6 oz bittersweet baking chocolate, coarsely chopped 5 Tbsp butter 1 Tbsp corn syrup PREPARATION 1. Heat oven to 350°F. Line a 9-in. square pan with foil, letting foil extend above pan on opposite sides. Coat foil with nonstick spray. 2. Prepare brownie mix as package directs for fudgy brownies. Stir in peanut butter chips and peanuts. Spread evenly in prepared pan. 3. Bake 30 minutes, or until a wooden pick inserted in center comes out with moist crumbs attached. Cool completely in pan on a wire rack. 4. Filling: Beat peanut butter, marshmallow cream and butter in a medium bowl with mixer on high speed until well blended. Reduce speed to low, add confectioners' sugar and beat until blended. Spread evenly over brownie. 5. Glaze: Microwave chocolate and butter, stirring at 30-second intervals, until melted and smooth. Cool slightly; stir in corn syrup. Spread evenly over Filling. Refrigerate 1 hour until Filling is firm and Glaze sets. 6. Lift foil by ends onto a cutting board. Cut in 6 rows lengthwise and 6 crosswise. Planning Tip: Refrigerate in a rigid container with wax paper between layers up to 2 weeks or freeze up to 3 months. These taste a bit like the peanut butter equivalent to "Nanaimo bars" which are Canada born. These are Nanaimo bars: http://www.eclecticcook.com/nanaimo-bars-the-real-deal/ They are no-bake, come to think of it, I think I may make them here eventually. :)

The Most Amazing Chocolate Cake is here. I call this my Matilda Cake because I swear it’s just as good as the cake that Bruce Bogtrotter ate in Matilda. Moist, chocolaty perfection. This is the chocolate cake you’ve been dreaming of! ________________________________________↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ The Most Amazing Chocolate Cake BUTTERMILK SUBSTITUTE: http://thestayathomechef.com/buttermilk-substitute/ Prep Time: 10 minutes Ready In: 45 minutes Yield: 3 9-inch rounds Ingredients butter and flour for coating and dusting the cake pan 3 cups all-purpose flour 3 cups granulated sugar 1½ cups unsweetened cocoa powder 1 tablespoon baking soda 1½ teaspoons baking powder 1½ teaspoons salt 4 large eggs 1½ cups buttermilk 1½ cups warm water ½ cup vegetable oil 2 teaspoons vanilla extract Instructions Preheat oven to 350 degrees. Butter three 9-inch cake rounds. Dust with flour and tap out the excess. (see cooking lesson below) Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. Divide batter among the three pans. I found that it took just over 3 cups of the batter to divide it evenly. Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean). Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely. Frost with your favorite frosting and enjoy! Notes The better quality cocoa powder you use the better the cake will taste. Chocolate Cream Cheese Buttercream Frosting Prep Time: 10 minutes Yield: enough frosting for a 3 tiered cake Ingredients 1½ cups butter, softened 8 oz cream cheese, softened 1½ cups unsweetened cocoa powder 3 teaspoons vanilla extract 7-8 cups powdered sugar about ¼ cup milk (as needed) Instructions In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results Add in cocoa powder and vanilla extract. Beat until combined. Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated. Notes In the photos above, an extra dark cocoa powder was used in the frosting. Extra dark cocoa will result in a much darker, almost black frosting. METRIC MEASUREMENTS Ingredients butter and flour for coating and dusting the cake pan 450 grams all-purpose flour 650 grams granulated sugar 155 grams unsweetened cocoa powder 17 grams baking soda 8 grams baking powder 11 grams salt 4 large eggs 350 ml buttermilk 350 ml warm water 115 ml vegetable oil 10 ml vanilla extract Instructions 1. Preheat oven to 176 degrees Celsius. Butter three 23 centimeter cake rounds. Dust with flour and tap out the excess. 2. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. 3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. 4. Divide batter among the three pans. 5. Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean). 6. Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely. 7. Frost with your favorite frosting and enjoy! Thanks for watching! I've been making a whole lot of fudge as Christmas gifts for people and figured I would make a how to video of the process I use. It makes quick and easy shareable desserts. You can use pretty much any other flavored chip in the second step, the sky is the limit, go wild! Update- I've been informed it's technically ganache, but it fills the same role. Still delicious and quick. Original: Ingredients: 18 ounces semi-sweet chocolate chips 1 can sweetened condensed milk (I use Eagle brand) dash of salt 1-2 teaspoons vanilla extract (I use Watkins double-strength; 1 for double strength, 2 for single-strength) 1/2 cup of chopped nuts (optional) Utensils/containers: Measuring cup Silicone spatula Bowl that can hold at least four cups of liquid 9x9 pan. Line with wax paper. Mix the semi-sweet chocolate chips and the condensed milk in a bowl. I have a 1500W microwave, and after one minute at high heat, the chocolate is melting nicely. Be careful not to overheat, because that tends to burn the chocolate. It usually won't be obvious that the chocolate is melting until you stir it. If one minute isn't enough, heat for another minute at a time. Once the chocolate and condensed milk mix, add the salt and vanilla (and nuts if you are using them) and stir some more to help blend them. Turn out into the wax-paper-lined pan. Chill in the refrigerator, but it should survive storage at room temperature. It typically takes several hours to cool. Cut into chunks and serve. You can serve cold, but it melts better in the mouth when at room temperature. With butterscotch: Ingredients: 12 ounces semi-sweet chocolate chips 6 ounces butterscotch chips 1 can sweetened condensed milk (I use Eagle brand) dash of salt 2-4 teaspoons vanilla extract (I use Watkins double-strength; 2 for double strength, 4 for single-strength) 1/2 cup of chopped nuts (optional) Utensils/containers: Same as above. If you want the look of nuts, mix in the butterscotch chips as is or with a little chopping. If you want the butterscotch to be non-obvious, chop it thoroughly. I have good luck when I freeze it, then use my blender to chop the frozen chips. Prepare the chocolate as above, leaving the butterscotch out for now. Once the chocolate and condensed milk are mixed, add in the butterscotch chips or powder. Stir to mix the butterscotch in. Heat for another 30 seconds (1500W microwave) or minute (1200W microwave). Add the salt and vanilla (and nuts if you are using them). Heat again if necessary. Turn out into the wax-paper-lined pan. Chill for several hours to solidify, allow to warm to room temperature, cut, and serve.

No Bake Chocolate Biscuit Cake, many of us are familiar with it since childhood, in various shapes and forms. Chocolaty, rich dessert made with crushed biscuits, chocolate syrup and toasted nuts, hardly not to fall in love with it. To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/no-bake-chocolate-biscuit-cake Ingredients Makes about 10 servings 28 oz (800g) digestive biscuits, tea biscuits 1 cup (100g) nuts (walnuts, hazelnuts), toasted, slightly chopped Chocolate Syrup 1 cup (200g) sugar 1/2 cup (60g) unsweetened cocoa powder 1 cup (240 ml) water 2/3 cup (150g) butter 1 tsp vanilla extract Chocolate Ganache 1/2 cup (120 g) whipping cream (35% fat) 4 oz (120g) bittersweet chocolate, chopped 1. Break the biscuits (cookies) into small pieces into a large bowl. 2. Heat a non-stick pan over medium high heat and toast walnuts or hazelnuts for about 5 minutes, stirring frequently to toast evenly. Add toasted nuts over the biscuits. 3. Prepare the chocolate syrup. In a medium sauce pan add sugar and cocoa powder. Stir to combine and gradually add water, while stirring to combine well. Add the butter and place over medium heat. Bring to boil for about 7-8 minutes stirring constantly. Remove from heat and add vanilla extract. Set aside to cool slightly for about 10-15 minutes. 4. Pour the syrup over the biscuits and nuts and combine well using a large spatula or spoon. 5. Transfer the mixture into a 9 inch (23 cm) non-stick round cake ware (like the one I’ve used from Delicake) or use a 9 inch (23 cm) springform pan, bottom lined with parchment paper. 6. Press well using the back of the spoon or an offset spatula. 7. Cover and refrigerate for about 30 minutes to 1 hr before preparing the chocolate ganache. 8. Prepare Chocolate Ganache. Place cream into a small saucepan and heat until just begins to boil. 9. Pour hot cream over the chopped chocolate and let sit for 1 minute. Stir until smooth. 10. Pour ganache over the chocolate biscuit cake and refrigerate to set for about 3-4 hours or overnight before serving. 11. Decorate with toasted nuts if desired, cut into slices and serve. Recipe here: http://www.joyofbaking.com/candy/PeanutButterFudge.html Stephanie Jaworski of Joyofbaking.com demonstrates how to make Peanut Butter Fudge. Peanut Butter Fudge is a simple enough recipe; just a mixing together of butter, peanut butter, vanilla, and confectioners' (powdered or icing) sugar. I love how this type of fudge is so much faster and simpler to make than the old fashioned fudge which involves using a candy thermometer. You might want to include this candy in your Christmas baking as it makes a large batch and can be made ahead and stored in the refrigerator for about a week. My name is Kristy, and today I’m sharing a dump-and-bake dessert. If you haven’t heard of those, you dump the ingredients in the pan, you stir it, and you bake it. You don’t have a lot of extra messy bowls. Today I’m going to make a hot fudge sundae cake. First, you’ll want to preheat your oven to 350 degrees. And you’ll need an ungreased, 9 x 9” baking pan. I don’t have one, so I’m going to try out the 8 x 8”, I think it will be fine. You can use a lot of recipes and vary the size of the pan. It just depends, your cooking time might change. You don’t want to grease it. I’m using this Rada stoneware, which you don’t have to grease. They’re really great. First, we’re going to dump in a cup of flour. ¾ cup of sugar and 2 tablespoons of unsweetened cocoa powder. Then we’re going to add 2 teaspoons of baking powder and then ¼ teaspoon of salt. Now we’re just going to whisk all this together. This Rada Handi-Stir works great for dry ingredients like this. It’s little and mighty. I just love it. It really works well to mix batters and gelatin and scrambled eggs. So now what we’re going to do is make a little well in the center. We’re going to stir in half a cup of milk, 2 tablespoons of vegetable oil, and then a teaspoon of vanilla. With a fork we’re just going to stir this together until it gets smooth. Now you need about a cup of chopped walnuts. I had some whole walnuts. I’m going to use this really neat food chopper. It has a nice, sturdy handle to chop those nuts up. You can use it to chop onions, celery, and potatoes. We’re going to sprinkle that over our chocolate mixture. Now we’ll make sure the batter is even in the pan. Now we’re going to take a cup of brown sugar and sprinkle that evenly in the pan. This cake makes its own little fudgy topping. It’s so easy to make, it’s something you can make in a matter of minutes and eat while still hot out of the oven. We’re going to add ¼ cup sweetened cocoa powder again. Now we’re going to take 1 and ¾ cup hot water and pour over everything. Don’t stir, just pour it. OK, that’s how it looks, that’s fine, don’t stir it. Now we’re going to put it in that preheated oven for about 40 minutes. So, now I’ve taken my cake out and let it cool for 15 minutes. It is best served warm. I’m going to use this Ice Cream Scoop to flip it over on the plate. And look at this sauce you get. It’s going to be at the bottom of the pan so you want to make sure you scoop that out and put it over it. Then take some whipped cream and nuts. Start with the heavy bottom pan on a medium heat, to the hot pot add 3/4 cup sugar and a tbsp of ghee. Stir well, to that add milk (milk of your choice, whole milk or almond milk works great) Once the sugar is melted and add in the almond meal. Stir and add rest of the milk and ghee. Keep stirring for couple of minutes. Until everything is well combined and forms a lump. A quick and easy dessert ready in under 10 mins. On the official entry into double digits, LE&N take an old favorite this week - FUDGE! The title calls it 2 Minute Microwave Fudge, but it actually takes about an hour and a half. But it's worth it! And because it's episode 10, uploaded with the show will be the first CFA Wrap-Up. By the way, we just realized, because we halved the recipe, we should have halved the pan size, from 8x8x2 to some other number. Careful! http://www.recipezaar.com/2-Minute-Microwave-Fudge-43703 http://cookingforamateurs.blogspot.com/
