Parmesan Potato Stacks Recipe
This easy recipe for Parmesan potato stacks makes a great side dish or appetizer that your family and guests will definitely enjoy. They are very flavorful due to the thyme, garlic and parmesan which I always love to pair when cooking potatoes. If you don’t like thyme feel free to use any other herbs you prefer like rosemary, oregano or basil. To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/parmesan-potato-stacks Ingredients Makes about 4-6 servings 3 tbsp (45g) butter, melted 2 tbsp (25g) Parmesan cheese 1 tsp (3g) garlic powder 1 tsp thyme leaves salt and freshly ground black pepper 8-10 gold potatoes (1.4 kg) sliced thin (about 1/16 inch -1.6 mm thick) 1. Preheat the oven to 375°F (190C). Butter 12 muffin cups and set aside. Cut the potatoes into thin slices, preferably using a mandoline. 2. Place potato slices into a large bowl. Add melted butter, Parmesan cheese, thyme, garlic, salt and pepper. Toss to coat evenly. 3. Layer the potato slices into stacks and place in the prepared muffin cups. Sprinkle some freshly ground black pepper. 4. Bake until the edges and tops are golden brown and the centers are tender, 55 minutes to 1 hour. 5. Remove from the oven, let them rest for 5 minutes then remove from pan and garnish with parmesan cheese and thyme. Everyday easy Indian cooking recipes for lunch and dinner- broccoli spinach saag. This saag recipe is also part of my healthy Indian vegetarian main course recipes series. Saag is a famous dish often made in North Indian and Punjabi homes which goes very well with makke ki roti and missi roti. Saag just means pureed greens. It can be practically made with any green vegetable. Today I am going to make this very simple saag with combination of broccoli and spinach. Broccoli spinach saag is mainly made in three parts. First the broccoli and spinach is pressure cooked, then grinded to a coarse mixture and finally saag is added to the tadka. Do try it for your next meal. I am sure you will love it. Paneer Butter Masala | Authentic North Indian Main Course Recipe | Paneer Masala Recipe
Learn how to make Paneer Butter Masala, a restaurant style recipe by chef Kanak. Paneer Butter Masala or Paneer Makhani is a very famous North Indian veg main-course dish. This dish can be enjoyed with naan, roti or rice. Ingredients: Paneer 200 gms cut in cubes 2 Tbsp butter 1 Tbsp oil 2 Onions cut in cubes 4 tomatoes cut in cubes A bay leaf Cinnamon- small piece Cloves 4-5 Cardamom 2-3 Cumin seeds- 1 tsp Garlic pods 8-10 Ginger- small piece Cashewnuts 15-20 Dry fenugreek leaves- 1 tsp Salt as required Red chilly powder- 1 tsp Garam masala powder- 1 tsp Coriander powder- 2 tsp Turmeric powder- 1/4 tsp Honey/sugar- 1 tsp Fresh cream 4 tbsp some fresh coriander Method: - In a wok, add butter, cumin seeds, cloves, cardamom and cinnamon sticks and stir fry it for few minutes. - Add garlic and ginger and fry for a minute. - Add the onions and cook until they are cooked and tender. - Add the tomatoes and cook for about 2 - 4 minutes. - Add the cashew nuts, salt to taste and water and cover the wok with a lid on a medium high flame for about 10 - 12 minutes. - Once cooked, let it cool down slightly and then add this to a mixture along with little water and blend for about 30 - 40 seconds. - Strain this mixture into another bowl to avoid lumps. - In a wok, add the butter and oil. - Add a bay leaf followed by red chilli powder and stir well. Then quickly add the strained mixture to it and cook for about 4 - 5 minutes. - Add salt, turmeric powder, coriander powder, garam masala and mix well. - Using hands, crush the fenugreek leaves and add to the gravy. - Add honey and then stir in the fresh cream. - Add the paneer cubes and let them cook well until they are coated completely with the gravy. Keep adding oil until thick and creamy. Add lime juice, salt, and chipotles, blend again. 2:35 - Mango Hot Sauce Onion Jalapeno Tomato Gallic Mango Cilantro Vinegar - In a heated oiled pan cook onion, jalapeno, garlic until soft. In a blender add mango, cilantro, tomato, salt, pepper, vinegar, and cooked ingredients. Blend. 3:39 - BBQ Sauce Ketchup Mustard Apple cider vinegar Brown sugar Cayenne pepper Paprika Gallic powder Salt Pepper - In a pot combine ingredients and bring to a light boil. Let it cool. 5:14 - Cilantro Cream Sauce Cilantro Garlic Lime Jalapeno Oil Sour cream Salt Pepper - In a blender combine cilantro, garlic, juice of half a lime, oil, and half a container of sour cream. Season with salt and pepper. Add remaining half of sour cream, mix by hand. 6:54 - The White Sauce Mayo White vinegar Dried parsley Garlic powder Salt Pepper Water - In a blender combine ingredients. 8:05 - Herb Honey Citrus Sauce Cilantro Lime Honey Oil Salt Pepper - Blend everything but oil to combine. Slow blend in oil to emulsify. 9:16 - Ginger Carrot Dressing Carrots Ginger Scallion Lime Miso Rice vinegar Sesame oil Water - In a blender combine. Add more water to thin out if you want. 10:27 - Coconut Peanut Sauce Smooth peanut butter Soy sauce Garlic Cilantro Coconut milk Lime Honey - Blend to combine. 11:29 - Sweet Chili Sauce Chilies Garlic White vinegar White sugar Cornstarch - In a blender combine, chilies, garlic, white vinegar, sugar. Once blended pour into a pot, add more vinegar and sugar. In a small bowl add 2 tablespoons of cornstarch and a splash of water. Mix until clumps are gone. Stir into chili mixture. Heat olive oil in a skillet on medium high heat. When oil is hot, add red pepper flakes. Red pepper flakes add a nice heat, but substitute fresh peppers, or even a little cayenne if you like. Add garlic and saute for 1 minute. Use as much garlic as you like. I prefer lots of garlic. I literally used an entire bulb. It seems like a lot, but the oil and garlic are gonna taste great when paired with thick slices of fresh bread. Add the shrimp, and continue sauteing on medium high heat. Once the shrimp hits the pan, it'll only take about 3 minutes to cook. Don't overcook the shrimp; they will become rubbery if cooked overly long. Add paprika, and salt and pepper to taste. Saute shrimp until just cooked, when shrimp begin to color and curl, then remove the skillet from the heat. Add lemon juice and fresh chopped parsley. Stovetop Oats Combine 3/4 cup rolled oats and 1.5 cups unsweetened almond milk in a small pot over high heat. When boiling, reduce heat to low and let simmer, stirring occasionally and watching to make sure it doesn't boil over. Once thick, stir in 1 tsp cinnamon and 1 mashed banana. Remove from heat and serve with any toppings. My favourites are peanut butter, strawberries and banana. 2. Baked Oatmeal Combine 1/2 cup oats, 1 mashed banana, cinnamon (optional), 1 tsp baking powder, and 1/2 cup almond milk. Place in a mini ramekin or other oven safe dish and bake for 25 minutes at 350F. Add any desired toppings, my favourites are strawberries and peanut butter with almond milk. 3. Lettuce Wraps Take a piece of Romaine Lettuce (or any lettuce with a large, flexible leaf) and fill it with brown rice/quinoa, smoked tofu/veggie beef cooked in hoisin sauce, sautéed bell peppers/carrots/zucchini/or any vegetables, sautéed onions and mushrooms, avocado and salsa, nutritional yeast or vegan cheese, hot sauce, and anything else of your choice. 2. Avo-Tomato Sandwich On two slices of bread/bagel, spread 1/2 a mashed avocado, a sprinkle of nutritional yeast and add some tomato slices. Optional things I like to add are spinach/lettuce, alfalfa sprouts, and ground flax seeds. 3. Spaghetti and "Meat" Balls Boil spaghetti pasta according to package instructions and set aside. In a pot, steam chopped broccoli until tender. Saute mushrooms, onions, and any other desired vegetables until cooked. Separately bake/saute bought "meat" balls. Optionally, you can bring saute all of this together in a large skillet with the tomato sauce to make a more uniform "meat" sauce, or it can just be dished into a bowl with the spaghetti with sauce over top. 2. Pesto Pasta In a dry skillet over medium-high heat, toast 1/2 cup of pine nuts until golden brown. Set aside. In a food processor, process two bunches of cilantro and 4 cloves of garlic. Once mixed, add in your toasted pine nuts, 1 tsp salt, 1 tsp black pepper, 1 tbsp lemon juice, optional smoked paprika, and process until smooth. If it's too dry, add in some olive oil or water until it reaches your desired consistency. I love putting this over pasta (whole wheat, rice or zoodles) with avocado and nutritional yeast. 3. Veggie Burgers Prepare patty's according to package instructions, or make your own (http://minimalistbaker.com/easy-grillable-veggie-burgers/) I like to eat mine on a toasted whole wheat bun with hummus, avocado, tomato, any other veggies (spinach, lettuce, sprouts, mushrooms, etc), and nutritional yeast for a cheesy flavor. 4. Spring Rolls Prepare angel hair or fettuccine rice noodles as per package instructions. Chop up bell pepper, cilantro, avocado, cucumber, mushrooms, smoked tofu, bean shoots, and shred some carrots. Soak your rice paper wrap in lukewarm water for about 10 seconds until soft, then fill with any fillings of your choice. Dip into peanut sauce. Peanut Sauce Recipe: In a food processor, process 1/2 cup peanut butter, 1 tablespoon minced garlic, 1/4 cup tamari (soy sauce), 1/4 cup water, 1 tablespoon rice vinegar, 1 teaspoon hot sauce, 1 teaspoon sugar or other natural sweetener until smooth. Be sparse with soy sauce as it can be quite salty. An alt. spring roll recipe - http://minimalistbaker.com/vietnamese-spring-rolls-with-crispy-tofu/ 5. Chickpea Omelet Blend or hand mix 2/3 cup water, 1/3 cup chickpea flour, 1 tbsp ground flax seed, 1 tbsp nutritional yeast, 1/8 tsp turmeric, 1/2 tsp baking powder, 1/2 tsp garlic powder, salt and pepper to taste. Pour it over a greased skillet over medium-high heat. Let it cook like you would a normal omelet, flipping when the edges are firm and there are bubbles. Once the other side is cooked, put it on a plate and fold over any fillings. I fill it with sauteed veggies (mushrooms, spinach, bell pepper and zucchini) and sprinkle on nutritional yeast.

Time to get weird in the kitchen with the brothers green . 10 Creative Egg Recipes Egg White Omelette with Plus Yolk Treat - Separate egg yolks. In an oiled pan fry egg whites, once set add yolks on top, fold and enjoy! Egg Noodles -Scramble eggs. In an oiled pan over medium-low heat coat bottom with scrambled eggs. Cover to steam. Once set, roll up egg and cut into noodles. Toss in some tomato sauce for a glorious shakshuka style breakfast pasta! Jamie Oliver Inspired Egg Omelette - Whisk eggs until fluffy, frothy, and light. Heat oil on a nonstick pan and pour eggs. Once the bottom sets fold over. The top may look uncooked but since it's so airy and light it will cook fast. Garnish with some green onions. Deep Fried Poached Eggs - In a deep pot heat oil. Once it's hot crack an egg into the oil, be careful it will splash! Cook for about 30 seconds. Remove and enjoy! Egg on Egg Sandwich - Separate the yolk from 2 eggs. Beat egg whites with a whisk until still peaks form. On a parchment lined cookie sheet scoop egg whites into a bun shape. Bake at 350 until golden. In a pan fry an egg and add remaining 2 yolks. Season with salt and pepper. Put fried egg between baked egg white buns. Enjoy! Steamed Eggs (Ok..ok so messed it up in the video but this recipe works and it's silky and glorious!!) - In a bowl beat 3 eggs. Add 1 cup of water, and 2 teaspoons of salt, and beat again. Pour into a ramekin, or heat safe bowl. In a pot enough water to come up halfway on ramekin. Bring to a boil. Once boiled lower heat, and add ramekins. Cover and let steam for 8-12 minutes. Remove, it will be hot! Garnish with green onion. For even more flavor you could use vegetable or chicken broth in place of water and add a splash of sesame oil! Mmm... Marbled Egg - In a hot pan with oil crack egg and break yolk. Swirl to create a marbled look. Let it still, bottom will crisp up. Once top sets it's done. Add some Sriracha for a yummy kick! Crissomelette - Beat 6 eggs. Butter a hot pan, pour some egg mixture, let it set, and fold in half. On empty side of pan butter again, pour more egg, let it set, and fold onto other side. Repeat until egg mix is gone. Buttery layers of egg! Double Broiler Scrambled Eggs - Heat water in a pan. Place a bowl on top with a pat of butter. Scramble 2 eggs. Once butter is melted add eggs and slowly mix and fold. After about 10 minutes you will have the most tender, delicate eggerts! Enjoy! Watch how to make Palak Paneer, a popular Indian main course recipe by Ruchi Bharani. Palak Paneer is a dish of North Indian origin consisting of palak (spinach) and paneer (cottage cheese) in a thick curry sauce based on pureed spinach with garlic and garam masala. Ingredients: 3 bunches of spinach blanched & pureed 1 onion 1 piece ginger 1 tbsp cashew nuts 2 tomatoes boiled & pulped 300g paneer cubes 1 small clove of garlic 6 green chillies 1 tsp garam masala 4 tbsp curd 1 tbsp cream (optional) Method: - In a grinder, add the chopped onions, ginger, clove of garlic, cashew nuts and green chillies and grind all the ingredients well. Make sure that the ginger and garlic pieces grind well. - Heat buter in a pan. - Once the butter melts, add the onion paste to the pan and cook it until its colour changes slightly. - Add the tomato pulp and cook for about 3-4 minutes. - Add the curd and cook for about 2 minutes. - Add the spinach puree into the tomato and onion paste and stir well. Add little water and keep stirring. - Add garam masala and salt to taste and mix well. Make sure you do not cover the pan with a lid for the spinach to cook. - Add the cream to the spinach gravy and then add the paneer cubes. Mix well. - The delicious palak paneer is ready. Serve it with your favourite Indian bread variety (roti / naan / kulcha / paratha). Shakshuka - Eggs in Tomato Sauce Recipe
Shaskshuka - Eggs are poached in a delicious tomato sauce, very easy to prepare, healthy, comforting, flavorful, wonderful colors, definitely a must try recipe. It is usually served for breakfast, though I think it’s perfect for brunch on lazy weekends. This dish is best served right away after cooking alongside some crusty bread or pita. Heat olive oil in a 12 inch (30cm) frying pan over medium heat.Add onion and cook for about 5 minutes until the onion begins to soften. Stir in garlic. 2. Add red bell pepper and continue to cook for 5-7 minutes over medium heat until softened 3. Stir in tomato paste and diced tomatoes and add all the spices and sugar. Season with salt and pepper and allow to simmer over medium heat for 10-15 minutes until it starts to reduce. Adjust the seasonings according to your tastes, add more chili flakes for a spicier sauce or sugar for a sweeter one. 4. Crack the eggs over the tomato mixture, one in the middle and 5 around the edges of the pan. Cover the pan and simmer for 10-15 minutes, or until the eggs are cooked. 5. Garnish with fresh parsley or cilantro and serve with crusty bread or pita. Enjoy!
