In this video, let's make Perfect Amritsari Aloo Kulcha Recipe, in a tawa. This kulcha is pretty different from what's made across homes in India, as it is layered with butter/ghee like a puff pastry and cooked in low heat until golden & crispy. Buy an Iron Tawa - http://amzn.to/2iX7ns3 (don't use nonstick!) Ingredients: Dough - 2 cup Maida ½ tsp baking powder Sugar - 2 tsp Salt - as per taste 10g butter/ghee Water - to make dough Filling - Potatoes - 6 boiled Onion - 1 chopped finely Coriander Pepper - 1 tsp crushed Green Chili - 1 large Ginger - 1 inch Coriander Leaves - 2 tbsp chopped Kasoori Methi - ½ tsp Black Salt - ½ tsp Ginger chopped - 1 tsp Cumin Powder - ½ tsp Salt - 1 tsp Amchoor Powder - ½ tsp Dry Maida - 2-3 tbsp To Make Kulcha - Dry Flour Butter To Serve: Chole & Pudina Imli Pyaaz Chutney Website: http://www.cookingshooking.com | http://www.cookingshooking.in Fb: http://www.fb.com/cookingshooking Blog: http://www.cooknshook.blogspot.com

Best part about this video is the way he cooked it. No fanciness or show off just the crude, indian dhaba style... the way the kulcha should be made. Loved it

Hello - I'm loving your videos but in terms of Indian cooking the spices just seem to be a big complexity of huge combinations. I wonder If you might do a vid one day and attempt to simplify the subject? I mean is there some basic rules of thumb or some basic combinations that one can learn as a good basis before developing complexity ? Are there families of spices ie, spices that work well together and spices that don't? You often use a very large number of spices and I wouldn't be able to lay hands on all of them and yet I wouldn't know which ones it is ok to leave out and which are essential. Hope this makes sense :-)

You should write the name of every ingredient you mention on the screen. you English is not perfectly understandable and the ingredients you use are not known everywhere. Writing them will make it clear and easier to know what you re talking about and then try to get those ingredients.
CookingShooking (3 months ago)
I'll try :) However I always mention them in the description box down the video

@CookingShooking, there is a secret ingredient that every Amritsar Kulcha wala use. That’s is MSG or agenomoto added to the dough. It somehow enhance the crispness but it’s of objectionable status health wise.
