Very important to salt the fish first to extract water. This helps with crispness
IcedCupcakes (7 months ago)

That looks stunning. So you don't need to turn the fish when frying?
黎昕 Cathy Zhang (11 months ago)
Thank you Duncan!
Duncan's Thai Kitchen (11 months ago)
yes turn the fish and baste with hot oil
JD (11 months ago)
That looks amazing but I can't get Barramundi here in the UK. Can you recommend a substitute? I'm guessing sea bream / sea bass maybe? Also, if I don't have rice bran oil would you recommend either peanut oil or rapeseed or something else?
JD (11 months ago)
Thanks Duncan
Duncan's Thai Kitchen (11 months ago)
HI, any firm white flesh fish will work. Peanut or vegetable oil, oils with a high smoke point would do. Thx
