I tried making the coconut cookies today and they turned out amazing. I kept them in the oven a little longer so they became darker in colour and slightly caramelised too so i ditched the chocolate. Sure going to make these a lot more. Thanks!

Let me spare someone my error in making these-I used all natural stir in the oil peanut butter, it was so loose I couldn't make fork indentations into it. Second batch added a little almond flour and chilled with high hopes-=flat as a pancake. I have a feeling that most store bought lines of PB have stabilizers in them that help them keep some lift.
so i made the peanut butter cookies, they turned out way bigger than i expected but was very happy with the turnout and it tasted amazing, i even made myself put some up for later so i could have more. these cookies were big and bold! a tip my sister gave me was to dip the fork in milk before pressing down to make that traditional peanut butter cookie shape
Gemma, I don't know if you'll see this and respond, but I hope that you will. I would very much love to make the oatmeal chocolate chip cookies, however, one of my children has a sensitivity (not quite allergy) to bananas, so I'd rather not use those. You said that the banana takes the place of egg and butter, however, if I wanted to use egg and butter instead of bananas, how many of each would I need? Thanks so much.
We JUST made the peanut butter cookies and are waiting for them to cool until we can eat them! :) Edit: they were amazing! Mine turned out a little crispy (probably didn't need that extra couple minutes I gave it) but still delicious. My younger son wants to do them again but mix in chocolate chips next time. :)
Those look great. I have to say, though, the chocolate doesn't dry. It's not wet. It's melted. As it cools, it hardens. People say that about melted wax, too. Wax also doesn't dry, but hardens.
Regardless, now I want to make all these cookies. Thanks for the great recipes!
A three ingredient cookie, which does not have flour, will need something to bind it. I think I would try this: 1/2 quantity of white sugar, 1/2 brown sugar. 1 cup of ap flour, and a teaspoon of baking powder. This is really off the top of my head, but it may work for you, I think it is worth a shot! :)
Tried all of these and they're all so lovely! I used more condensed milk as my dessicated coconut needed more. Combined brown and white sugar for the peanut butter cookies oh they are so delicious. Depends on the chocolate really! 72% cocoa solid chocolate will have about 150C in an ounce, some from fats. I suppose this is about moderation. It is also high in antioxidants, and makes us feel good. If it is a concern for people it is worth doing a little research :)
I made about 15 pcs of 3-ingredient oatmeal chocolate chip cookies ... but failed.
1) No Parchment paper, not readily available in stores near my home. Gotta use aluminum foil but the foil makes cookies' bottom... burn faster.
2) No chocolate chips in my stock but used instead were NIPS (candy-coated chocolates / smaller version of M&Ms chocolate)
3) I used Saba banana (short, bulky banana / primarily a banana mainly used for cooking).
I don't think this type of banana has any effect on the cookies' consistency.
Of course, I put oats here.
I got burnt-bottom, lumpy, damp, hippy-multi-colored cookies.

After scraping off the burnt parts... Edible... Tastes weird though... but ok...

Your baking time may change, so do keep an eye on it. There is no sugar in the oatmeal one, mashed banana binds and sweetens :)
i love her accent, but she never gave any quantity of ingredients, how much sugar do you use or how much peanut butter. if you use 500g of pb, how much sugar is needed, its one thing to be fast, but the devil is in the details
