That is "Gậy" ( I think this word is quite difficult to translate in English because it is the local word :)) Its composition depends on the preferences of each person. Rice and sugar are main components besides you can add corn , peanuts , beans or noodles. Just 1 -2 kg of rice you will have a bag of " Gậy" to eat. People usually joke that the children do not know "Gậy" are not people in my village. Eating " gậy" in the cold weather will be more delicious. As far as I know, the local use Lemon soaked forests to make this Crispy STUFFING DUCK dish in Vietnam. FYI: To cook stuffing duck in Vietnam, duck is usually selected, not too young or too old, the meat will taste better. After cleaning duck feathers and intestines removed unnecessary parts, one blast to duck swell. Then put the duck meat into boiling water to tone the back, duck thus tastier. Duck is diluted honey basting them with soy sauce and malt make up for the relatively fresh duck meat specialties. Fresh coconuts are readily available in Vietnam, and layers of coconut are sweet and crunchy. Therefore, a Vietnamese cake "Banh Dua Up" is made out of cassava and coconut. This COCONUT Coin CAKE is grilled on Hot Steel. When I lived in Vietnam, I would go down the street and buy a slice every few week or so - that was enough to make me happy. Served by flipping cake upside down so the bananas are on the top and coconut minced layers are inside. I know that doesn't make it appealing but it's really good. The consistency is due to its two main ingredients: cassava and coconut milk. Though the cassava is grated, you can taste a bit of the fibrous cassava. My favourite part is the caramelized golden exterior of the cake. FYI: I not only enjoy the cake but also enjoy watching the street vendor making his goods. He is so skillful at his job, making 10 COCONUT Coin CAKE on Hot Steel in just few minutes. Btw, i got 4 cakes for less than $1. Super Vietnam Street Food deal.

Sometimes I am tired of eating a traditional pizza in restaurants in Vietnam. Luckily, one of my Vietnamese friends showed me this unique Pizza Breakfast Meal. Looking a bit like normal pizza, the eggs pizza in Vietnam is really interesting to try. It's thin but crispy and cheesy. I myself ate two of them in a row. Vietnamese Pizza is a rice paper with eggs and many kinds of toppings added when grilled on hot charcoal. There's no right or wrong topping with this Vietnam street food. Some people like to add a Western spin with cheese and cut-up hot dogs. Whereas I like to keep mine very traditional with exotic Southeast Asian flavors, such as fermented shrimp paste (Mam Ruoc), dried pork, Sriracha sauce and as many eggs as possible. FYI: Crack two quail eggs or 1 whole chicken egg directly onto the rice paper. Today I'm proud to introduce you my favorite Vietnam street food dish called Crispy Roast BBQ Whole DUCK. This is the fabulous Vietnam street food specialty that I'm always hungry for. An excellent Crispy Roast BBQ Whole DUCK must be served with crunchy skin, pink meat and memorizing smelling. The street food vendor near my place has done an amazing job in roasting BBQ whole Duck. Look at the skin! I'm just mouthwatering. The good thing was that I had the vendor serve me the duck right after he finished roasting some ducks on the sidewalk. I got it for less than 15$. FYI: In order to have crunchy & shiny brown skin of Crispy Roast BBQ Whole DUCK for Street food in Vietnam 2017, malt is a compulsory ingredient. Even though, honey, molasses or jaggery can be used as substitutes; the final result will not be as good as using malt (melted sugar). I am not sure what exactly the street vendor painted on the duck, but he said he used honey, cooking oil and other secret stuff.

I was amazed by observing the full process of River Snail Cooked Three Ways for 5 People Family Dinner Meal in Vietnam. Thung Nham (Nham Valley) eco-tourism zone is located in Hoa Lu District, 12km south of Ninh Binh City. After a three-hour drive from Ha Noi, the gate of Thung Nham comes into our view. Visit Thung Nham was in summer and spring, when the birds are busy building nests and breeding. Thung Nham Birds Park houses more than 40 species of birds, some of them named in the Red List of Threatened Species by the International Union for Conservation of Nature and Natural Resources. The site has a rich ecosystem, including more than 100 flora and 150 fauna species. We ride the boat into the mangroves and are delighted when Cong shows us nests with many little eggs. Then he helps us identify the different birds and tells us their habits. Our children are excited because this is the first time they have had such a real lesson in biology. FYI:Especially, going to Thung Chim, tourists have a chance to explore the wildlife of nearly 40 species of birds with its number of up to 50,000. It is also an important nesting habitat for many species of waterfowl, for instance, storks, herons, cauldrons, soil eagles and many other species of birds. The timing of these birds inhabiting most is from May to July annually. Notably, sunset here is the most crowded, busiest moment of the day. Flocks of birds concentrate Thung Nham as their shelter after a foraging day. They fulfill the wetlands, forming the vivid and colorful picture. This is the typical characteristic in the beauty of Thung Nham that nowhere can be found, which creates the highlight of Thung Nham in Ninh Binh tours.

Seriously, you can find sea crabs everywhere in the world. It is not what I am looking for when I am in Vietnam, specially for my Vietnam street food adventure. What I am impressed at street food in Vietnam when it comes to crabs is Paddy Mud Crab, Rice Field Crab or Rice Paddy Crab. Those crabs are super small and aggressive. People in Vietnam turn them into delicious crab dishes nevertheless. I was lucky to have a dinner meal made of paddy mud crabs with my neighbor. She made a dish called Paddy crab paste vermicelli soup. This dish is a dish have full of water that the broth is charming, and sweet. The sweetness of paddy crab paste vermicelli is from the crabs themselves. This noodle soup is easily recognized by the red color of tomato and crab soup base. FYI: This paddy crab soup can be labor intensive, but I was surprised to find that it took my neighbor only an hour to make.
