I'm sorry to hear that. It sounds like it may have overbaked. Keep in mind that your cake will continue to steam through (ie. bake) when it is removed from the microwave. I hope you give it another go :)

Baking is traditionally done in an oven while micro-baking is a bit newer. I like how the microwave steams a cake but you do need an oven for some recipes.

Gemma, looking at both carrot cakes you've made. I know this microwave one can be oven baked. Could I use a 10" springform pan and do 2 layers instead? How would I need to adjust the bake time? Thx

Depends on what you're making! If you're making homemade extracts then vegetable glycerides will work :)

Gemma, you rock!  Years ago I cooked a Clootie Dumpling in a round glass bowl lined with plastic wrap in the microwave oven.  (I didn't know that could be done.)  I got the recipe from a lovely old Scottish woman who was in my Scottish Country Dance group.  It was delicious, and I served it to the dance group. (They ate it.)  It was like the best cake I had ever cooked in an oven (and I understood that it was traditionally steamed or boiled in cheese-cloth.  I've ordered three round silicone cake pans and plan to try your recipe in my microwave oven.  I love your knowledge of baking, and your attention to detail in your instructions, without being pedantic.

You'll want to microwave it for a little less time than what's on the recipe. You can always add more time if it's not fully cooked. Just look for the tips I recommend in the video and on my written post. I hope you enjoy!

I make cakes in the microwave all the time and they really do come out awesome. If anyone wants to know, a way of making sure that your cake is cooked all the way through is sticking a toothpick or fork into it right in the center of the cake (because that's where it takes the longest time to cook) and if it comes out clean, your cake is cooked. Also, if you're using a microwave-safe dish like a casserole dish or something, line it with butter or oil and sprinkle a little flour on it and the cake won't stick to it. This carrot cake looks awesome. I'm gonna try it soon.

You can! Keep in mind that frosting also acts as a barrier for the cake to keep it from drying out. :)

It might have over baked in the microwave. Start with a shorter time when popping it in and add a few seconds at a time. Keep in mind that the cake is still steaming when you take it out of the microwave so it's still cooking. Hope that helps!

You can use a microwave safe cupcake mold for your microwave. Make the batter the same as you would and then divide into the mold. I can't say exact timing because I haven't tried it yet but give it a go!
