I am simply sharing ideas as inspiration, but these are not intended to be replicated exactly as shown– take what you want and leave what you don’t! That being said, I did design all of the bento box lunches to be between 450 and 550 calories for your convenience, so if you are interested, all nutrition information is available in the eBook (linked above) for both the individual recipes and the entire boxes. Recipes in the eBook are also noted in grams/metric in addition to cups/imperial, and how long the recipe will last is also noted. All of the recipes are intended to be able to be eaten at room temperature or cold, so there is no need to reheat. If there is a recipe you prefer to consume warm, it’s best to package it separately to warm up as you’d like. STUFF From this video: ► Bento Box: http://amzn.to/2huhKly ► Bento Box Side Container: http://amzn.to/2iNtqPP ► NutriBullet: http://amzn.to/2iNpUoq ► Vitamix: http://www.tkqlhce.com/click-8488026-13085456 BLUEBERRY PANCAKES Watch video here: http://bit.ly/2iNwtaJ Ingredients ¼ cup oats ½ cup egg whites ¼ cup cottage cheese 1 tsp baking powder ½ tsp vanilla extract 1–1 ½ Tbsp coconut flour pinch of salt 1/3 cup blueberries Procedure Mix your ingredients (except for berries) in a blender until well combined. Adjust consistency to a normal pancake batter consistency, using more flour or water accordingly. (The coconut flour is just a thickener in this recipe. Regular flour is fine as well, although you may need more.) Preheat griddle or skillet. Add your batter to the sprayed skillet, and top with a few blueberries. I made mini for these, but any size will do! Allow to cook for a few minutes, until set on the bottoms and edges and beginning to bubble. Flip! Allow to cook another minute or two before serving. Cool before storing for later. CUCUMBER HONEYDEW SALAD Ingredients 1 cup honeydew, chopped 1 cup cucumber, chopped 2 Tbsp red onion, diced 3 Tbsp feta cheese 1 lime or lemon, juiced 1 Tbsp dill weed, chopped ½ tsp poppy seeds pinch of salt Procedure Whisk together lemon juice, dill weed, poppy seeds and salt. Add other ingredients and toss lightly to coat. Chill and serve! CHUNKY MONKEY BLENDER MUFFINS Ingredients 3 cups oats ½ cup chunky peanut butter 1 ripe banana 1/3 cup maple syrup 1/3 cup cocoa powder 1 tsp vanilla extract 1/2 tsp salt 1 1/2 tsp baking soda 2 cups water 1/2 cup dark chocolate chips (dairy-free for vegan) Procedure Preheat oven to 375°F. Combine all ingredients (except for chocolate chips) in a blender until smooth. Stir in chocolate chips, reserving a few tablespoons for topping. Transfer the batter to a muffin tin, sprayed or lined with liners, and fill about 2/3 of the way full. Bake 20-25 minutes, until a toothpick comes out clean. Cool before enjoying and storing. POMEGRANATE SPINACH SALAD Ingredients 1 cup spinach 3 Tbsp red onion, sliced 1/4 cup carrot, chopped 2 Tbsp crumbled goat cheese 1/4 cup pomegranate seeds 1/2 tsp olive oil 2 tsp balsamic vinegar Procedure Whisk olive oil and balsamic vinegar together. Add remaining ingredients and toss to coat. Preheat oven to 400°F (200°C). Poke holes in squash with a fork and microwave 5 minutes to soften up the squash. Score all the way around the squash lengthwise with a knife, marking the line of the cut. Cut squash in half lengthwise, scrape out seeds and guts. Brush with oil, season with salt & pepper. Place cut-side down on a baking sheet lined with parchment and bake for about 40 minutes, until tender enough to scrape strands. Should be easily pierced with a fork. (Not TOO cooked through since you’ll cook more later.) Time will vary depending on the size of squash. You can store the cooked squash in the fridge for a few days before making your boat, or prep to eat immediately. When cool enough and ready to eat, scrape/shred the squash. In a large mixing bowl, mix all salad ingredients together (besides pesto). Season to taste. Place cooked spaghetti squash boats face up on a plate or cutting board. Spoon 1 Tbsp (to taste) of pesto onto each boat, followed by Mediterranean salad, then mix to combine with squash shreds. Garnish with parsley and enjoy cold! Yields 2 spaghetti squash boats. Add butter, ghee, or coconut oil to a pan over medium-high heat and allow to melt. Add garlic and ginger paste. Cook until fragrant. Add beef and cook until no longer pink. Add broccoli florets and cauliflower rice. Season with salt & pepper. Mix to combine. Cook until broccoli is bright and vibrant and cooked through to your liking. Lower the heat and add your sauce ingredients. Toss to coat and season to taste. Store in the fridge, or freeze if desired! Enjoy warm, topped with avocado slices, sesame seeds, and green onions—or your favorite toppings! If meal prepping for the week, double this recipe! Yields 4 meals (~6 oz per meal). Remove any air from the bag, seal, and freeze. The night before cooking, transfer bag to refrigerator to thaw. After thawing, pour bag into slow cooker. Cook on low for 6 to 8 hours, or on high for 2 to 3 hours. Serve in tortillas, with lettuce, shredded cheese, or your favorite toppings! You could also serve this over rice as a burrito bowl, or as a salad over greens! Yields 6 cups (4 servings). Blend everything together. Line muffin tin with liners. Scoop batter into liners (I use a cookie scoop!). Bake 20-25 for mini muffins (regular sized muffins will take 30-40 minutes). Cool completely before storing in the fridge. Yields ~30 mini muffins. Per serving of 6 mini muffins: 274 cals | 22F | 9C | 13P 4 fiber | 2 sugar | 5 net carbs ► Zucchini Waffle Sticks: Ingredients: 2 cups oats ⅓ – ½ cup milk (adjust to a pancake batter thickness) 1 tsp vanilla 2 eggs 1 cup zucchini, grated 1 ripe banana 1 tsp cinnamon 1 tsp baking powder 1 tsp sweetener of choice Procedure: Blend all ingredients together, except zucchini. Add batter to a mixing bowl and stir in zucchini. The batter should be similar to that of a normal pancake batter or a little thicker– adjust milk accordingly. Pour batter into waffle iron and cook, according to the directions provided by your waffle iron. (I used a mini waffle-stick iron, but you could also use a standard waffle iron. I find it helps to use a cookie scoop or measuring cup to help pour the batter over the iron.) When waffle or waffle sticks are done cooking, carefully remove from iron. Serve warm with toppings of choice! Yields about 20 waffle sticks. That being said, I did design all of the bento box lunches to be between 450 and 550 calories for your convenience, so if you are interested, all nutrition information is available in the eBook (linked above) for both the individual recipes and the entire boxes. Recipes in the eBook are also noted in grams/metric in addition to cups/imperial, and how long the recipe will last is also noted. All of the recipes are intended to be able to be eaten at room temperature or cold, so there is no need to reheat. Stir in brown rice. Assemble your tacos by filling tortillas with your beans & rice mixture, along with your other favorite toppings. Line a loaf pan with foil and spray. Blend all ingredients (besides optional toppings) in a blender or food processor. Pour into loaf pan. Add optional toppings if desired. Bake for about 40 minutes, until a toothpick comes out clean. Allow loaf to cool completely before removing from the pan. Once completely cooled, store in an airtight container, or freeze. Yields 8 slices. Per 1 slice: 177 cals | 3F | 34C | 5P ► LENTIL STEW: Ingredients 1 Tbsp oil 1 cup onion, chopped 2 garlic cloves minced 1 pound lentils uncooked 1 can (28 oz) crushed tomatoes 4 cups water salt & pepper, to taste Procedure In a large saucepan, sauté onions and garlic in oil for about 5 minutes, until tender. Add lentils, tomatoes, and water to the pot. Bring to a boil, bring the heat down to low, cover, and simmer for around 30 minutes, until all the liquid is absorbed. Stir occasionally to make sure they aren’t sticking to the bottom. Season to taste with salt and pepper. Enjoy! Yields ~8 cups of stew (5 servings). For this and all things Mind Over Munch, be sure to head to mindovermunch.com! CAULIFLOWER CRUST PIZZA RECIPE INGREDIENTS ~1/3 head cauliflower (enough for 2 cups cauliflower rice-- one medium head will usually yield about 6 cups of rice) 1 egg 1/2 cup parmesan 1/4 cup mozzarella 1/4 tsp salt 1/8 tsp pep 1 tsp garlic PROCEDURE In a processor, blend up cauliflower florets. Steam cauliflower by placing in microwave in a bowl (you don't need to add water or cover) and heat 7-8 minutes, stirring once. Allow to cool. Preheat oven to 400F. Place 2 cups of cauliflower rice in the center of a piece of cheesecloth or old dish towel (I used a dish towel, but make sure you use one you don't care about as it will likely stretch out). Create a ball with the rice inside of the cloth and ring out the water. DO NOT SKIP THIS STEP--IT WILL MAKE OR BREAK YOUR CRUST! You need to remove as much moisture as possible- continue to ring until water stops coming out of cloth. Transfer to a bowl and mix will all other ingredients. Spread out dough on a pizza pan, lined with parchment paper and sprayed. Bake 9-12 minutes, until firm and cooked through. Remove from oven and add desired toppings ((I used homemade pasta sauce, mozzarella, basil, zucchini, sautéed onions/garlic and turkey pepperoni!). Return to oven for another 5-7 minutes, until cheese is melted. Slice and devour! NUTRITION per serving (1 piece, yields 6--CRUST ONLY, toppings not included in nutrition): 61 calories | 2g carbs | 3g fat | 5g protein Check out some of my other related recipes! Put on the lid and cook over low heat for 4 to 6 hours. Yields 5 cups (5 servings). Per 1 cup serving: 105 cals | 4F | 15C | 1P ► JACKFRUIT TORTILLA SOUP: 6 corn tortillas, cut into ¼ inch strips oil 1 cup onion 2 garlic cloves 1 can (15 oz) tomato sauce 1 jalapeno pepper, seeded & diced 1 lime, juiced 1 tsp chili powder 1 tsp paprika ½ tsp cumin ½ tsp oregano 4 cups broth 1 can (20 oz) in brine/water (not syrup), drained & rinsed salt & pepper, to taste Preheat oven to 350°F (180°C). Drain and rinse jackfruit. Cut into smaller pieces (from core to edge for pulled texture). In a saucepan, heat oil over medium. Add onion and garlic and cook until tender. Add jalapeño and cook for 1 to 2 minutes, until fragrant. Add tomato purée, lime juice, spices, and cook until it bubbles. Add broth and jackfruit. Season to taste. Bring to boil, then turn heat down to low and simmer for 20 minutes, covered. While soup simmers, make tortilla strips. Cut corn tortillas into ¼ inch strips. Add strips to a wire baking rack on top of a baking sheet. Spray with cooking spray and season with salt and pepper. Bake 20 minutes, until crispy. When tortilla strips are done baking, add them to a bowl, ladle soup on top, and garnish with extra tortilla strips. Top with avocado, cotija cheese, or sour cream, or your favorite toppings! Yields 6 cups (4 servings).
