Ingredients For the chicken 300 gms Chicken breast boneless 1 tbsp Ginger garlic paste 1 tbsp Red chilli powder Salt to taste Oil to pan fry For the gravy 500 gms  roughly slit tomatoes 100 gms roughly cut onions 1 tbsp garlic paste 50 gms cashew 1 tsp kasoori methi 1/2 tsp garam masala 4 tbsp sugar 2 tbsp kashmiri chilli powder 5 tbsp butter 3 tbsp cream 2 tbsp malt vinegar / 1.5 tbsp White Vinegar Salt to taste Method - Marinate the chicken with ginger paste, garlic paste, red chilli powder and salt and keep it aside for 15 to 20 minutes - In a pan heat some oil then fry the marinated chicken pieces in it,once done place it into a bowl. - In the same pan add onion, oil, spoonful of butter and once the onions are cooked add tomatoes and cashew nuts - Add some water and garlic paste, salt, malt vinegar, sugar, garam masala powder and chilli powder. Evenly mix it and let it simmer for 15-20 minutes - Churn the mixture into fine puree. - Strain it back into the same pan make sure there is minimal wastage. - Add butter, cream, chicken and kasoori meethi and let it simmer for 5-7 minutes. - Garnish it with cream and kasoori meethi Butter Chicken is ready to be served! Ingredients:- For Marination: 1 kg mutton leg; Cut 2 tbsp ginger garlic green chilly paste 1 tbsp red chili powder 1 tsp turmeric powder 1 tsp garam masala powder 1 cup beaten yogurt 1 cup deep fried onions hand crushed 1 cup chopped coriander leaves 1/4 cup mint leaves 1/2 cup chopped tomatoes 2 tbsp ghee 3-4 small cinnamon sticks 2 green cardamoms 2 black cardamoms 1 tsp cumin seeds 3 bay leaves 4 cloves 5-6 green chilies slit Salt as required Strands of saffron 1/2 cup milk For the rice: 1/2 kg basmati rice 1 tbsp ghee 3-4 small cinnamon sticks 1 tbsp of cumin seeds 2 green cardamoms 2 black cardamoms 3 bay leaves 4 cloves 5-6 ginger garlic green chilies paste Salt as required For Layering: 1/2 cup coriander leaves 1/2 cup deep fried onions 2 tbsp ghee Method: For the rice: - Soak Basmati Rice for 20 minutes in luke warm water. - In a pan with boiling water, add salt, ghee, ginger garlic and green chilli paste along with bay leaves, cumin seeds, cloves, cinnamon sticks, green cardamom and black cardamom. Allow th water to boil for 2 to 3 minutes. - Add in the soaked rice in the boiling water. - Cook the rice on high flame for a minimum of 12 minutes. - Once done, drain the rice. For Marination: - In a bowl, take mutton pieces and add yogurt, fried onions, mint leaves, coriander leaves, ginger garlic and green chilli paste, ghee and slit green chillies. - Also add bay leaves, cumin seeds, red chilli powder, turmeric powder, garam masala powder, saffron, cinnamon sticks, cloves, green and black cardamom. - You can keep the marinated mutton aside for 30 minutes or else pressure cook them. - Add sliced tomato and salt to taste. - In order to enhance the flavor of the mutton, add milk instead of water so as to cook it. - Lastly add oil and mix everything well. - Pressure cook for 4 whistle. - After 4 whistle, allow the pressure to subside completely. - Time to layer the rice and the mutton gravy. - In a pan, layer the gravy and then place the rice. - Top it with ghee, fried onions and coriander leaves. - Repeat the layers. - Cook it on a high flame for 7 minutes and then low flame for 7 minutes. - Plate the rice and garnish it with fried onions and coriander leaves. Ingredients:- 200 gm boneless chicken breast chopped 2 tbsp oil 3 tbsp ginger-green chilly crushed 10- 15 cloves of chopped garlic 1/4 cup chopped assorted bell peppers 1/3 cup carrots, chopped 1/3 cup green cabbage, chopped 2 tbsp light soy sauce Salt and pepper as required 3 cups water for chicken stock 2 tbsp corn flour 1 egg  3 tbsp chopped coriander leaves 1/2 chicken stock cube optional 1/2 cup fried noodles Method:- In a pot of cold water add in chicken breast, carrots, garlic, salt, chicken stock cube and cook for 12-15 minutes. Once cooked, skim the impurities risen on the top and blanch the noodles in the stock and partially boil them. Shallow fry the noodles in the oil until crisp and keep aside. In the same oil add ginger-green chilli crush, garlic, chopped vegetables and stir fry them. Then add the chicken stock, soy sauce, salt, pepper and boil on high flame. Shred the chicken breast and add it to the boiling soup. Beat an egg and add it to the soup followed by corn flour slurry as a thickener. So watch and learn how to make Chicken Biryani only on Get Curried Ingredients For rice 300 gms basmati rice 2 litres water Salt as required 2 tbsp ghee 1 tsp oil 1 bay leaf 2 green cardamom 1 black cardamom 1 inch cinnamon 8 black pepper corn 4 cloves For chicken 3 tbsp oil 2 tsp ghee 2 no peeled potatoes 3 green cardamoms 1 black cardamom 4 cloves 1 inch cinnamon stick 1 bay leaf Marination of chicken 600 gms chicken Salt as required 1/2 tsp turmeric 1 tbsp chilli pwd 1 cup dahi 1 tbsp ginger-garlic paste 1 large onion (golden fry) 1/2 cup chopped tomatoes Water as required 2 boiled eggs Garnish 1 large onion (golden fry) Mint leaves Method - In a pan heat oil then some ghee and once it heats well, add garam masala and peeled potatoes and cook until the potatoes turn golden brown - Marinate the chicken by adding yogurt, ginger garlic paste, salt, turmeric powder, red chilli powder, fried onions and tomatoes mix it nicely. - Add the marinated chicken into the pan and mix well, then add water. - Cover it with a lid and cook on medium flame till its done - In a pan add ghee and oil once it heats up add garam masala,lower the flame and add water and salt. - Add the washed and soaked rice to the boiling water and let it cook on high flame. Ingredients 350 gm boneless chicken breast sliced 1 egg 2 tbsp corn starch 1 tbsp refined flour 1 tsp soy sauce Salt and pepper as required Oil for frying For the gravy 2 tbsp oil 2 tbsp garlic chopped 1/2 tsp ginger chopped 1 large onion petals 1 no capsicum thickly sliced 3-4 green chillies, sliced 1 tbsp light soy sauce Salt and pepper as required 1/2 cup Water 1 tsp corn starch Method - Marinate the chicken, by adding egg to boneless chicken breast, and also add soy sauce, pepper, salt, corn starch and refined flour to it. - Mix everything well. - Heat oil so as to fry the marinated chicken. - Once the oil is heated, fry the chicken pieces. For Gravy - Heat oil in a pan. - Add chopped garlic, chopped ginger, slit green chilli, capsicum and onion to the oil. - Add soya sauce, black pepper and salt and mix well. - Add a cup of water. - Add the fried chicken to the gravy and give it a toss. - In order to thicken the gravy, add corn starch to water and mix it well. - Chilli Chicken is ready to be served! Ingredients:- 1 kg Chicken  100 ml Extra Virgin olive oil 10 - 13 garlic cloves 5 ripe serrano chillies 10- 12 African devil red chillies 3 Bay leaves  1 tsp smoked paprika  Sea salt as required 1 lemon juice Parsley 3-4 charcoal chunks 1 tbsp oil Method:- The Sauce:- Take the devil red chillies, serrano chillies, bay leaves, garlic cloves, sea salt, extra virgin olive oil, smoked paprika and lemon juice in a grinder and make a fine paste. The Marination:- Cut the chicken into 8 pieces after removing the fat. Add the peri peri sauce to the chicken pieces and mix it properly. Smoke Infusion:- Take a few pieces of wood charcoal and place them on the gas burner and heat them till they are red. Take the burning charcoal pieces in a small bowl aand keep the bowl in the bowl of marinated chicken pieces. Pour some olive oil on the charcoals and as soon as they start emitting smoke cover the marination bowl with a lid. Let it smoke for 30 minutes. The Barbeque:- Heat a pan on moderate flame. Place the pieces of the marinated chicken in the pan and heat till brown. Take some fresh parsley leaves and dab them in the marinade. Baste the pieces of chicken with the marinade. Keep turning the pieces of the chicken and make sure they are brown on all sides. Turn off the flame and Chicken Peri Peri is ready to serve. Ingredients:- 1 kg Chicken cut into 8-12 pieces For Marination:- ½ Cup Fresh Curd ¼ Cup Fresh Unsweetened Dairy Cream 2 tbsp Ginger-Garlic Paste ½ tsp Garam Masala 1 tbsp Chaat Masala 1 tbsp Roasted Dry Fenugreek Salt as per taste 2 tbsp Lemon Juice For Smoke Infusion:- 1 Piece Charcoal For Garnish:- Red Chillies Lemons Mint Leaves Method:- Take a pan and toast the fenugreek lightly for 30 seconds to a minute till crisp. After toasting transfer it to a bowl and let it cool down. Marination:- In a large bowl add curd, dairy cream, ginger-garlic paste, garam masala, chaat masala, roasted fenugreek, salt (as per taste) and juice of half a lemon. Mix all these ingredients nicely to make a creamy marinade. Cover the chicken pieces with the marinade properly. Smoke Infusion:- Light up a wood charcoal by placing it straight on the burner. Once the charcoal starts burning put it in a bowl and place that bowl in the marinated chicken. Add some oil and once the charcoal starts smoking cover the marination bowl with the lid immediately. Cooking Chicken:- Heat the oil in a pan on moderate flame. Carefully add the marinated chicken to the pan. Flip the chicken pieces after a minute. Scrape off the residual marinade from the pan. Once the marinade from the pan dries up add the remaining marinade and give it a mix. After 3-4 minutes add in some water and reduce the flame. Cover the pan with a lid and let the chicken cook for 10-12 minutes on low flame. Then remove the lid and baste the chicken pieces with the reduced marinade in the pan. Turn the flame off after a minute. Garnish:- Chop some red chillies, lemon and fresh mint leaves and garnish the dish. Your delicious Afghani Chicken is ready to be served. Ingredients ( 15 kebabs ) ½ kg Mutton Kheema 2 tbsp raw papaya Salt to taste 1 tbsp ginger 1 tbsp garlic 2 black cardamom 8 cloves 1 tbsp poppy seeds 6 pepper corns ½ tsp cinnamon ½ blade mace 6-8 cardamom seeds 1 tsp chilly powder Grated nutmeg 1 onion (browned) ½ cup coriander leaves 4-5 dried green chilly 3 tbsp roasted gram flour 1 egg Onion rings, Mint & Lemon ( garnish) Method - Grind together – bay leaf, black cardamom, cinnamon, dried green chilly, grated nutmeg,mace, pepper corns, poppy seeds, cloves, cardamom seeds, garlic, ginger, chilly powder, raw payaya with the skin, run it into a smooth and fine paste. - Add coriander leaves & egg into the paste and run it till it turn into a smooth paste - Take the meat and add it into the grinder and grind it to run it into a smooth paste - Add some salt and mix it properly - Add the masala paste and evenly mix it with the meat. - Add a spoonful of roasted gram flour and mix it evenly and properly - Take a scoop of mixture and form a patty shape and place it on a plate - Refrigerate the patties for 10 minutes - In a pan heat some oil on medium flame, and place the kebabs and fry them - Garnish it with lemon juice onion rings and bunch of fresh mint. - The Galouti Kebabs are ready to be served! Ingredients:- 1 kg chicken thigh and leg 200 grams fried onions 1/4 cup mint leaves 1/4 cup coriander leaves 1 tbsp coriander seed powder 1 tbsp jeera powder 1 tbsp red chilly powder 1/2 tsp turmeric powder 1/2 tsp pepper powder 200 grams curd 200 ml coconut milk 50 grams almond paste 1 tbsp lemon juice 4 tbsp oil 2 tbsp ghee 2 tbsp ginger garlic paste 8 green chilies slit 1 tbsp garam masala 1 pinch saffron Method:- - In a bowl, add yoghurt, blanched almond paste, coconut milk, ginger-garlic-green chilli paste, cumin powder, turmeric powder, red chilli powder, garam masala, coriander seeds, saffron fried onions, lemon juice, coriander leaves, mint leaves, green chillies, freshly crushed black pepper, vegetable oil, ghee, salt and whisk it all together. - Add the chicken to this, cover and marinate for minimum of 2 hours or overnight for best results. - Heat a kadhai on a high flame and pour the chicken and the marination in it. - Cover and cook it on high flame for first 5 minutes and then on a low flame for 35 minutes. - Turn the flame off and do not move the kadhai for 5 minutes. - Serve with Naan or roti. The Frying:- - In a bowl mix semolina, gram flour and salt together and mix it well. - In a pan heat some oil. - Dab the fish in the above mix and place it in the pan. - Fry the fish on a moderate flame. - After a minute or so flip the fish and fry it on another side for another minute or so. Shallots (sliced) Salt as required 3 sprigs curry leaves For Chettinad Masala:- 1 tbsp. seasame oil ¼ cup fresh Coconut grated 2 nos. Bay leaves 3 tbsp. Coriander Seeds 6 nos.Red Chilli Bedgi 1 tbsp. Black Pepper  1 tsp. Cumin Seeds 1 tsp. Fennel Seeds 1 Green Cardamom 1 Black Cardamom 2 Black Stone Flowers 1 Star Anise 8 Cloves 1 blade of Mace 1 inch piece Cinnamon 6-8 cloves of garlic 1 inch Ginger 1 tsp. Tamarind paste Pinch of fenugreek seeds Water as required Corriander for garnishing Method:- The marination:- - Mix the curry cut chicken with lemon juice, turmeric powder and salt. Keep aside for 30 minutes. The Chettinad Masala:- - In a pan heat oil and add coriander seeds, fennel seeds, cumin seeds, black peppercorn, blades of mace, cloves, cinnamon stick, star anise, green cardamom and black cardamom. Saute while keeping the flame on moderate. - Now add bay leaves, stone flower, garlic, dry red chillies and toast these spices till deep brown in colour. - Transfer the roasted spices onto a plate and let it cool down to room temperature. - In the same pan roast grated coconut on moderate flame until brown in colour and trasnfer onto a plate and let it cool down to room temperature. - Once the roasted spices and cocont have cooled down, transfer them into a mixer/grinder and add fenugreek seeds, ginger, tamarind past and water. Grind everything to a fine paste. The Seasoning:- - Heat oil in a pan and add shallots, curry leaves and saute on medium flame until shallots are golden brown. - Now add the marinated chicken and turn the flame on high and saute for 2-3 minutes. - Once the chicken has seared well, add the Chettinad Masala, water, salt and bring it to a boil. - Lower the flame, cover with a lid and let it cook for 15-10 minutes. - Garnish with coriander leaves and serve hot. Ingredients 750 gms chicken 2 onions 2 tomatoes 2 tsp garlic paste 1 tsp ginger paste 1 tbsp kasoori methi 1 tbsp chilli powder 11/2 tbsp ghee 1 cup yogurt 1 tbsp turmeric 1 tbsp coriander powder 1 tbsp cumin powder 2 tsp paprika Salt to taste Blend masala of 1 tbsp cardamom powder 1 tbsp cloves 1 tbsp cinnamon 1 tbsp black cardamom Method Take 750 gms chicken, add 1/2 tbsp of ginger garlic paste, 1/2 tsp chilli powder mix it well and keep it aside. In a pan heat 1 1/2 tbsp ghee, 2 tsp of of ginger garlic paste, 1 chopped onion and cook until the onion turns golden brown. Add 2 tinned tomatoes and cook it for a minute. In a bowl mix 1 cup yogurt, 1 tbsp turmeric, 1 tbsp chilli powder, mix it well and add it into the pan, cook it for around 5-7 mins. Add 1 tbsp coriander powder, 1 tbsp cumin powder, 2 tsp paprika, salt as required, 1 tbsp of blend masala, 3 green chillies, marinated chicken, 1 rough chopped onion, some water, mix it nicely and leave it to cook for 15-20 mins. Garnish it with some chopped tomatoes, chopped onion, 1 tbsp kaoori methi and chopped coriander leaves. Spicy and mouth-watering Chicken Do Pyaaza is ready! Ingredients For rice 300 gms (raw) long grained rice (salted and cooked till almost done) For masala 5 tbsp oil 3 green cardamom pods 1 black cardamom pods 4 cloves 1 inch cinnamon stick 1 bay leaf 2 sprigs curry leaves 600 gms fish of choice Salt as required 1/2 tsp turmeric 1 tbsp chilli powder 1 cup coconut milk 4-5 petals of dried kokum 1 tbsp ginger-garlic paste 1 large onion sliced 1 large tomato sliced 1/2 cup water 1 tsp cumin seeds Topping 1 tsp garam masala powder 1 heavy pinch saffron 2 tbsp warm milk Lemon slices Banana leaves Garnish Mint leaves Lemon rind julienne Orange rind julienne Method In a vessel, heat 5 tbsp oil, add 1 sliced onion, 1 sliced tomato, green chillies, 1 bay leaf, 4 cloves, 1 black cardamom, 3 green cardamoms, 1 tbsp ginger-garlic paste, 2 sprigs curry leaves, mix it well and allow it to cook for a minute. Add 1 tsp cumin seeds, 1 inch cinnamon stick, 1 tsp coriander powder, 1/2 tsp turmeric powder, 1 tbsp chilli powder, Salt as required and mix it nicely. Add 1 cup coconut milk give it a mix. Rub the fish with some salt, garam masala powder and turmeric powder. Add the fish into the vessel, 4-5 petals of dried kokum, 300 gms (par boiled) long grain rice, 2 tbsp saffron milk, cover it with banana leaves put the lid and cook for 10-15 mins. Garnish it with mint leaves, lemon rind julienne, orange rind julienne and boiled eggs. Fish Biryani is ready to be served! Ingredients:- 2 tbsp chilly sauce 1 tbsp light soy sauce 1 tbsp honey ¼ cup  fresh cilantro stalks chopped ½ tsp cornstarch 1½ cups prawns, peeled and deveined (tails left intact optional) 4 tbsp vegetable oil, divided 2 stalks spring onion, chopped; separated 8 cloves garlic, sliced 2 inch fresh ginger, julliennes 2-3 dried red chillies, halved Salt as required Method:- Slice the garlic, ginger and spring onions. In a deep wok, add vegetable oil and let it heat smoking hot. Once the oil heats up throw add in the prawns and cook them till the water dries completely. Once the prawns turn nice, crisp and golden brown, transfer them in a plate. In the same wok add oil and let it heat smoking hot and add the garlic to it. Once the garlic slices turn golden brown, add in the ginger and red chillies. Give this a quick mix and then add the prawns and bulb of the spring onions and give it a quick toss keeping the flame high all through the process. Oil ½ tsp. salt ⅓ cup water For Egg Khurchan Filling:- 1 cup onions, sliced ½ cup tomatoes, sliced ½ cup assorted capsicum, sliced 1 tsp. cumin seeds ½ tsp. turmeric 1 tbsp. Chilli powder ¼ tsp. garam masala 1 tbsp. Ginger, garlic and green chillies, crushed 4 eggs For Additional filling:- 3 eggs plain omelette Oil for frying For Garnish:- ¼ cup Onion, chopped 2-3 Green chillies Tomato ketchup Method:- The Egg Khurchan:- - Heat oil in a pan on moderate flame and add oil to it. - Add cumin seeds, crushed ginger, garlic and green chillies and saute them. - Then add onions and chopped green chillies followed by capsicums, tomatoes and cook on high flame. - Add salt, chilli powder, turmeric powder, garam masala and stir fry for 2-3 minutes. - Now pour the beaten eggs to this mixture and cook until the eggs are completely well done. - Let it cool down to room temperature. The additional filling:- - In a pan heat oil and pour beaten eggs in it and make a plain omlette. - Let it cool down to room temperature. The Egg Roll:- - Flatten the dough and place the omlette on it followed by the Khurchan and roll it as shown. - Fry the rolls on a moderate flame. - Tansfer on a an absorbent tissue paper and serve. It consists of sardines semi-stewed in a Kerala-style curry with assorted vegetables, such as okra or onions. It is usually served with rice, naan, bread, or tapioca. The dish is most popular in Kerala, Bangladesh, and West Bengal, where rice and fish are staple foods. Ingredients Fish Curry ( Pomfret curry/ Village style) 2 pomfret cleaned washed and sliced 1/2 tsp turmeric Salt as required For the spice paste 1/2 coconut grated 15 dried red chillies (mix of spice and colour) 1 tbsp dried corriander seeds 1/4 cup onion chopped 1/4 cup tomato chopped Cooking 3 tbsp vegetable/coconut oil 1 tsp mustard seeds 1 tsp cumin seeds 2 sprigs curry leaves 1/4 cup chopped onion 1 tsp turmeric powder 1/2 lt. Warm Water 3-4 blades fresh lemongrass Salt as required Fistful fresh corriander leaves Method For the curry paste mix grated coconut, 15 dried red chillies, dried corriander seeds, chopped onion and chopped tomato into a electric grinder and prepare a smooth paste. Put some oil in a pan and heat it. Add mustard and cumin seeds and following it up with fresh curry leaves along with chopped onions and stir well. Add the curry paste into the pan and also the reserved water and stir for atleast 10-12 mins. Add some turmeric powder along with some petals of dried kokum and mix nicely, allow it to cook for more 15-20 mins. To marinate the Pomfret put some turmeric powder, some sea salt on it, rub nicely and allow it to rest for 10 mins Once the curry starts boiling, add some water, coriander leaves, some sea salt and lemon grass. Now add the Pomfret into the curry and allow it to cook for 3-4 mins. The famous and delicious fish curry is now ready to be served with some hot steamed rice. So watch & learn how to make Chicken Ghee Roast with chef Sneha Nair only on Get Curried Ingredients: Step 1 1 kg chicken juice of 1 lemon half bowl of yogurt ½ tsp of turmeric powder Step 2 10-15 dry red chillies 2 tsp black peppercorns 2 tsp coriander seeds 11/2 tsp cumin seeds 1 tsp fenugreek seeds 7- 8 garlic cloves tamarind water Step 3 1/2 cup of ghee salt 11/2 tsp jaggery curry leaves Method: Marinate the chicken with lemon juice, yogurt and turmeric powder and keep aside for an hour. In a thick bottomed pan, roast the dry red chillies, black peppercorns, coriander seeds, cumin seeds and fenugreek seeds. Switch off the flame and let the spices cool down. Add the roasted spices in a mixer jar. Add garlic cloves, tamarind water and grind the spices together to a fine paste. In a pan add 1/4th cup of ghee and place the marinated chicken and cook it till the chicken is 70% done. Add the remaining yogurt mix, in the pan, combine it with the oil and masalas and store it aside in a bowl. In the same pan add the ground masala and let it cook on a low flame. Add 2 tbsp of ghee to the msala. Add the yogurt stock, salt, jaggery and add the cooked chicken to the pan. Keep coating the chicken with the masalas on a low flame for 5 mins. Add some curry leaves and the Chicken Ghee Roast is ready to be served! Olive oil or vegetable oil for frying Mint leaves for garnish Method:- - Grind the soaked red chillies in a mixer/grinder to a coarse paste by adding lightly roasted coriander seeds and fennel seeds followed by cumin seed powder and garlic. - Add olive oil, salt and make smooth paste. Transfer to a clean paste. - In a bowl mix 2 tbsp. Harissa paste with chicken followed by salt, lemon juice and mix well. - Marinate for a minimum of 30 minutes or a maximum overnight. - Heat oil in a pan and place the marinated chicken in it and sear on a high flame. - Baste the chicken pieces with the leftover oil from the marination. - Cook evenly on all sides for 20 minutes. - Turn the heat off and serve by garnishing with mint leaves and lemon. Ingredients 2 chicken breasts boiled & shredded 1 bunch Romaine lettuce For Mayonnaise 2 egg yolks 200 ml vegetable oil 2 tbsp powdered sugar 1 tbsp mustard powdered 1/2 tsp salt 1/2 tsp white pepper powder 2 tbsp white vinegar 4 Hot dog buns Method - In a deep bottom pan, immerse chicken breasts in water and add salt. - Give it a stir and allow it to cook for 10 to 12 minutes till the chicken is completely cooked. For Mayonnaise - In a grinder, along with mustard seeds add sugar and grind it finely. - Place a cloth under a deep bowl to set an angle and add egg yolk along with vinegar and salt. - Whisk this and while whisking add oil through a very thin stream. - Keep whisking it thoroughly. - Season this with white pepper powder, sugar, mustard powder and mix well. - Homemade Mayonnaise is ready. - Remove the chicken and allow it to cool down completely. - Shred the chicken well and add mayonnaise to this and mix well. - Slit the hot dog rolls and apply some mayonnaise so as to make it moist. - Place lettuce and stuff chicken mayonnaise mixture. - Delicious and yummy chicken mayo roll is ready to be served! Once done reserve it in a bowl. - Add desicated coconut and oil and toss it until it turns light brown in clour and add it to the same bowl. - Toast the lavangi kolhapuri red chillies and then add them to the bowl. - Follow up the same procedure with coriander seeds. - Follow the same steps with fennel seeds, cumin seeds, black pepper cods and fenugreek seeds mix them well after some time add sesame seed, poppy seeds and cinnamon stick and place it in the same bowl - Let it cool for 10 minutes - Grind together all the roasted masala also add salt, turmeric and tamarind. To make a smooth paste add some water. For Chicken Kolhapuri - Heat the pan and add oil, once the oil is moderately heated, add the ready Kolhapuri masala and saute it properly - Add tomatoes until they become nice and soft then add water and let it boil. - Marinate the chicken with salt and turmeric and allow it to rest for 6-7 minutes - Add the marinated chicken to the curry and some water too - Cover it with a lid and let it cook for 12-15 minutes - Garnish it with coriander leaves Chicken Kolhapuri is ready to be served! Ingredients 1. *Chicken* 4 tbsp ghee 1/2 cup Onion slices Salt to taste Half a chicken 1.5 cups water 2 tbsp advieh spice mix 2 *Rice and Tahdig* 2 cups long grain rice 1 tbsp salt 6 cups Water 1 tbsp ghee 2 potatoes sliced thick 3 *Advieh spice mix* (1 inch stick cinnamon 1.5 tbsp chopped nutmeg 8 nos Iranian rose buds 5 nos green cardamom 1 teaspoon cumin seeds 1 heavy pinch saffron 1 tbsp coriander seeds 2 tbsp sugar) 4. *Tomato gravy* In the residual pan juices add; 1 cup tomato puree 1 cup water 1 tsp sugar 1 tbsp advieh spice mix Salt to taste 5. *Chicken Kofteh* 1 cup chicken mince Salt to taste 1 yolk of an egg 1 tbsp advieh spice mix 1 whites of an egg Oil to deep fry 6. *Sweet saffron water* 1/2 tsp Iranian saffron 1/2 cup water 2 tbsp sugar 7. *Garnish Mix* 1/2 cup zeresh berries, barberries or chopped cranberries as the best substitute 1/4 cup blanched & peeled pistachio 3 tbsp ghee 1 tbsp rose water 1 tbsp sweet saffron water Handful fried onions Method In a pan heat 4 tbsp ghee, add 1/2 cup onion slices, half a chicken, salt to taste, 1.5 cups water, cover it with the lid and allow it to cook. Par boil 2 cups long grain rice. In a vessel add 1 tbsp ghee, make a layer of 2 thick sliced potatoes, par boiled rice, cover it with the lid and allow it to cook for half an hour. Advieh spice mix In an electric grinder add 1 inch stick cinnamon, 1.5 tbsp chopped nutmeg, 8 pieces Iranian rose buds, 5 pieces of green cardamom, 1 teaspoon cumin seeds, 1 heavy pinch saffron, 1 tbsp coriander seeds, 2 tbsp sugar and grind it into a fine powder. Add 2 tbsp advieh spice mix to the chicken and mix it nicely and remove the chicken from the pan. In the residual pan juices add 1 cup tomato puree, 1 cup water 1 tsp sugar, 1 tbsp advieh spice mix, salt to taste. Mix 1 cup chicken mince, salt to taste, 1 yolk of an egg and1 tbsp advieh spice mix. Whisk 1 white of an egg, prepare small balls of the chicken mince, dip them in egg white and fry them in oil. In a pan add 1/2 cup water, 2 tbsp sugar, 1/2 tsp Iranian saffron mix it well till the sugar dissolves completely and transfer it into the bowl. In the same pan add 1/2 cup zereshk berries, barberries or chopped cranberries as the best substitute, 1/4 cup blanched & peeled pistachio, 3 tbsp ghee, fried onions, chicken koftas, 1 tbsp rose water, 1 tbsp sweet saffron water and toss it for few seconds. Ingredients:- 1 tbsp olive oil 1 tbsp butter 4 cloves garlic, bashed 2 shallots, bashed 2 cups water 1.5 cups chilled milk 1 cup mushrooms diced 200 grams boneless chicken strips 200 grams dried pasta 1/4 tsp black pepper 2 tbsp all purpose flour 1/4 tsp red chilli flakes Handful spinach leaves Few cherry tomatoes Salt as required 3 tbsp Grated processed cheese/choice is yours Method:- In a deep pan heat olive oil and add garlic, shallots, mushrooms, salt, pepper, boneless chicken breast and add salt and pepper again followed by chilli flakes. Stir fry all this on high flame for 2-3 minutes. Add a dollop of butter, refined flour and cook on high flame for a minute. Then add cold milk, water and uncooked pasta. Stir well and cook for 7 minutes. Add spinach leaves and cherry tomatoes, give one last stir and turn the flame off. Add some grated cheese and mix well. Ingredients: Wet Paste: 4 nos dried Kashmiri Chillies 5 nos dried Byadgi Chillies 1 Tsp Peppercorns 1/2 Cumin seeds 1/4 Tsp mustard seeds 1/4 Tsp fenugreek seeds 1 tbsp coriander seeds 1 tbsp thick tamarind pulp 8-10 Garlic cloves Water as required Marination: 1/2 Kilo Prawns Cleaned and Washed 1 Tsp Turmeric Powder 1 Tbsp Chilly Powder 1/4 Cup Yoghurt 1/2 Lime Juice Tadka 3 tbsp Ghee 10-15 nos curry leaves Salt as required Method of preparation: Marinate the prawn with yoghurt, turmeric powder, red chili powder, salt, lime juice, give it a quick mix. Keep it aside to marinate for 15-20 minutes. Heat a pan, add dry Kashmiri chillies and when the chillies are 80% roasted lower the flame and start adding spices. Add coriander seeds, cumin seeds, mustard seeds, black peppercorns, fenugreek seeds. Moderately increase the heat and roast them till they are nice and fragrant. Once it's done, allow it to cool down and grind them into powder. Add garlic cloves, thick tamarind pulp, water and grind it into a fine paste. Heat another pan, add ghee and heat it on a moderate flame. Once the ghee melts and heats a little add the marinated prawns to it. Roast the prawn on high flame and keep stirring it continuously. Once the prawns start partially cooking add in the ground masala. Give it a stir and allow the prawns and masala to cook on high flame while you keep stirring. So watch and learn Ingredients 500gm Mutton meat (Cut into medium pieces and boiled) 2 large onions sliced. 2-3 Potatoes (Peeled and cut into medium pieces) 1 tbsp Garlic paste 1 tbsp Ginger paste 1 tsp Cumin seeds 1 tsp fennel seeds 1 tbsp Coriander seeds powder 1/2 tsp Turmeric powder 1/2 cup Fresh Curd 3 tbsp thick coconut milk 5 tbsp Mustard Oil 5 Whole Red Chillies 1 tbsp Red Chilly Powder 1 cup tomato chopped. Salt as required. Whole spices 2 nos green cardamom 2 nos. Black cardamon 1 no. Bay leaf 1 inch stick cinnamon 8 nos black pepper corns 4 nos cloves Handful Coriander Leaves Method - In a pan add some mustard oil and heat it and turn off the flame. - When the oil cools down, turn on the flame and add bay leaf,green cardamoms,black cardamons, cinnamon,black pepper corns and cloves. - Once they start crackling add cumin seeds and onions and saute them lightly. - Add ginger garlic paste and stir for 3-4 minutes. - Add turmeric, coriander powder, red chilli powder and dry red chillies. - Add peeled potatoes, fennel seeds, water & salt and cover the lid and let it cook for few minutes. - Add tomatoes, coriander leaves and stir fry for a minute. - Add mutton and the stock and mix properly. - Cover and let it simmer for 8-10 minutes. - Add coconut milk and whisked curd. - Railway mutton curry is ready. Wet masala: 5-6 nos red dried chillies, soaked in water 1/2 cup fresh Coconut, sliced 1 tbsp Tamarind Paste 1 inch fresh Ginger, peeled & chopped 3 nos Garlic cloves ½ medium sized Red Onion, sliced ¼ tsp Turmeric Powder ¼ tsp Cumin seeds ¼ tsp Black Pepper 1 tsp Coriander Seeds 1/2 medium onion chopped Water for grinding Tempering: 500 grams fish slices 2 cups water Salt as required 2 nos green chillies slit Method of preparation: For Marination: Use a whole pomfret which is washed, cleaned, gutted & give it few gashes. Add some turmeric, salt to it and rub the fish on either side. Massage it well and ensure that you fill in all the cuts and gashes. For the masala: In a mixer jar add sliced coconut, red chillies, coriander seeds, garlic, peppercorns, cumin seeds, onion, green chillies, ginger and grind them. After running it in the grinder for few seconds, scrape the sides off, add tamarind and water. Grind it into a fine paste. Heat a vessel, transfer the paste into it and add in water. Increase the flame and add salt to the curry, give it a good mix. Cover it with a lid and cook it for 10 minutes. Add in the marinated fish, splash the curry on top of the fish, cover it with a lid and cook it for next 8-10 minutes. Add in few slit green chillies and now its ready to plate. Food blogger Tarika Singh brings you a vegan chocolate cake recipe that's extremely simple and easy to put together. This cake isn't too sweet on its own, so the dark chocolate glaze over it, sweetened with icing sugar hits just the right sweet notes. Ingredients: For the cake: 1 cup warm water (lukewarm, not boiling) 1/2 cup unsweetened cocoa powder (extra for dusting pan) 1 1/2 cups (180 grams) all-purpose flour 1 cup caster sugar (160 grams) 3/4 tsp. baking soda 1/2 tsp. salt 1/2 cup canola oil (or any other neutral-flavored oil, plus extra for greasing pan) 1 tbsp. vanilla extract 2 tsp. white vinegar For the glaze: 50 grams dark chocolate chopped 1/3 cup icing sugar, sifted 2 Tablespoons water Method: To make the cake: - Pre-heat the oven to 190 degrees Celsius. - Use an 8-inch, removable bottom pan and line the bottom of the pan with parchment paper. - Lightly brush the pan and parchment paper with oil & dust with cocoa powder. - In a small bowl, whisk together the cocoa powder & lukewarm water, making sure that there are no lumps left and set aside. - In a large pan, whisk together the flour, sugar, baking soda & salt. - Make a well in the centre of these dry ingredients and add the cocoa-water mixture, oil & vanilla extract. Whisk until smooth. Add the vinegar & whisk. - Transfer the batter to prepared cake pan & bake for about 30 to 40 minutes or until a skewer inserted in the centre of the cake comes out clean. - Once baked, place the pan on a wire rack to cool for 20 minutes. - Run a knife around the sides of the pan before loosening the sides of the pan. - Open up the cake pan and gently place the cake on a wire rack to cool completely. To make the chocolate glaze: - Melt the chocolate either in a double boiler or in the microwave. - Allow it to cool slightly and then whisk in the water & sifted icing sugar. - Once this mixture takes on a spreadable consistency, pour it over the centre of the cooled cake. - Use an offset spatula to spread the glaze evenly over the top and sides of the cake. Beriani or Biryani or Kachhi Biryani, this dish possibly is on the top of the list when it comes to most searched items on the Internet and it makes the grade for a reason. A meal in itself, this dish is rightly referred to as a dish fit for a king. Hyderabadi Dum Biryani or Hyderabadi Dum ka Biryani traces its roots back to what is known as Nizami food. It was a staple Khandaani dish that was found on the tables of Nizami banquets in the days of the spread of Mughal cuisine or what may be referred to as Deccan cuisine. Hyderabadi cuisine takes pride of place in Southern or South Central India. Ingredients:- For Marination:- 1 kg. Mutton Ginger Garlic Green Chillies Water Fried Onion Paste 2 cups yogurt/curd ½ tsp. Turmeric Powder 2 tbsp. Red Chilli Powder Finely Chopped Coriander Finely Chopped Mint Leaves Garam Masala Powder ½ Lemon Juice Salt as per taste For Garam Masala Powder:- Green Cardamoms Black Cardamoms Black Pepper Cloves Cinammon Sticks Cumin Seeds For Rice:- 3 litres water ½ kg. Long Grain Rice/Basmati Rice (Soaked in water for 15 minutes) Bay Leaves Cinammon Sticks Green Cardamom Cloves 2 tsp. Salt For cooking Biryani:- Ghee Chopped & Fried Potatoes Saffron in warm milk Chapati Dough For Garnish:- Fried Onions Mint Leaves Coriander Leaves Method:- Marination:- Take ginger, garlic, green chillies and water in a grinder and make a paste. Keep aside some fried onions for garnish and make a paste of the rest. Take Green Cardamoms, Black Cardamoms, Black Pepper, Cloves, Cinammon Sticks and Cumin Seeds in a grinder and make a fine Garam Masala powder. Add the ginger-garlic-green chillies paste, yogurt, turmeric powder, chilli powder, coriander, mint leaves and the freshly ground garam masala powder to the mutton pieces. Mix all these ingredients nicely with your hands. Now add the fried onion paste and mix everything again properly. Cooking the meat:- Add some water and cook the marinated mutton in a pressure cooker for 3 whistles and cook on a low flame for 20 minutes. Cooking the rice:- Take water in a vessel and add bay leaves, cinammon sticks, green cardamoms, cloves and salt. Bring this water to a boil and add the soaked rice to it. Cook this rice till it’s ¾ or 75% done i.e. 10-12 minutes. Drain excess water and let the cooked rice cool down in a large dish. Fried Onions:- Apply 1 tsp of salt to the sliced onions and keep aside for 15 minutes and then deep fry them till they turn golden. Once cooled, crush the fried onions with your finger tips. Dum Biryani:- Smear some ghee on a heavy-bottomed broad based pan and layer it with half the quantity of the partially coooked rice. Thean add the cooked mutton gravy. Add the fried potatoes followed by a layer of the rest of the partially cooked rice. Pour the saffron and milk mixture on top of the rice. Add ghee and garnish with mint leaves, coriander leaves and fried onions. Now stick the chapati dough to the edges of the pan and create a seal. Keep the lid on the pan and let the biryani cook for 20-25 minutes. Remove the lid carefully and your delicious Biryani is ready to be served! However these days it is not so common to cook in such pots or to even find it. So don't worry, you can make this tempting dish in the khadai that you have at home. Ingredients: 750g chicken thigh 2 sliced onions 2-3 chopped tomatoes 3tbsp ghee 4 cloves garlic chopped 11/2tsp ginger paste 1 tsp cumin seeds 1 tsp coriander seeds 1 tsp turmeric 1tsp chilli powder 3-4 green chillies Salt to taste 1tsp garam masala 2tsp dried fenugreek 1 cup plain yogurt 1/2 cup cream ( optional) Method: - Heat ghee in a pan. Allow it to melt. - Fry onions in ghee till they are dark golden brown. - Once they are dark brown, remove the onions and keep them separately in a bowl. - In the same ghee, add chopped garlic and tomatoes. Cook them until they are soft. - Add the fried onion back in the ghee and mix it well. - Add ginger paste and mix it well. - Add cumin seeds, crushed coriander seeds and green chillies. - Add turmeric powder, salt and chilli powder. Give it a mix. - Add boneless chopped chicken in the mixture and mix it well. - Fry them well till they are nicely cooked. - Cover it with a lid and allow it to cook for 5 minutes. - Once the chicken is cooked well, add yoghurt. - Add crushed coriander seeds and fenugreek leaves and mix it. - Pour cream along with fenugreek leaves and garam masala. - Give it a final mix and serve hot! Garam masala powder ½ tsp. Yellow chilli powder 2 tbsp. Yoghurt 1 tbsp. Gram flour 1 tsp. Salt For the Curry:- 4 tbsp. Ghee 2 Bay leaves 100 grams red onions, sliced ½ cup Water ½ cup Yoghurt 1 tbsp. Coriander powder 1 tsp. Red Chilli powder 1 tbsp. Garlic paste 1 tsp. Cumin powder 1 tsp. Garam masala powder 1 tsp. Fennel powder Salt 1 tbsp. Kewra water 1 tbsp. Rosewater For Garnish:- ¼ cup Mint, chopped ¼ cup Coriander, chopped 4-5 Green chillies, slit 1 thumb-sized ginger, julienned Method:- - In a bowl add chicken, bread crumbs, egg, yellow chilli powder, onions, garam masala, roasted gram flour, ginger-garlic-green chilli paste, yoghurt, salt and mix thoroughly. - Grease palms with oil and make koftas/meatballs of the mixture. - In a bowl mix yoghurt with cumin powder, fennel powder, red chilli powder and garam masala. Mix well and add water. - In a pan heat oil and splutter bay leaves in it. Add onions and roast until golden brown. - Turn up the flame to high and add in yoghurt slurry, ginger-garlic-green chilli paste, ghee and salt. - Simmer the gravy on low flame and place the Chicken Koftas in it. - Add Kewra water and Rosewater. Cover with a lid and simmer for 15-20 minutes on low flame. - Garnish with chopped coriander and mint leaves followed by ginger juliennes. - Cover with a lid and cook for 30 seconds and let it rest undisturbed for 10 minutes.
