Pasta Carbonara - Can You Cook This Right?

Spaghetti Carbonara Servings: 4-6 INGREDIENTS 1 pound spaghetti 6 ounces pancetta or guanciale, cut into ¼" cubes 1 tablespoon extra virgin olive oil 1 tablespoon salt ½ tablespoon freshly ground black pepper 2 jumbo eggs, room temperature 2 egg yolks, room temperature ½ cup Pecorino Romano cheese, freshly grated ½ cup Parmigiano-Reggiano, freshly grated 1 garlic clove, peeled Garnish Italian parsley, chopped PREPARATION Bring a large pot of water to a boil. Once boiling, add the salt, then the pasta and stir to avoid sticking. Cook according to the time on the package, minus two minutes. Heat a large, tall sided frying pan over medium heat. Add extra virgin olive oil and the pancetta or guanciale, and saute until just turning crisp, stirring frequently. Smash the garlic clove with your palm and add to the frying pan with the pancetta. In a bowl or measuring cup, whisk the eggs with the egg yolks. Add the black pepper and half of the Pecorino-Romano, Parmigiano-Reggiano and stir to combine. Check the pasta for doneness, you want it to be very al dente. Take the frying pan off the heat. Add the pasta and about a ½ cup of pasta water to the frying pan with the pancetta. Add the egg/cheese mixture to the pan and quickly stir and shake the pan to avoid scrambling the eggs. To thin out the sauce, add more pasta cooking water, the starch from the water will make the sauce nice and silky!) Sprinkle over the rest of the cheese and parsley and stir until the cheese is melted. Serve Immediately! i bet her pasta is over salted. she over salted pasta water, you don't need that much salt in pasta recipe when other ingredients have a lot of salts (guanciale and pecorino). and why fry pancetta in olive oil? pancetta has more then enough fat and you gonna fuck up flavor with olive oil.

Worst Carbonara Ever! This lady does not have a clue about Carbonara: garlic and parsley have nothing to do with Carbonara. You also use black pepper, not white pepper. With all due respect: this women is a dilatant = 100% self confidence at 0% cooking skills.

I am kind of mad beacuse if you really want to call it a carbonara you should call someone that actually knows how to cook it, first of all you do not but oil before putting the bacon, then you put bacon, egg mixture and pasta all together in the pan and don't put garlic, and last but not least no parsley please

Anita Di Giorgi yes sometimes it is but the guy’s looked dry to me. They shouldn’t even be using pancetta though. I’m disappointed in the actual chef for not following the original recipe. She could have said that she was making a variation of carbonara and none of it would have been a problem.

Heather Smith yeah but still pancetta is even more oily than guanciale sometimes so... and I am not trying to start a fight or anything but I live in Rome and it is since I am 4 years old that I eat carbonara, so I jyst think that if you want to do something before check if the recipe is right🙂

Anita Di Giorgi I think she used oil because she was working with pancetta as a substitute for guanciale so she needed to add in fat. But I agree with everything else completely.

Please, when you cook pasta you have to wait until the water is boiling, THEN you put pasta into the pot and then you wait the amount of minutes it tells you on its box. You are murdering dozens of italians.
