Chinese food cooking is very different in varying parts of the U.S. Here there is no mixed vegetable in fried rice. No peas & carrots either. Yuck!

my kind of version spices for fried rice: garlic, shallot, chilli, kaempferia galanga, turmeric (for coloration) and NO sweet soy sauce. if you still want to use soy sauce, use light soy sauce (the salty one). And then some eggs. Delicioso 😋

That looks like the fried rice I cook at home, except for the bean sprouts in it. I learned to love and cook it while stationed in Thailand while stationed there, and have been eating it since then. Before going there, I didn't like rice due to the way my mother, and grandmother cooked it.

Sauces/ Oils: Light Soy Sauce Grapeseed Oil Dark Soy Sauce Fish Sauce The sugar they used probably helps to cancel out the saltiness. This was THEIR recipe, you can always just use less or more depending on how you prefer.
