Share on Facebook: https://goo.gl/Sp7wkz Tweet about this: https://goo.gl/c36W6w Share on G+ : https://goo.gl/T6hh2I Ingredients For Chole: 250 gms Chickpea / Kabuli Chana (boiled) 3 Onions 2 Tomatoes 1 tbsp Coriander Seeds 1 tbsp Cumin Seeds 1 tsp Pomegranate Seeds (Anar Dana) 1/4th tsp Hing 1 tbsp Mix Masala 1 tsp Garam Masala 3-4 tbsp Oil 7-8 Garlic Cloves 1/2 inch Ginger 2-3 Cinnamon sticks 2-3 Black pepper 2 Cloves 3 Bay Leaf Coriander Leaves Salt to taste Ingredients For Bhature: 1/2 Kg All Purpose Flour (Maida) 3 tbsp Curd 1/2 tsp Sugar 1/4th tsp Baking Powder 3 tbsp Oil Salt to taste Water Oil for frying Method: To Make Chole: - In a mixer grind add onions, tomatoes, coriander seeds, cumin seeds, pomegranate seeds, garlic, ginger, cinnamon, black pepper, cloves & water. Grind everything to a smooth paste. Keep this masala paste aside. - In a pan heat some oil. - Add bay leaf, hing, coriander leaves & mix masala. Give a stir. - Add the masala paste & water. Mix everything well. - Add the boiled chickpea, garam masala & salt. Mix well. - Let it everything simmer for 10 minutes. - Garnish with coriander leaves and serve! To Make Bhature: - In a large bowl add all purpose flour, curd, sugar, baking powder, salt & oil. Keep the bowl aside for 5 minutes to allow the ingredients to rise. - Then add water and make a soft dough. - Appy some oil to the dough. - Cover the dough & let it rest in the bowl for 30 minutes. - Make small rounds of the dough and roll into medium thin rounds. - Deep fry in hot oil on golden color. - Serve hot Bhatura with Chole. Then add coriander leaves, cumin seeds, turmeric powder & colocasia leaves. Saute everything. - Add groundnuts, mix masala, jaggery & salt. Mix all the ingredients well. - Add water and let everything cook up to 3 whistles. - After 3 whistles switch off the flame and keep the cooker aside for 5 minutes. - After 5 minutes open the lid of the cooker. Add the coconut paste and tamarind paste. Also add little water and mix well. - Put the pressure cooker again on flame and let everything simmer for 5 minutes. - Serve this bhaji with rotis or plain rice. Share on Facebook: https://goo.gl/zVvw5m Tweet about this: https://goo.gl/OPSPQX Share on G+ : https://goo.gl/kvQx87 Ingredients: For Fried Onion: 4 Onions, cut lengthwise 1 tsp Salt 1 tsp Sugar Oil for frying For Biryani: 1 Cup Rice 4 Onions 2 Tomatoes 10-12 Garlic Cloves 1/2 inch Ginger 1 Cup 3/4th Cooked Vegetables (Carrots, Cauli Flower, Green Peas, French Beans) 4-5 tbsp Oil 1 tbsp Mix Masala 1 tbsp Biryani Masala Coriander Leaves Salt to taste Water Method: To make fried onions: - In a bowl add chopped onions, salt & sugar. With your hands mix everything well. - After some time, squeeze all the water from the onions and fry them in hot oil till dark brown. - Transfer the fried onions on a tissue paper and let it cool down. To make Briyani: - In a mixer grinder add onions, tomatoes, garlic, ginger & coriander leaves. Grind everything to a smooth paste. Masala for the biryani is ready. - In a large pan, heat some oil. Add the masala paste and saute it for some time. Cover it with a lid and let the masala cook for 5 minutes. - Then add 3/4th cooked vegetables, mix masala, biryani masala, salt & water. Mix everything well. Again cover it and let everything cook. - Then add boiled rice and layer it evenly on the pan. Also add the fried onion shreds and lemon juice. - Garnish it with coriander leaves. Cover the biryani for 10 minutes and let it steam on a low flame. - Vegetable Briyani is ready to serve. Once the butter and oil is hot add ginger garlic paste and saute for a minute. - Then add onions & tomatoes. Mix everything well till the tomatoes become soft. - Add capsicum and salt. Let everything cook well. - Then add turmeric powder, mix masala, pav bhaji masala, raw mango powder & orange red colour. Mix all the ingredients well. - Add boiled cauliflower and green peas. - With the help of a masher, mash the cauliflower and green peas. - Then add boiled potatoes and mash them into the bhaji. - Add some water and mix well. - Add some butter and let the bhaji simmer for 10 to 15 mins. - Mumbai style Pav Bhaji is ready. Serve the bhaji with Pav slashed with butter! Learn to make Yummy Veg Kheema Masala - Easy To Make Vegetarian Maincourse Recipe By Ruchi Bharani One of the most popular vegetarian main-course dishes is veg kheema masala. It is nothing but minced vegetables cooked with onions, tomatoes and ginger garlic paste. Check out Chef Ruchi Bharani's take on this popular kheema recipe. Ingredients: 3 medium onions, finely chopped 1/2 capsicum finely chopped 1 carrot steamed and finely chopped 100g French beans steamed and finely chopped 1/2 cup frozen peas 1 green chilli finely chopped 1 tomato finely chopped 1 1/2 cup tomato puree 3 tbsp cheese 100g grated paneer 1 tsp garam masala 1/2 tsp red chilli powder 1 tbsp ghee 1 tbsp ginger and garlic paste coriander leaves salt to taste 1/2 tsp coriander and cumin seed powder Method: - In a pan, heat ghee. Add the onions and saute them well until they are brown in colour. - Add the ginger and garlic paste. - Add the finely chopped capsicum, frozen green peas and chopped green chillies, - Add the tomato puree and let it cook for at least 2 minutes. - Add the finely chopped tomatoes and let them cook until they are absolutely mushy. - Add the red chilli powder, coriander and cumin seed powder, garam masala and salt to taste. - Add little water and saute the ingredients well. - Add the chopped, steamed vegetables - French beans and carrots. - Add the grated paneer (cottage cheese) and then grate some cheese over it. Mix all the ingredients well. - Sprinkle some coriander leaves over the kheema masala and add little water. Mix well. - The kheema masala is ready to be served. Garnish it with some grated cheese and coriander leaves. Also squeeze some lime over it. Add grated coconut, sugar & water. Mix everything well till the sugar dissolves completely. - Then add the mawa, dry fruits & cardamom powder. Mix everything well. Switch off the flame and let the mixture cool down. - Add the roasted rava to the mixture and mix well. - Make medium size laddu and serve. To make the Masala paste: - In a pan heat very little oil. Then add chopped onions, coriander seeds, cumin seeds, black pepper, ginger garlic crush and grated coconut. Saute everything till its color changes. - Then add the masala in a mixer grinder and grind it to a coarse paste. To make the Wadi: - In a large bowl add the masala paste, gram flour, salt, coriander leaves, tamarind paste, mix masala, turmeric powder & jaggery. - Mix everything well to avoid any lumps. - Smear the vegetable leaves with masala and fold them as shown in the video. - Put the rolls to steam for 20 minutes. - Cut the rolls into small wadis and shallow fry them in hot oil. - Aloo / Alu Wadi is ready to serve. Grind everything to a smooth paste. The masala paste is ready. - In a pan, heat some oil and butter. - Add the masala paste, coriander leaves and saute everything for some time. Add little water if required. - Then add the paneer pieces and mix well. - Add some salt and mix everything well. - Cover it with a lid and let the gravy cook for 5-10 minutes. - Garnish it with coriander leaves and butter. Add oil, mustard seeds, green chillies, ginger garlic crush, curry leaves, turmeric powder & salt. Mix everything. - Add this tadka to the mashed potatoes along with coriander leaves. Mix everything well. - Make medium size round balls of the mixture and keep it aside. - To make the covering, in a bowl add gram flour, turmeric powder, coriander leaves and salt. - Add some water and make a pouring consistency batter. - Dip the potato balls well into the batter and add them to the hot oil. - Fry them on a medium flame. Let them turn golden brown. Flip them well. - Remove the ready vadas on a kitchen towel so that all the excess oil is absorbed. - Enjoy the Batata Vadas with tomato sauce or green chutney. Paneer Parcha, a dish close to paneer pasanda though quite different. This restaurant style paneer recipe, is a perfect one to dish out to serve with rotis, parathas, naans, steamed rice, pulao, dhaba style tandoori rotis or basically any side dish. A mild flavored rich / shahi birista-cashew-yogurt based gravy along with a slice of paneer which has been sandwiched with veggies and grilled. Try it out now! Ingredients : Prep for Gravy / curry : 1/3 cup Birista/Fried Onion 1/3 cup yogurt 4 tbsp Cashewnuts 10 whole Dried Red Chili 3 Tomatoes Gravy Ingredients: 2 tbsp oil 5 Cloves 2 Black Cardamom 1 Star Anise 1 tsp Fennel Seeds 1 tsp Kasoori methi 1/2 tsp Kashmiri Red Chili Powder 1 tsp Coriander Powder 1/4 tsp Turmeric salt as per taste 1 tbsp Butter 2 tsp Sugar 3 tbsp Cream For Parcha: 1 tsp oil 1 Green Chili chopped 1/2 inch Ginger chopped 3 tbsp Cashewnuts chopped 3 tbsp Raisins chopped 1 small Carrot chopped 4 French Beans chopped 20 grams Paneer crumbled 3 tbsp Corn 3 tbsp Peas 1/2 tsp Red Chili Powder salt to taste 1 tsp Sugar 1/2 tsp Kitchen King Masala 3 tbsp Coriander Leaves Chopped 1 tbsp Anardana Paneer Slices 2 tsp Butter 1 tbsp Coriander Leaves chopped 1/2 tsp Chili Flakes Instructions Prep for Gravy : Blend the birista-yogurt into paste and keep aside. Similarly, chop & blend 3 tomatoes and keep aside. Add cashews, red chili and 2 cups of water to a pan. Boil & simmer for 8-10 mins. Let cool, remove red chili stems, and blend to a smooth paste. Gravy: To a pan, add in 2-3 tbsp oil. Once hot - cloves, black cardamom, star anise, fennel seeds and kasoori methi. Quickly add in the birista-yogurt paste, cook for 3-4 minutes. Add 1/2 tsp kashmiri red chili, 1 tsp coriander powder, 1/4 tsp turmeric. Mix and cook for 2 minutes, Pour in the tomato paste, mix and add salt. Cover and cook for 5-6 minutes. Add in the cashew-chili paste, stir and cook for another couple minutes. Add 2 cups water, and get to a boil. Turn off flame, strain the gravy. In a pan, add in butter & sugar. Lightly caramelize, add the gravy and get to boil. Add 2-3 tbsp cream, mix, turn off the flame. Gravy Ready. Parcha: In a pan add in oil, green chili, ginger, cashews and raisins. Cook for a few seconds,. Add in - carrot, french beans, paneer, corn and peas. Stir well, and cover to cook for 3-4 minutes. Using a masher, mash these veggies well or pulse in a blender once. Add a splash of water to this, and mix well. Season with - red chili, salt, sugar, kitchen king masala. Mix and cook for a minute, then add coriander and anardana, turn the flame off. Filling is ready. Take slices of paneer and fill this inside it. Now you may serve as it is or grill it.. In a grill pan, add a 1/2 tsp butter, a bit of coriander and chili flakes. Place the paneer parcha and grill this! Spread butter on the top side, and sprinkle coriander-chili flakes. Flip over and grill for a minute more. Get this down to the serving platter, pour the gravy on the sides and Serve Hot. Remove it in a bowl and keep it aside. - For the tadka, in a pan heat oil & butter. - Add mustard seeds, cumin seeds, dry red chillies, fenugreek seeds, ginger garlic crush, curry leaves & coriander leaves. Saute everything well. - Add chopped onion, tomato & salt. Mix everything well. Cover it with a lid for 5 minutes and let everything cook. - In the pressure cooked dal add little water and mix well. - Then add mix masala, cumin seeds powder, coriander seeds powder & salt. Mix well. - Add this dal mixture to the tadka. Add little water and mix well. - Add coriander leaves and give a stir. - Cover it with a lid and let the dal simmer for 5 minutes. - Garnish it with a dollop of butter and serve hot. Add dabeli masala and saute well. - Then add chopped onions, coriander leaves, imli & jaggery chutney. Mix everything well. - Add boiled potatoes and mix well. - Apply some imli & jaggery chutney inside the bread. Also fill the dabeli stuffing. - Add masala groundnuts & pomegranate. - Heat very little oil in a pan. Roast the dabeli on both the sides. - Dip it in sev & serve hot. Take 2 tomatoes, ½ inch ginger baton and 1green chili and make a paste. 2. Turn on the flame, heat a pan. Add 2 tsp oil. Once sufficiently hot, add ¼ tsp cumin seeds, ½ pinch of asafoetida, ¼ tsp turmeric powder, 1 tsp coriander powder and sauté the masala. Keep flame low. Add tomato-ginger-green chili paste, followed ¼ tsp red chili powder. Stir well to roast masala. 3. Add ½ to ¾ cup of water. Prepare the gravy, add the peeled and boiled potatoes or add boiled arbi. Add some salt, garam masala and some green coriander, sabzi is ready. Add 1/3 tsp salt and ¼ tsp garam masala. Turn off the flame. Transfer the gravy to the bowl. Curd Gravy Whisked curd (फैंटा हुआ दही )- 1/2 cup Chickpea flour (बेसन ) - 1 tsp Oil (तेल) - 2 tsp Cumin seeds (जीरा) - 1/4 tsp Asafoetida (हींग )- Less than 1/2 pinch Turmeric powder (हल्दी पाउडर ) - 1/4 tsp Coriander Powder (धनिया पाउडर)- 1/2 tsp Red chili powder (लाल मिर्च पाउडर ) - 1/4 tsp Green chili (हरी मिर्च)- 2 (finely chopped) Salt (नमक) - 1/4 tsp or to taste Green coriander (हरा धनिया)- 2 to 3 (finely chopped) Direction : 1. Take ½ cup whisked curd and 1 tsp chickpea flour for making the gravy. Mix well until lumps dissolve. 2. Take a pan, add 2 tsp oil to it. When sufficiently hot add ¼ tsp cumin seeds, less than ½ pinch of asafoetida,¼ tsp turmeric powder, ½ tsp coriander powder, add ¼ tsp red chili powder and sauté the masala for a while. Keep flame low. Cook until it simmers. 3. Add ½ to ¾ cup of water. Keep stirring constantly until the gravy starts simmering again. Add 1 to 2 finely chopped green chilies, ¼ tsp salt or to taste. Simmer for 2 more minutes. Add some green coriander.Turn off the flame.Transfer the gravy to the bowl. Add pakoris to the gravy. In this episode of Ruchkar Mejwani Archana Tai's close friend Nivedita Dikay shows us how to make delicious Gul Papdi Wadi. Gul Papdi / Gur Papdi is a tasty & healthy Maharashtrian sweet dish where wheat flour is mixed with ghee, jaggery, poppy seeds and flavored with cardamom powder. This is an easy to make sweet recipe with limited ingredients. Ingredients: 1 & 1/4th Cup Wheat Flour 3/4th Cup Ghee 1/4th Cup Dried Coconut 2 tsp Poppy Seeds 1/2 tsp Cardamom Powder 3/4th Cup Jaggery, chopped Method: - In a flat bottom pan dry roast the wheat flour for few minutes. - Then add ghee as required and keep mixing. - Keep adding ghee as the flour changes color and gives out aroma. - Stir this mixture for almost 40-45 minutes. - Then add dried coconut, poppy seeds and cardamom powder. Mix well. - Add jaggery and stir real fast. Switch off the flame and keep stirring till the jaggery melts. - Grease an aluminium tray and spread the mixture evenly. - Set it properly and let it cool down for atleast 30 minutes. - Cut it into squares and serve. So this video is perfect when you have lot of Cauliflowers and don't know what to make out of it. Ingredient Quantity For Marination: Cauliflower cut into florets 1 no. (Medium) Oil 1tbsp Ajwain (carom seeds) ¼ tsp Gram Flour (Besan) 2 tbsp Turmeric powder ½ tsp Kashmiri Red Chilli powder 1tbsp Coriander powder 1 tsp Garam masala powder 1 tsp Curd ¼ cup Ginger and garlic paste 1 tbsp Mustard oil 1 tbsp Kasoori methi ½ tsp Lemon juice ½ no Salt to taste For gravy Oil for cooking Cumin seeds 1 tsp Onion chopped 1no Ginger Garlic paste 1 tbsp Tomatoes pureed 1 cup Red chilli powder 1½ tsp Coriander powder 1½ tbsp Turmeric powder ½ tsp Garam masala powder 1 tsp Salt to taste Cashew nut paste 2 tbsp Capsicum cubes 1 no Onion cube 2 no Tomato cube (without seed) 1 no. Cream ¼ cup Kasoori methi ½ tsp Coriander chopped 2tbsp Method:- 1. Blanch the cauliflower in hot water. Keep it aside. 2. Heat oil in a pan, add ajwain and gram flour mix it well and cook for medium flame about 2 Min. 3. Remove in a bowl, then add turmeric powder, red chilli powder, garam masala, coriander powder, curd, ginger garlic paste, salt, kasoori methi, mustard oil, and lemon juice, mix well. 4. Add cauliflower florets and mix well. Keep aside 20-25 min. 5. Preheat the oven to 180°C for 5-6 min. 6. Grease the baking tray with little oil and place the marinated cauliflower on it and bake for 10-15 min. 7. After 5 min. remove cauliflower from the oven brush some butter and cook again for 10 min. Remove and keep it aside. For gravy 1. Heat 2 tbsp of oil in a pan; add the cumin seeds sauté till cumin splutter. 2. Add chopped onions and sauté till onion becomes brown. 3. Add ginger garlic paste, mix well and cook for 1 min. 4. Add Tomatoes puree, mix well and cook for 2 min. 5. Add the red chili powder, coriander powder, turmeric powder, garam masala powder and salt, mix well and Cook for 3-4 min. 6. Add cashew nut paste, mix well and sauté for 1 min. keep it aside. 7. Heat 1 tbsp of oil in another pan, add onion cubes and capsicum cubes sauté for 2 min. then add tomato cubes, mix well and cook for another 1 min.Transfer this into the gravy and mix well. 8. Add kasoori methi, cream and garam masala, chopped coriander and mix well. 9. Add cauliflower and mix well. 10.
